Colored Cheddar cheeses are prepared by adding an aqueous annatto extract (norbixin) to cheese milk; however, a considerable proportion (∼20%) of such colorant is transferred to whey, which can limit the end use applications of whey products. Different geographical regions have adopted various strategies for handling whey derived from colored cheeses production. For example, in the United States, whey products are treated with oxidizing agents such as hydrogen peroxide and benzoyl peroxide to obtain white and colorless spray‐dried products; however, chemical bleaching of whey is prohibited in Europe and China. Background: Exercise is a reinforcing behavior and finding exercise highly reinforcing is characteristic of habitual exercisers. Genotypes related to dopamine metabolism moderate the reinforcing value of behaviors, but genetic moderators of exercise reinforcement have not been established.
Purpose: Determine whether singular nucleotide polymorphisms (SNPs) that moderate central reward pathways and pain neurotransmission are associated with exercise reinforcement, tolerance for exercise intensity, and usual physical activity.

As the global prevalence of childhood obesity continues to rise, researchers and clinicians have sought to develop more effective and personalized intervention techniques. In doing so, obesity interventions have expanded beyond the traditional context of nutrition to address several facets of a child's life, including their psychological state. While the consideration of psychological features has significantly advanced the view of obesity as a holistic condition, attempts to associate such features with outcomes of treatment have been inconclusive. Previous research suggests that food insecurity is higher among college students and individuals from minority populations than the general population. Many college campuses have recognized this issue and developed on-campus food pantries to mitigate food insecurity among students. Nevertheless, barriers exist that prevent students from utilizing on-campus pantries. The purpose of this study was to investigate college students’ relationship to food and food access at Western Michigan University (WMU). Objectives: This study determined whether a moderate- or high-dose exercise program increases exercise reinforcement. Increasing the relative reinforcing value of exercise (RRVexercise; i.e., incentive sensitization of exercise) may increase the usual physical activity (PA) participation. Preference and/or tolerance for the intensity of exercise was also assessed.
Design: Sedentary men and women (body mass index, BMI: 25–35 kg/m2) were randomized into parallel exercise training groups expending either 300 (n = 18) or 600 (n = 18) kcal/exercise session, five sessions/week, for 12 weeks.

Objective: The study aims to compare the effectiveness of individual and group nutrition education methods in improving key anthropometric and biochemical markers in drug-treated, overweight-obese hypertensive adults. Methods: The randomized trial included 170 patients with pharmacologically well-controlled primary hypertension and body mass index (BMI) ≥ 25 kg/m2. For six months, the patients received six sessions, either one-to-one individual nutrition education (IE, n = 89) or group education (GE, n= 81), developed by dietitians. Anthropometric measurements, body composition, and fasting measures of biochemical parameters were obtained at baseline and after six months of intervention. Results: 150 patients completed the …

Carbohydrate counting (CHO) is a nutrition education tool used by patients with type 1 diabetes mellitus (T1DM). The primary objective was to assess glycated hemoglobin (A1C) in participants with T1DM using CHO counting vs. those using a structured meal plan (SMP). The secondary objectives were to determine if BMI-for-age, parental income, parental involvement, and mothers’ educational level were associated with their children’s glycemic control. A cross sectional study was conducted, where participants aged 4-18 years, or their parents completed a survey. A registered dietitian nutritionist’s (RDNs) job is to ensure adequate care through thorough assessment, diagnosis, treatment and evaluation, otherwise known as the Nutrition Care Process (ADIME-NCP). Through the story of my uncle and his journey with COPD you are able to understand the struggles this chronic disease can have and how RDN’s play a role in their care.

The objective of this study was to assess the effectiveness of a 6-month randomized, controlled nutrition intervention targeting prediabetes in people living with HIV (PLWH) and have prediabetes. Participants (n=38) were randomized into the intervention group (n=20) or the control group (n=18). Participants randomized into the intervention group met once a month for approximately 1 hour to receive medical nutrition therapy, nutrition counseling and nutrition education; participants randomized into the control group received educational material at baseline. Fasting blood glucose (FBG) for the 6-month follow-up for the intervention group was significantly reduced compared to baseline (p=0.03). No significant difference was …

Syrian refugees settled in the United States may experience food insecurity due to different socioeconomic factors that may include nutrition knowledge, language proficiency, women’s education, and perceived stress. The structure and the type of households may also contribute to food insecurity in this population.
The objective of this study was to measure food security among Syrian refugees residing in Florida. It also aimed to determine the socioeconomic factors that may attribute to food insecurity at household level.

Human breast milk is known to provide the most complete nutrition to growing infants. There may be more gained from breastfeeding than simply nutritional fulfillment-recent research has uncovered benefits related to the development and health of infants. Breastfeeding has been shown to stimulate immune system development by exposing the infant to bacteria and antibodies from the mother. Breastfeeding may also benefit nursing mothers by improving insulin sensitivity and glucose tolerance as well as decreasing postpartum weight gain. Kuwait has the highest prevalence of obesity within Arab countries at 37.8%. The prevalence of childhood obesity, believed to be a reliable measure of future obesity, is increasing in there year after year. However, the potential effect of any type of preventive measures has not been adequately studied. Therefore, this dissertation aimed to increase awareness of long-term risks of childhood obesity among children and their mothers. Type 2 diabetes mellitus is an immense burden to the health of our population and to our current health care system, and the weight of this burden is only projected to multiply in coming years. Late night television commercials and Internet advertisements have suggested that it is an essential, unequivocal means to losing weight fast. ls hCG really a miracle cure to help patients shed unwanted pounds? In 1954, A.T.W. Simeons claimed that hCG impacts weight loss by decreasing hunger, increasing fat redistribution, and increasing overall mood. Background/objectives
Malnutrition is evident in hospitals and stroke patients are at increased risk. Protected mealtimes may help increase nutrient intake especially when patients interact and enjoy the dining room atmosphere. The aim of this research is to investigate if eating in a communal dining room increases nutritional intake compared to eating at the bedside and to investigate whether patient interaction and mood affects patient nutrient intake.
