Objective: The present study aimed to optimize the extraction process of polyphenols from Trifolium pratense Linn and evaluate the antioxidant activity in vitro. Methods: Ultrasonic-assisted extraction of total polyphenols from stems, leaves, and flowers was firstly performed, and the parts with higher polyphenol content were selected for further investigation. Then the response surface methodology was used to optimize the extraction process, and its antioxidant activity was evaluated by scavenging rate of hydroxyl radical and superoxide anion radical. Objective: The study aimed to explore the effect of ultra-fine green-tea powder on the quality of noodles, and develop a kind of noodles rich in superfine powder of green tea. Methods: The effects of ultra-fine green tea powder on the texture characteristics, water migration and sensory flavor of noodles were comprehensively analyzed, and the formula of ultra-fine green tea noodles was optimized by response surface design. Objective: Electronic tongue technology was used to analyze the taste of edible areca and compared with sensory evaluation to provide a more objective and accurate evaluation method. Methods: The taste of 12 different areca products from 8 enterprises was analyzed using electronic tongue, sensory evaluation, and multivariate statistical methods. Results: There were significant differences in the areca taste index between different brands; the samples were divided into three groups by principal component analysis, factor analysis and cluster analysis, and each cluster had its unique taste characteristics. The value and significance of food tourism were analyzed from two aspects including consumer satisfaction and economic development. The development model of food tourism was classified into three categories, i. e., regional food tourism, festival food tourism and theme food tourism, and the development status of the three kinds of modes in and outside China was also enumerated. Finally, suggestions are given for the development of food tourism in the future.

The substrate of rice (Oryza sativa) straw employed in this study was procured from local market and stored in polyethene bags until needed. The study was conducted to find out the effects of process optimization of ethanol production from enzymatically saccharified biomass of acid-pretreated rice straw. The results indicated that acid pretreatment has reduced lignin content about 50%. Resultantly, pretreatment raised cellulose contents up to 52% making it suitable for enzymatic saccharification. NuVal scoring labeling that was based on overall nutritional quality index, adopted 1 to 100 to show the nutritional value of packaged food and fresh agricultural products. The higher was the score, the better was the nutritional status of food. The labeling was integrated with food prices to make it easier for consumers to compare the nutritional value of what they pay. Therefore, FOP labeling in China could be attempted to integrate nutrition evaluation information with food price, and promote in fresh agricultural products, and adjust its algorithm in accordance with the national nutritional needs.

Objective: A method for simultaneous determination of 10 amide herbicide residues in dark tea was developed by QuEChERS method coupled with gas chromatography-triple quadrupole mass spectrometry (GC-MS/MS). Methods: After being extracted by acetonitrile and purified by QuChERS, the samples were separated by TG-5 SIL MS column (30 m×0.25 mm×0.25 μm), then detected bymultiple reaction monitoring mode (MRM). Objective: An automatic identification method of jujube defects based on improved convolution neural network was established. Methods: Using the dual branch convolution neural network structure, branch 1 combined with the transfer learning strategy for pre training, analysis 2 extracted the feature information from the jujube image based on the lightweight network fusion feature map. The superiority of this method was verified by comparative experiments. Results: Compared with the improvement before, the improved defect recognition method optimized the structure of the convolutional neural network, and the detection accuracy was further improved, from 96.02% to 99.50%. Objective: To investigate the effects of milling degree and cooking method on cooked rice quality of high-quality Indica rice. Methods: Paddy rice (variety Longliangyou 1813) were dehulled and milled for 20, 35, and 50 s, respectively. Objective: A rapid method for simultaneous determination of 18 quinolones residues in raw milk was established. Methods: The raw milk was pretreated by liquid-liquid extraction, and the residues of 18 quinolones in raw milk were analyzed by ultra-performance liquid chromatography-tandem mass spectrometry. Results: The linearity of all the 18 quinolones from 2.0 to 100.0 ng/mL had correlation coefficients greater than 0.992. The limits of detection (LOD) of this method ranged from 0.02 to 0.50 μg/kg, and the limits of quantification (LOQ) were 0.06 to 1.50 μg/kg.
