The study was aimed to research the effect of mixed strains optimized from sourdoughs on the quality of steamed bread with tartary buckwheat bran, through sensory quality, texture profile analysis and SPME-GC-MS analysis. The Angel Yeast and Hungary yeast considered as control groups. The results showed that: the order of sensory evaluation was mixed strains (82.2±2.3) > Hungary yeast (80.9±1.3) > Angel yeast (77.1±1.4); the hardness, chewiness, cohesiveness, gumminess and resilience of fermented steamed bread with mixed strains was the best one; on the springiness, the steamed bread fermented with Hungary yeast was the best one. In this paper, the methods of fatty acid extraction and methyl esterification of beans (the main products are soy food) were reviewed. A variety of physiological functions of fatty acids are described. Moreover the differences of diverse detection methods of fatty acids were analyzed. We hope to provide testing methods for the change of fatty acids in bean product processing, and providing the basis for the development of potential function's in oil and fat products.

Although global food demand is expected to increase 60% by 2050 compared with 2005/2007, the rise will be much greater in sub- Saharan Africa (SSA). Indeed, SSA is the region at greatest food security risk because by 2050 its population will increase 2.5-fold and demand for cereals approximately triple, whereas current levels of cereal consumption already depend on substantial imports. American honey bees, and other native bee species, are still in decline, though the specter of colony collapse disorder may be fading behind us. Colony decline, the loss of bees overwinter experienced across the country at a quarter to third lost per hive (sometimes more), is now expected. A joint PwC/NBF team have developed a WA beef value chain model to better understand the industry’s potential and establish the potential value associated with changes in the security of supply.
Results indicate that, over a five to twelve year timeframe, the WA Beef industry might have the potential to grow cattle disposals, double revenue to $1.2B and increase profit by $0.5B.

Intensive rotational grazing (IRG) is a management technique that involves a more intentional management approach which includes increased paddock numbers, shorter grazing periods, larger livestock presence per acre, and longer periods of rest on pastures. University of Nebraska-Lincoln (UNL) Libraries was one of 19 libraries participating in a national study, initiated by Ithaka S+R, of the research practices and needs of agricultural researchers. Two UNL Libraries faculty members participated in this study by interviewing 11 UNL agricultural scholars during the summer of 2016. The ethnographic research approach revealed four core themes explored in this UNL-specific report: interdisciplinarity and collaborations; scientific communication practices; scientific research data; and challenges and opportunities. Illustrated by the sample of faculty comments presented here, the themes have direct implications for the UNL Libraries, while in other cases these point to concerns …

Current corn N recommendations in the common corn-soybean rotation of Indiana strive to find the best N rate that maximizes producer profit. The challenge of clean cooking is faced by hundreds of millions of people worldwide. We present a cooking technology consisting of a solar panel directly connected to an electric heater in a well-insulated chamber. Assuming continued decrease in solar panel prices, we anticipate that in a few decades Solar Electric Cooking technologies will be the most common cooking technology for the poor. Appropriate use of insulation reduces the power demand making low-power Insulated Solar Electric Cooking systems already cost competitive.

Children residing on farms with livestock may be at an increased risk for work-related injuries, compared to children who work on other commodity farms. This study characterizes children's work tasks on Kentucky farms and assesses whether children who work on beef cattle farms are at an increased risk for farm work injuries. The results of a cohort study of children aged 5-18 years (N=999 at baseline) working on family farms in Kentucky, followed for two consecutive years after an initial enumeration five years previously, found that 70% of the children were involved in animal-related chores.
