The n-hexane was used as extraction solvent, and the ultrasonic-assisted extraction parameters of Panicum miliaceum L. shell oil were optimized by response surface methodology based on the single factor experiment of ultrasonic power, liquid-solid ratio, extraction time and extraction temperature. The results showed that the optimum extraction parameters were as follows: the ultrasonic power was 400 W, the liquid-solid ratio was 12∶1 (mL/g), the extraction temperature was 70 ℃, and the extraction time was 50 min, and the yield of Panicum miliaceum L. shell oil reached 6.95% under the optimal condition. To investigate the bioactive compounds and antioxidant activity of vine, leaves and fruits of the Ficus tikoua Bur. in Guizhou Province, the phenolic compounds, vitamin C, total phenols, total flavonoids were analyzed. Antioxidant activity was evaluated by total reducing power assay (TRPA), free radical scavenging capacity of ABTS+· (ABTS) and ferric ion reducing antioxidant power(FRAP) method in vitro, and Pearson correlation analysis was conducted. The results indicated that the contents of bioactive compounds and antioxidant activity were significantly different between the vine, leaves and fruits (P<0.05). The extraction of polyphenols from the branches of Magnolia kwangsiensis figlar & noot. (M. kwangsiensis) was studied by ultrasonic-assisted extraction. The extraction condition was optimized by response surface methodology. The antioxidant activities of M. kwangsiensis branch polyphenols were evaluated in aspect of total antioxidant activity, DPPH· scavenging activity and ·OH scavenging effect. Results showed the optimum conditions were acetone concentration 67%, liquid-solid ratio 22 (mL/g), extraction time 20 min, and the yield of polyphenols reached 1.45%. The polyphenols from the branches of M. kwangsiensis had certain total antioxidant activity, but had good scavenging effects on DPPH· and ·OH.

In order to explore the effect of vacuum extrusion on the noodles, the nutritional components, quality analysis and functional evaluation of the vacuum extruded coarse cereal noodles, common extruded coarse cereal noodles and wheat flour noodles were carried out. The results showed that the effect of vacuum extrusion on the nutritional composition and functional characteristics of noodles was not significant (P>0.05); Compared with normal-pressure extruded multi-grain noodles, the vacuum-extruded ones had good texture characteristics with a smooth surface, showing teeth non-sticky. Three varieties of indica rice with significant difference in amylose and protein content were selected as the research materials. The fresh rice noodles was processed by production line with a capacity of 1 200 kg/h after size mixing (material liquid ratio 11.5). Single factor combined with orthogonal test was employed to optimize the best technology for fermentation of tobacco leaves by Lactobacillus plantarum in this study. The chemical components, aroma substances and sensory evaluation of fermented tobacco leaves were analyzed. The optimal fermentation technology of tobacco leaves by L. plantarum was achieved when the addition of L. plantarum, glucose syrup and soy protein peptide was 0.80‰, 5.0‰, and 0.05‰ respectively, with fermentation for 8 days. In order to deeply understand the characteristics of heat-not-burn (HNB) cigarette tobacco materials prepared by different processes and their effects on the characteristics of cigarette products, four kinds of sheets with different flavors prepared respectively by rolling press (RP) , slurry process (SP), paper-making process (PP) and air-laid process (AP) were analyzed by chemical composition analysis, thermal cracking analysis and thermal weight analysis. The latest physicochemical pretreatment technologies to improve the emulsifying properties of proteins and the corresponding mechanisms were summarized, including the physical modification such as ultrasound, high pressure homogenization, extrusion cooking, and swirl cavitation, and chemical modification methods such as pH shifting, phosphorylation modification, and enzymatic modification. Moreover, this review also included the synergistic effects of the above methods to modify proteins and the related mechanisms and the future research prospects of the protein modification.

A variety of bioactivities induding papaya alkaloids, rutin, benzyl isothiocyanate, carotenoids in Papaya (Carica Papaya L.) were investigated in this study. Some of these compounds exhibited a broad array of pharmacological activities in gastrointestinal protection, hepatoprotective effect, anti-inflammatory, weight loss and beauty, anti-cancer, anti-bactericidal and antioxidation properties. This review summarizes the research progress of main bioactive substances, anticancer functions in different parts of papaya, and its wide application prospects in food industry, pharmaceutical industry and health care industry were proposed.

Red snapper (Lutjanus campechanus) is a historically overfished and highly valued species that is commonly substituted with other fish, such as tilapia, rockfish, and other snapper species. The objective of this study was to assess the ability of real-time PCR to be used as a screening tool to rapidly test commercial fillets for the presence of red snapper, followed by species identification of negative samples with DNA barcoding. The aim of this experiment is to assess how a wide range of cocoa content in different types of chocolate samples effects oral motor activity for mastication events, along with the time between consumption and swallowing. A prior study assessed individual oral motor activity using surface electromyography (sEMG) for mastication events while eating four different chocolate samples, and this information was used to determine which aspects of the masticatory process underlie differences in individual chewing behavior as well as whether subjects retain their general characteristic eating behavior across a variety of chocolate samples. Superficial scald is a physiological disorder characterized by skin browning that appears during or after storage of ‘Granny Smith’ apples. The mechanism for scald development is not fully understood, but it is hypothesized that scald formation is related to increased ethylene production. In apples, low dose irradiation induced ethylene reduction appears to be directly related to prevention of superficial scald. Formation of harmful microbes and their associated mycotoxins on rough rice during storage present negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. The poultry industry and associated regulatory bodies use whole bird carcass (WBC) rinsates to evaluate different stages of broiler processing systems for the prevalence of food-borne pathogens, including Salmonella spp. and Campylobacter spp. Within industry and research groups, the same sample collections are enumerated to determine E. coli, Enterobacteriaceae (EB), and Aerobic Plate Count (APC) microorganisms. Microgreens are immature sprouts of edible plants, sharing some similarities with sprouted seeds and petite leafy greens. The proteases such as alkaline protease, neutral protease, papain, bromelain, and complex protease were screened using the degree of hydrolysis (DH) and peptide yield (TCA-YSP) as indicators. The crude oligopeptide of cashew nut was isolated by ultrafiltration, Sephadex-G15, Sephadex-G50 and semi-preparative liquid chromatography. The purity and structure of cashew nut oligopeptide were identified through analytical liquid chromatography and infrared spectra. The results showed that DH and TCA-YSP were (17.06±1.52)% and (26.28±0.13)% respectively, which were significantly higher than those of other proteases. Therefore, alkaline protease was the most suitable protease. The sequence of cashew nut oligopeptide was Ile-Ile-Ala-Pro-Ala-Val-Ala-His (IIAIPAGVAH). The result …

In this study, polyphenols from Durian hull were extracted by 80% methanol, and their antioxidant and anti-inflammatory activities were investigated based on in vitro antioxidant assays and LPS-stimulated RAW 264.7 cells model. The results demonstrated that durian hull extract was rich in polyphenols, it showed strong antioxidant activity in vitro and it could reduce the expression level of inducible nitricoxide synthase (iNOS) and cyclooxygenase-2 (COX-2), decrease the NO production, and also lower the pro-inflammatory cytokines (TNF-α, IL-1β and IL-6) at the mRNA and protein levels. The effects of freeze-thaw processing on the characteristics of hot-air drying and the coefficients of moisture diffusion in Malus domeri (Bois) chev were investigated. The results showed that the freeze-thaw pre-treatments had significant effects on drying characteristics. It was found that freeze-thaw pre-treatments could significantly shorten the drying period and increasing the drying rate. Logarithmic model provided better simulation of drying curves for freeze-thaw M. domeri (Bois) chev. at different drying conditions. The results indicated that Deff increased with the increasing of times of freeze-thaw.

To reveal the changes in microbiota community structure and antioxidant activity of polyphenols from litchi pericarp during culture with human fecal microbiota, litchi pericarp polyphenols were added into the mixed medium of intestinal microbiota solution prepared from fresh feces of healthy volunteers for the anaerobic culture in vitro. The total phenol content and antioxidant activities were measured at 0, 4, 8, 12, 24 and 48 h. The change of intestinal microbiota was analyzed by high-throughput sequencing. The effects of color protection to candied apple under different processing parameters were studied by using Shangdong red Fuji as raw material. Sensory evaluation and brightness (L value) and browning degree were used as evaluation indexes, and the effects of slice thickness, phytic acid concentration, microwave blanching power, microwave blanching time, hot air drying temperature and drying time on the color protection effect of candied apple were analyzed by single factor experiment. Residence time distribution is an important parameter to characterize the flow state of materials during twin screw extrusion, which is closely related to the quality formation of extruded materials. The paper introduced the measurement method of residence time distribution by indicator method and parameters. The impacts of temperature, moisture, screw configuration, die hole, feeding speed and screw speed on residence time distribution in twin-screw extrusion process were analyzed. Due to the complex structure of food ingredients (e.g. starch, protein), researches on determination methods and influencing factors need to be further improved.
