Introduction: Delayed enteral nutrition in critically ill patients increases the risk of complications and poor outcomes. Current evidence-based guidelines recommend initiation of enteral nutrition within 24-48 hours of intensive care unit (ICU) admission. The quality improvement (QI) project aim was to examine whether enteral nutrition was initiated within 24- 48 hours of mechanical ventilation after implementation of QI intervention in order to determine practice change.

Methods: The QI protocol was introduced to the Cardiovascular ICU (CVICU) at UK Chandler Hospital (UKHC) nurses via an education session. A post-education electronic survey identified the nurse’s understanding of the protocol. To identify nursing …

Extension professionals must demonstrate organizational value to garner public awareness and support. Measuring and communicating outcomes that have public value can be challenging. In this study, Ripple Effects Mapping incorporating the Community Capitals Framework was used to evaluate a childhood obesity prevention study, iCook 4-H, of youth-adult pairs in Maine. The objective was to describe the process of generating impact statements through story threads about program benefits to the participants and the potential benefits to nonparticipants, such as family members, friends, and other community members. The purpose of the present study was to compare muscle strength, size, activation, and oxygenation between older women with and without sarcopenia during dynamic fatiguing leg extension bouts with high (5-repetition maximum[5-RM]) and low (30% of estimated 1-RM[30%1-RM]) loads. Eleven women (n = 6 non-sarcopenic [mean ± SE; age = 75.8 ± 2.6y] and n = 5 sarcopenic [age = 74.5 ± 3.1y]) were screened for eligibility and sarcopenic status. Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented.

Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. Using A Model To Design Activity-Based Educational Experiences To Improve Cultural Competency Among Graduate Students, Yeon Bai, Kathleen D. Bauer

Department of Nutrition and Food Studies Scholarship and Creative Works

To improve the cultural competency of 34 students participating in graduate nutrition counseling classes, the Campinha-Bacote Model of Cultural Competence in the Delivery of Health Care Services was used to design, implement, and evaluate counseling classes. Each assignment and activity addressed one or more of the five constructs of the model, i.e., knowledge, skill, desire, encounters, and awareness. A repeated measure ANOVA evaluated pre- and post-test cultural competence scores (Inventory for Assessing the Process of Cultural Competence among Healthcare Professionals). The overall cultural competence score significantly improved (p < 0.001) from “culturally aware” (68.7 at pre-test) to “culturally competent” (78.7 at post-test). Students significantly improved (p < 0.001) in four constructs of the model including awareness, knowledge, skill, and encounter. Factor analysis indicated that course activities accounted for 83.2% and course assignments accounted for 74.6% of the total variance of cultural competence. An activity-based counseling course encouraging self-evaluation and reflection and addressing Model constructs significantly improved the cultural competence of students. As class activities and assignments aligned well with the Campinha-Bacote Model constructs, the findings of this study can help guide health educators to design effective cultural competence training and education programs.

The Healthy Living Ambassador Program brings health, teen leadership, and teamwork to California's elementary school gardens through interdisciplinary UC Cooperative Extension collaboration, community-based partnerships and teen teaching. During spring 2015, teen ambassadors trained by Extension educators and volunteers at UC Elkus Ranch in San Mateo County taught nutrition science, food cultivation and healthy living skills in an 8-week, garden-based, after-school nutrition and physical education program for elementary school children in an urban setting. Congestive heart failure (CHF) is a progressive medical condition affecting more than 7 million people in the United States (US) with 700,000 new cases reported annually. More than half of those treated for CHF are readmitted at least once a year. The problem addressed by this quality improvement initiative was lack of adherence to low sodium diet (LSD) among CHF patients, knowledge and skill deficit, and excessive 30-day CHF readmissions. A large portion of an adult community in the northwestern United States suffers from excessive weight that has been linked to premature mortality rates and certain forms of diabetes. This research project investigated the outcomes of educating parents of infants between the ages of 6 months and 12 months on the importance of including vegetables in complementary feedings on the infant’s vegetable consumption. Objective: Evaluate how a social marketing approach compares to traditional nutrition education curriculum for promoting behavioral changes related to eating and food.

Design: Nonequivalent comparison group, entry-exit design. Participants from 12 Kentucky counties assigned either comparison or pilot group. Comparison group received traditional nutrition education curriculum and pilot group received the social marketing program, Cook Together, Eat Together (CTET) curriculum. EFNEP’s Behavior Checklist and 24-Hour Dietary Recall were administered at entry and exit of the 8-week programs.

Participants: Females (18-72 years of age) from families eligible to receive SNAP benefits (n=64 comparison group participants, n=60 pilot group participants).

Background: Academic success is a key determinant of future prospects for students. Cognitive functioning has been related to nutritional and physical factors. Here, we focus on iron status and aerobic fitness in young-adult female students given the high rate of iron deficiency and declines in fitness reported in this population. This manuscript aims to describe nutritional requirements and needs for children and how technology is being used to improve nutritional knowledge among them. Several technologies and applications are explored, and recommendations are given for ways to improve. Four interactive nutrition games for children are examined: two computer games and two mobile applications. Through revision of performance, nutrition content, attraction, design and attention capabilities, HealthyHeroes was chosen to be the best game for children to learn and have fun with the subject of nutrition.

A goal of schools is to provide students with practical nutritional information that will foster healthy lifelong behaviors.
