Type II diabetes mellitus (T2DM) is a common chronic metabolic disease affecting millions of people globally, which causes many long-term complications such as high blood pressure, chronic kidney disease, improper wound healing and loss of sight. The Department of Dietetics at Marshall University is a subcontracting agency with the West Virginia University Extension Service for the purposes of delivering nutrition education to children in low-income schools in a six-county radius in southwestern West Virginia through the Marshall University Nutrition Education Program (NEP). The method of lesson delivery includes an educational model that utilizes both registered dietitians (RD) and dietetic interns. The NEP is evaluated through several methods, including pre-/post-tests, teacher focus groups, and parental feedback surveys. Learn First, Practice Second Approach To Increase Health Professionals’ Nutrition-Related Knowledge, Attitudes, And Self-Efficacy., Madison E. Santella

The aim of this study was to assess the effectiveness of a “learn first, practice second” intervention on the nutrition-related knowledge, attitudes, and self-efficacy of multidisciplinary health professionals in West Virginia, specifically highlighting the Mediterranean Diet. Data was captured via online surveys at four time points (Baseline, Post-education, Post-immersion, Follow Up). All information was self-reported. This approach consisted of 16 weeks of online education, 2 weeks of cultural immersion in Tuscany, Italy, and a 7 month return to practice period.
