Heat stress (HS) is a growing concern in broiler production. Little is known regarding the effect of HS on immune function. To examine the effects of HS on innate immunity, the local- and systemic-inflammatory responses to lipopolysaccharide (LPS) were examined in Cobb 500 male broiler chicks reared under thermoneutral (TN) or cyclic HS conditions. Background:Withania somnifera (L.) Dunal, popularly known as Ashwagandha, is an ethnomedicinal plant with multiple pharmacotherapeutic applications. The diverse medicinal properties of the plant are largely due to the presence of withanolides, a group of C28 ergostane based steroidal lactones, with several sites of unsaturation and oxygenation. Withaferin A, a major with anolide present in Ashwagandha plant accounts for its emerging new roles to treat cancer, arthritis, inflammatory responses, immunomodulatory properties, and neuronal disorders. During the development of IMF, breast milk is commonly considered as the reference and IMF manufacturers are thriving to mimic the composition and/or to match the functionality of breast milk as closely as possible. Spent coffee grounds (SCG) are a by-product from coffee brewing process. SCG contains a considerable amount of organic compounds and is a great source of antioxidants. This research aimed to evaluate the antioxidant activities of SCG and SCG extracts by comparing different solvent (hexane and 60 - 90% ethanol) extractions, together with determining the effect of different concentration (5, 10, 15, 20 and 25%) of SCG extracts (SCG) and comparing these extracts with commercial antioxidants (BHA (A), BHT (T), tocopherol (TO)) for application to vegetable oil. โคพีพอด Apocyclops royi เป็นแพลงก์ตอนสัตว์ในกลุ่มครัสเตเชียนที่มีบทบาทสำคัญต่อการอนุบาลสัตว์น้ำวัยอ่อนเนื่องจากมีคุณค่าทางโภชนาการที่โดดเด่นและสามารถสังเคราะห์กรดไขมันสายยาวไม่อิ่มตัวเชิงซ้อน (LC-PUFA) ในงานวิจัยนี้ได้ศึกษาหน้าที่และการแสดงออกของยีน Fatty acid-binding protein (FABP) ซึ่งเป็นโปรตีนที่มีหน้าที่สำคัญในการขนส่งกรดไขมัน ผลจากการศึกษาลักษณะสมบัติของยีน ArFABP ของโคพีพอดสายพันธุ์ไทย A. royi-TH พบว่าประกอบด้วยบริเวณ open reading frame จำนวน 465 คู่เบส ซึ่งสามารถแปลรหัสเป็นโปรตีนขนาด 154 กรดอะมิโน โดยโปรตีน ArFABP ประกอบด้วยบริเวณ Lipocalin_7 domain ซึ่งมีความเหมือนกับโปรตีน FABP ในโคพีพอด Caligus rogercresseyi 55% จากการศึกษาหน้าที่ของยีน ArFABP ต่อความเกี่ยวข้องในการสังเคราะห์กรดไขมัน PUFA ในโคพีพอด ได้ทำการตรวจสอบการแสดงออกของยีน ArFABP ในตัวอย่างโคพีพอด A. royi-TH กลุ่มที่เลี้ยงด้วย Tetraselmis sp. (TET) เปรียบเทียบกับ Thalassiosira sp. (THA) พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีระดับการแสดงออกของยีน ArFABP สูงกว่าโคพีพอดกลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ ซึ่งสอดคล้องกับผลการวิเคราะห์องค์ประกอบของกรดไขมัน พบว่าโคพีพอดกลุ่มที่เลี้ยงด้วย THA มีสัดส่วนของกรดไขมัน LC-PUFA และกรดไขมัน arachidonic acid (ARA) สูงกว่ากลุ่มที่เลี้ยงด้วย TET อย่างมีนัยสำคัญทางสถิติ นอกจากนี้ผลจากงานวิจัยยังพบว่าระดับการแสดงออกของยีน ArFABP มีการแสดงออกสูงในโคพีพอดที่เลี้ยงในสภาวะความเค็ม 15 พีพีที (ความเค็มต่ำ) เปรียบเทียบกับกลุ่มโคพีพอดที่เลี้ยงในสภาวะความเค็ม 25 พีพีที (กลุ่มควบคุม) โดยพบว่าโคพีพอดกลุ่มความเค็ม 15 พีพีที มีสัดส่วนของกรดไขมัน ARA สูงกว่ากลุ่มความเค็ม 25 พีพีที อย่างมีนัยสำคัญทางสถิติ โดยจากผลการศึกษานี้แสดงให้เห็นว่ายีน ArFABP อาจมีบทบาทเกี่ยวข้องกับการขนส่งกรดไขมันในการสังเคราะห์กรดไขมัน LC-PUFA ในโคพีพอด และจากการศึกษาไมโครไบโอมพบว่าการเพาะเลี้ยงโคพีพอด A. …

อาหารที่มีคุณค่าทางโภชนาการสูงเป็นสิ่งสำคัญสำหรับการอนุบาลลูกสัตว์น้ำแรกเกิด ซึ่งจะส่งผลทำให้สิ่งมีชีวิตเติบโตได้อย่างมีประสิทธิภาพและช่วยเพิ่มอัตราการรอดของสัตว์น้ำวัยอ่อน โคพีพอด Apocyclops royi จัดอยู่ในกลุ่มของครัสเตเชียนขนาดเล็ก เป็นอาหารของสัตว์น้ำ ที่อุดมไปด้วยคุณค่าทางโภชนาการที่ดี เนื่องจากสามารถสังเคราะห์กรดไขมันไม่อิ่มตัวเชิงซ้อนสายยาว (LC-PUFA) ได้สูง โดยงานวิจัยมีวัตถุประสงค์เพื่อศึกษาลักษณะสมบัติและบทบาทของยีน Sterol regulatory element-binding protein 1 (ArSREBP-1), ยีน Carbohydrate-responsive element-binding protein (ArChREBP) และยีน Max-like factor X (ArMLX) ในโคพีพอด Apocyclops royi สายพันธุ์ไทย (A. royi-TH) และศึกษาอิทธิพลขององค์ประกอบไขมันในอาหารต่างชนิดกันที่ส่งผลต่อปริมาณกรดไขมันในโคพีพอด A.royi-TH จากการศึกษาพบว่ายีน ArSREBP-1 มีความเหมือนกับยีน SREBP-1 ของ Tigriopus kingsejongensis เท่ากับ 64%, ยีน ArChREBP มีความเหมือนกับยีน ChREBP ของParacyclopina nana เท่ากับ 58% และ ยีน ArMLX มีความเหมือนกับยีน MLX ของ Paracyclopina nana เท่ากับ 62% จากผลการศึกษาการแสดงออกของยีน Delta 6 desaturase (ArD6D), ยีน ArSREBP-1, ยีน ArChREBP และ ยีน ArMLX ต่อความสำคัญในการสังเคราะห์กรดไขมันในโคพีพอด A. royi-TH โดยเลี้ยงโคพีพอดด้วยอาหารที่แตกต่างกัน 2 ชนิด คือ สาหร่าย Tetraselmis sp. Betacyanins are bioactive pigments found in red dragon fruit peels with potential health benefits, but low stability and bioaccessibility. This study aimed to investigate the impact of using dietary fibers inulin (IN) and pectin (PE) combined with maltodextrin (MD) as wall materials for betacyanin encapsulation on its physicochemical properties, storage stability, and in vitro release behavior. The objective of this study was to optimize the ultrasound-assisted extraction (UAE) conditions for tamarind seed extract (TSE) using response surface methodology (RSM). Subsequently, microcapsules were produced via spray drying using various wall materials and ratios. The extraction conditions were temperature levels (30, 40, and 50 °C), exposure periods (5, 10, and 15 minutes), and ethanol concentrations (30, 40, and 50 % v/v). The optimization criteria focused on maximizing the total phenolic compound, total flavonoid content, and antioxidant activity, assessed using DPPH free radical scavenging and FRAP assays. Thua nao is a fermented soybean product that is widely consumed, especially in the northern part of Thailand. Thua nao can be used as a condiment to enhance the aroma and flavor of foods. In this study, stir bar sorptive extraction (SBSE) coupled with gas chromatography‒mass spectrometry/olfactometry (GC‒MS/O) was used to analyze volatile aroma compounds in thua nao products. Thua nao fermented with commercial Bacillus subtilis under controlled conditions exhibited the presence of compounds such as 2-methyl butanoic acid, phenylethyl alcohol, benzaldehyde, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, and 2-methoxy phenol. The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Ethylene is a key trigger that governs the rate of fruit ripening, storability, and postharvest quality of fresh fruit. Efficient inhibition of ethylene action is essential to slow down the postharvest ripening processes, extend storage life and maintain optimum fruit quality during storage. The Obese strain (OS) of chickens spontaneously develops autoimmune thyroiditis (SAT) and is a well-established biomedical model for Hashimoto’s thyroiditis in humans. Both conditions are characterized by the infiltration of thyroid glands with mononuclear immune cells resulting in the destruction of thyroid tissue and impairment of the thyroid’s endocrinological functions. Blackberries and raspberries, commonly known as Rubus berries, are commercially grown worldwide across different climates. Rubus berries contain wide array of phytochemicals, vitamins, dietary fibers, minerals, and unsaturated fatty acids. Current tools scoring the healthiness of food retail outlets do not reflect outlets found in rural locations. This study aimed to adapt pre-existing Australian scoring tools to represent non-metropolitan areas. Rural nutrition experts were identified, and a modified Delphi technique was used to adapt two pre-existing, food-scoring tools in five iterative stages. Stages included identifying all relevant outlets, providing a description and score for each, ensuring consistency between outlet scores and pre-existing, metro-centric tools, and providing instructions for correct use. Algae-derived protein has immense potential to provide high-quality protein foods for the expanding human population. To meet its potential, a broad range of scientific tools are required to identify optimal algal strains from the hundreds of thousands available and identify ideal growing conditions for strains that produce high-quality protein with functional benefits. Lacprodan PL20, a dairy ingredient that is rich in protein and polar lipids, was added into set yoghurts produced from nonhomogenized raw milk. The set yoghurts were prepared using concentrations of 2%, 4%, and 6% Lacprodan PL20, while the control sample was only supplemented with skim milk powder. The effect of Lacprodan PL20 concentrations on the physical and chemical properties, rheology, and microstructure of set yoghurt was thoroughly investigated to determine some likely improvement or changes in quality. A massive amount of crustaceans and bivalves are consumed each year, leading to millions of tons of processing side streams from the seafood industry. Considering the current trend of (bio)circular and zero-waste food production, crustacean and bivalve processing side streams (CBPS) seem a promising and emerging resource for producing high-value-added products. This paper highlights the general composition of CBPS with high commercial values, namely, protein, lipids, carotenoids, minerals and chitins. The extraction strategies of these fractions, including conventional chemical and environmentally friendly methods, are also discussed.
