Beef cattle are estimated to directly contribute 26% of U.S. agricultural greenhouse gas (GHG) emissions, and future climate change policy may target reducing these emissions. Life cycle assessment (LCA) of GHG emissions from U.S. feedlot beef cattle was conducted to compare methods of the U.S. Environmental Protection Agency (EPA) with a more complete evaluation of emissions. The inclusion of emissions from crop production for feed, associated land use change, and other minor factors nearly doubled GHG emissions associated with beef feedlots from the EPA Annual Inventory estimate of 1611 kgCO2e hd-1 yr-1 to 3182 ± 167 …

This research was conducted to elucidate the mechanism and factors (diet, aging time, antioxidant level, and retail display time) affecting beef toughening in retail display under high oxygen atmosphere packages (HiOx-MAP; 80% O2 and 20% CO2). In the first study, effects of HiOx-MAP on color and lipid stability of beef m. longissimus lumborum steaks from yearlings fed corn or 30% wet distillers grains plus soluble (WDGS) diets supplemented with (150 mg/kg) or without (0 mg/kg) AGRADO-PLUS (AG) antioxidants were studied. Steak color-shelf life was extended (P < 0.0001) by HiOx-MAP compared to oxygen permeable film packages (PVC-OW). Stable flies, Stomoxys calcitrans (L.), are among the most damaging arthropod pests of cattle worldwide. The last estimate of their economic impact on United States cattle production was published 20 yr ago and placed losses at $608 million. Subsequently, several studies of effects of stable flies on beef cattle weight gain and feed efficiency have been published, and stable flies have become increasingly recognized as pests of cattle on pasture and range. We analyzed published studies and developed yield-loss functions to relate stable fly infestation levels to cattle productivity, and then estimated the economic impact of stable flies on cattle …

Wet distillers grains contain approximately 65% moisture. A partially dried product (modified distillers grains plus solubles; MDGS) contains about 50% moisture. However, both have similar nutrient composition on a dry matter basis. The objective of this study was to investigate the effects of finishing diets varying in concentration of MDGS on marbling attributes, proximate composition, and fatty acid profile of beef. Ninety-four, calf-fed crossbred steers were randomly allocated to three different dietary treatments (0%, 15% or 30% wet distillers grains plus solubles - WDGS – DM basis) and fed for 167 d to test the influence of different levels of WDGS on quality attributes of beef. At 48 h postmortem, marbling score, marbling texture, and marbling distribution were assessed by a USDA grader. Evaluation Of Single Nucleotide Polymorphisms Associated With Fertility And Production Traits In Holstein And Multi-Generational Angus Females, Rebecca Ann Hill

The objective of this study was to test the association of single nucleotide polymorphisms (SNPs) with fertility in two populations consisting of Holstein cows and multi-generational Angus cows. The candidate gene approach was utilized and previously described SNPs were tested for possible associations with fertility. Single nucleotide polymorphisms on three genes were evaluated including leptin receptor LEPR, calpastatin CAST, and DGAT1. Fertility traits were evaluated in conjunction with production traits for Holstein females and growth traits for Angus females. One SNP was significantly associated with birth weight (P < 0.05) in Angus females while a trend (P < 0.10) was observed for two markers influencing birth weight performance and three markers influencing weaning weight performance. An association of two SNP for birth weight and back fat thickness in Angus females was identified.!A trend (P < 0.10) was observed for one marker within LEPR influencing average services to conception, two markers within CAST influencing average days open, two markers within CAST and one marker within DGAT1 influencing average protein production, and one marker within CAST and one marker within DGAT1 influencing average milk production. One SNP within LEPR was significantly associated with average milk production (P < 0.05) in Holstein females. An association of one SNP within CAST and one SNP within DGAT1 for average protein production and average milk production in Holstein females was identified. An association of one SNP within CAST for average days open and average protein production in Holstein females was also identified. The association of these markers indicates that the evaluated quantitative trait loci (QTL) region may harbor causative mutations responsible for the variation observed in fertility and production traits. Further evaluation of SNP in these regions is necessary in order to identify mutations accounting for the largest degree of variation for fertility and production traits.

Feeding distillers grains to cattle decreases shelf life stability of retail displayed steaks due to the increased polyunsaturated fatty acid (PUFAs) content. High levels of PUFAs cause rapid oxidation of the fats in meat. To evaluate processing methods for frozen beef subprimals, the effects of freezing and thawing rates on tenderness and sensory properties were evaluated. There were six treatments: fresh-never-frozen 14-day wet aged, fresh-never-frozen 21-day wet aged, blast frozen–fast thawed, blast frozen–slow thawed, conventionally frozen–fast thawed, and conventionally frozen–slow thawed (all frozen subprimals were aged for 14d prior to freezing). This research was undertaken to identify an antimicrobial for use during chilling in beef processing, including periods of temperature abuse, as well as to evaluate membrane filtration as means to remove essential oils from bacteria to prevent further antibacterial action. Cold pressed terpeneless Valencia orange oil was examined in combination with various temperatures (37°C, 10°C, and 4°C) to determine its antimicrobial activity against various strains of bacteria. The effect of feeding Zilpaterol hydrochloride (ZH) with a 3 or 10 d withdrawal (WD) period to calf-fed Holstein steers (N=2993) on carcass characteristics and tenderness were evaluated in a feed lot experiment. Cattle were fed 0 or 8.3 mg/kg of ZH for the final 20 d of the feeding period, each treatment level was assigned a WD period of either 3 or 10 d. The objective of this experiment was to evaluate alternative sources of tropically adapted cattle germplasm and compare them with Angus- (AN) and Hereford- (HE) sired steers. The fatty acid content and chemical composition of retail samples of beef and lamb meat were investigated. Fifty beef and lamb chops were purchased from different supermarkets in İstanbul on separate occasions. The average muscle fatty acid content was 2395 and 2257 mg/100 g of muscle for beef and lamb, respectively. Saturated and polyunsaturated fatty acid contents were 1000 and 940 mg/100 g, and 199 and 261 mg/100 g of muscle for beef and lamb, respectively. Overall results indicate that, particularly before the Sacrifice Holiday, concentrate-based feeding of livestock increases and this has an adverse effect on the n-6/n-3 ratio …

As wolf populations increase throughout the United States there is a corresponding increase in wolf/livestock interactions. The Effect Of Duration Of Finishing Period On The Performance, Slaughter, Carcass, And Beef Quality Characteristics Of Eastern Anatolian Red Bulls, Abdülkadi̇r Özlütürk, Nuri̇ni̇sa Esenbuğa, Mete Yanar, Necdet Ünlü, Muhli̇s Maci̇t, Si̇nan Kopuzlu

Seventeen Eastern Anatolian Red (EAR) bulls at 20 months of age were divided into 2 treatment groups and fed for either 168 days (S) or 210 days (L). Initial and final weights were not significantly different. While bulls in the L group had the highest total weight gain (149.0 vs. 177.2 kg), feed efficiency ratio was superior for the cattle fed for 168 days. Carcass weight, spleen and front + hind feet weights as a percentage of slaughter weight, weight of kidney fat, percentage of kidney, pelvic, and heart fat, and yield grade all increased (P < 0.05) with feeding time. Bulls in the L group received a higher (P < 0.05) panel rating for juiciness, and the panel juiciness score was closely associated with tenderness measurements such as panel tenderness score, Warner Bratzler shear force value, and number of chews before swallowing. It is concluded that duration of finishing significantly influenced carcass, slaughter, and organoleptic beef quality traits of young EAR bulls.

The volume and value of Australian meat production and exports is substantial. On average over the past six years to 2006/07 Australia produced 3,166 million tonnes of meat per annum. Of this meat production, 1,428 million tonnes per annum was exported at a value of $6,411 million. Overall, exports contribute 45 per cent of total production. This supply encompasses 2,073 million tonnes of beef, 394,000 tonnes of pig meats, 361,000 of lamb and 259,000 tonnes of mutton. Projects were conducted to increase knowledge of liver-like off-flavor origins in muscles from the beef chuck and round. Effects of cooking rate and holding time on off-flavor of various steaks from ten carcasses were determined. Off-flavor from these muscles was lowest when the steaks were cooked slowly (on a 149°C grill versus a 249°C grill) and when held for one hour prior to evaluation. The M. infraspinatus had the least off-flavor, and the M. vastus intermedius had the most intense off-flavor. These data suggest a carcass with one off-flavored muscle is likely to have other off-flavored muscles in the chuck …

The i.m. tenderness variation was examined within four beef chuck muscles, the infraspinatus (IF), supraspinatus (SS), triceps brachii (TB), and serratus ventralis (SV). The IF, SS, TB, and SV muscles were cut into 2.5 cm thick steaks perpendicular to the long axis of the muscle. An identification tag was placed on each steak, consisting of a muscle identification number, steak number, and orientation of the steak. Steaks were vacuum-packaged and stored at −22°C until subsequent analysis. Steaks were thawed at 1°C and cooked on electric broilers to an internal temperature of 71°C. Research was conducted in two phases to determine the optimum beef LM size for retail consumers. In Phase I, 50 USDA Choice beef carcass sides were selected at a commercial packing plant and assigned to five different categories (10 sides per category) based on LM size: 61 to 68 cm2 (A), 70 to 78 cm2 (B), 80 to 90 cm2 (C), 92 to 103 cm2 (D), and 105 to 119 cm2 (E). In-home consumer steak evaluations, followed by centralized laboratory-setting auctions, were used to determine consumer (n = 74 consumers) acceptability and willingness to pay for various beef chuck muscles. The infraspinatus (IF), serratus ventralis (SV), supraspinatus (SS), and triceps brachii (TB) from the beef chuck were evaluated against LM steaks from the rib to determine price and trait differentials. Muscles from USDA Choice, boneless, boxed-beef subprimals were aged 14 d, frozen, and cut into 2.5-cmthick steaks. Grazing cattle on winter wheat, often prior to grain harvest, is common throughout the southern Great Plains. Grazing generates about $50 million in income for Texas wheat producers and reduces the risk of growing wheat by providing a substantial income source other than grain. Benefits can be realized by grazing prior to the primary environmental risk period for drought, heat stress, and hail, all of which frequently reduce grain yield while having limited impact on forage production. Cattle also are grazed on winter wheat fields in western Nebraska and the surrounding region. Typically in Nebraska, fall forage would be used …
