It aims to deepen the understanding of how essential nutritional requirements, nourishment, and an individual's relationship with food can integrate into the practice of a dance/movement therapist. New Roots Community Farm (NRCF) came to life through the purchase of a piece of land by the Fayette County Farmland Protection Board in a buy-protect-sell model. NRCF then partnered with The Agrarian Land Trust, a New England based organization experimenting with land commons models across the United States, to purchase the property and create the West Virginia Agrarian Commons (WVAC), an entity that could advance land access for the next generation farmers in WV. Seeding Sparks for The Right to Food partnered with Voices of Hunger to disperse a grant to community leaders. These community leaders have projects that are aimed to advance the Right to Food and promote food security. Nourishing Networks is a workshop that promotes the development of Food Policy Councils, which are a group of community members that advocate for the Right to Food in their community. Through conversation surrounding food access barriers and strategies in their community, the workshop aims to educate participants on how they can improve food access in their community. This research project sought to conduct Nourishing Networks meetings in a variety of West Virginia counties with the intention of accompanying local community members and organizations to create a Food Policy Council for their region. Polycystic Ovary Syndrome (PCOS) is a hormonal disorder. Complications of this disease can cause metabolic syndrome (high blood sugar, unhealthy cholesterol, and high blood pressure) and Type 2 diabetes. Doctors suggest a healthy diet full of fruits, vegetables, and healthy carbohydrates to help control symptoms. PCOS is one of many health issues that can be managed with a low-carb diet. My capstone project is a recipe book filled with quick or easy low-carb dinners created with a busy parent in mind.

Italy has become a common “landing country” for many European and Asian immigrants, creating a perception of invasion that has led to cultural reactionism masked in the reinforcement of “traditional cuisine.” For so-called traditional foods to endure, they must continually be reinvented, bearing different meanings and social values throughout time and space while accumulating rich, cultural baggage that serves as a powerful marker of identity in a given society. The cliché of a college student surviving off ramen noodles sheds light on a deeper issue — high rates of food insecurity among undergraduate college/university students in the United States. There have been countless studies in recent years exploring the hidden causes of why an estimated 40% of students experience food insecurity as of 2022. These studies conclude three main reoccurring factors causing these high rates: costs, accessibility, and demographic characteristics. Food insecurity rates are important for higher education officials to address due to the countless physical and mental health, academic, and equity implications for the students.

Each year, Fortune magazine publishes a list of the 500 largest corporations in the United States of America based on total revenue in the previous fiscal year. As successful companies, these organizations must prioritize diversity, equity, and inclusion (DEI) for a multitude of reasons. The purpose of this study was to determine how agricultural and food companies on the 2021 Fortune 500 list demonstrated a commitment to DEI efforts on their corporate websites. BACKGROUND: Lack of access to adequate, safe, and nutritious food is a major concern for the Afghan population due to ongoing war and humanitarian crises. Recently resettled Afghan refugees in the US continue to face challenges securing adequate, nutritious food resources in new environments. This study examined Afghan refugees' food access and insecurity in the San Joaquin Valley, California.
METHODS: Semi-structured, in-depth interviews were conducted to collect the perspectives and experiences of key informants and newly arrived Afghan refugees.

Apicius is the sole surviving cookbook from classical antiquity; as such it is invaluable for what it tells us about ancient feasting customs. Yet the gluttony typically associated with classical antiquity has no place in Apicius beyond the art that is inherently associated with food; we are not so much given a seat at the cena (dinner) as we are led into the kitchen, handed an apron, and instructed to cook. "Yes Mom, I'M Eating": Foodways Among An International Cohort, Tessa Sergile

This research demonstrates different ways an individual’s habits around food change when exposed to new environments. It uses a combination of first-person sources and existing literature to draw conclusions surrounding the patterns of change in food preparation and consumption. A series of interviews were conducted and recorded to collect the information used in the thesis. The interview participants were college-aged students who had spent 6 < months in a foreign country. Most were participants of the IBEA cohort of South Carolina, a program where students around the world came together as a group to study at multiple universities over two years. Interviews were based on an interview guide that was refined throughout the process. There were a total of 33 interviews, with participants hailing from six different countries. The results of the interviews demonstrated that individuals exhibited varying types of behavior based on their own viewpoints towards cooking and meals, as well as the environment they were exposed to during meal preparation. This information was used to create a matrix to classify individuals based on their inspirations in cooking, and their use of home habits. The results lead to an additional category of “Unconscious Preparation” being proposed to the existing subcategories of food preparation. Further analysis of the data collected is also encouraged. This research adds depth to the present literature since it deals with individuals who are in foreign environments for the short-term, before moving away. Current literature mainly focuses on immigrants who move away from their homeland permanently (Brown and Mussell, 1984; Goode, Theophano and Curtis, 1984; Kalčik, 1984; Singer, 1984). It adds a new consideration to how we approach mealtimes when we are in a foreign environment and helps define different approaches that people may take when preparing food away from where they grew up. These findings could be used for other students studying abroad to better determine how their mealtime habits may change. There is also literature in Gottlieb and Rossi (1961), which describes similar effects in the military, whose style of travel and living is similar to that of an international student, meaning the results could also be interesting to the government when trying to plan for meals served to active-duty personnel abroad.

The male show-off hypothesis claims that men are more likely than women to show off their abilities and publicly compete. However, the male show-off hypothesis has yet to be tested in a domain where both men and women are consistently involved, such as cooking. To examine showing off and cooking, we assessed the social media behavior of MasterChef reality program contestants both in the U.S. and Australia. We focused on 98 contestants from MasterChef U.S. (m = 52 & f = 46) and 107 contestants from MasterChef Australia (m = 45 & f = 62). For each contestant, we examined …

Tender Buttons is a compilation of poems published by American writer Gertrude Stein in 1914. It is an experimental piece. In it, Stein describes commonplace items using descriptors that are not often associated with them. Each poem examines a unique perspective on a common thing. “Objects”, “Food”, and “Rooms” are the three sections of the book. The current food system is directly responsible for much environmental damage including severe climate change, biodiversity loss, and land scarcity. This research aims to find some strategies to mitigate these damages through diet by specifically targeting adolescents because they are potential problem-solvers. This period is also when personality and habits are articulated. By focusing on reducing greenhouse gas emissions, land use, and food waste, a more environmentally sustainable diet can be formulated. The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is now expected to allow participants to redeem their food benefits online, i.e., via online ordering, rather than only in-store. However, it is unclear how this new benefit redemption model may impact participants’ welfare since vendors may have an asymmetric information advantage compared with WIC customers. The WIC online ordering environment may also change the landscape for WIC vendors, which will eventually affect WIC participants. In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. Food for Harlem is a resource guide for Harlem residents to find local food-focused organizations. It’s a list for you to find where you can get healthy affordable food in your neighborhood. This project was created after the feedback I heard in discussion during my time at a food market in Harlem. The final product includes a complete list of over 70 food-focused organizations in Harlem, an interactive map, some important information about the included resources, and a list of definitions.
