Cow size, reproductive traits and calf performance through weaning were evaluated in a range environment for Simmental (S) x Hereford (H) and Angus (A) x H crosses in two-breed rotations and straightbred H. Today's consumers are asking for leaner, less-fatty beef. Much of the leaner beef now produced results from trimming excess fat before the product is sent to the consumer. For the future, the hope is to trim excess fat genetically by producing leaner, more heavily muscled beef cattle.

Effects Of Heating Rate And Endpoint Temperature On The Palatability And Storage Stability Of Precooked Beef Roasts, C.M. Chen, P.S. Dezeeuw, W.J. Costello

The primary objective of this study was to determine the optimal cooking rate and endpoint temperature of a precooking regime for beef roasts which maximizes consumer acceptability and storage stability. Percentage cooking loss and TEA values were minimized when roasts were precooked to the lowest endpoint temperature (45 C, 112 F). I n addition, long-term cooking (heating rate = 16 min/C) improved TEA values (Thiobarbituric acid, a test for oxidative rancidity) for precooked beef roasts. Sensory qualities did not differ (P>.05) due to cooking rate or endpoint temperature. Findings suggest that a low-temperature long-term cooking method optimizes (Pc.05) cooking …

Thirty - four muscles/muscle groups, each greater than .1 kg, were dissected from 16 forequarters to establish a data base of individual muscle yields, palatability profiles and chemical composition. Carcass data from the 16 steers revealed the following averages: carcass weight - 288.4 kg, yield grade - 3.2, and quality grade – low choice. Individual muscle yields, tenderness profiles and chemical analyses indicated that the muscles within the forequarter are extremely variable. However, several of the larger muscles within the forequarter possess tenderness profiles comparable to the longissimus dorsi, the major muscle within rib steaks. This study suggests that maximum …

A feeding trial was conducted comparing four finishing diets, typically fed in this area, two hormone implants zeranol (Ralgro) and estradiol 17-beta (Compudose), and a feed additive. Thirty-two Hereford steers were fed in individual pens to maintain accurate intake records. The four diets compared were: 1) a whole corn diet with a small amount of corn silage as roughage; 2) a high energy ground barley diet using corn silage and chopped alfalfa as roughage; 3) a total diet consisting of rolled barley, beet pulp, and ground alfalfa hay; and 4) a high energy rolled barley diet using corn silage and …

Castration has long been a traditional practice in the United States. Research studies indicate that intact males grow more rapidly, utilize feed more efficiently and produce a higher-yielding carcass with less fat and more edible product. The disadvantages of the intact male include aggressive behavior (bull and boar); undesirable odors and flavors (boar and ram); lower quality grade (bull); lower meat tenderness (bull and ram) and undesirable meat color (bull and ram). Research is needed to develop antemortem and(or) postmortem handling procedures that offset the disadvantages of the intact male so that the meat and livestock industry can take advantage …

A computer program was developed at Utah State University (USU) to aid in obtaining a more complete individual performance record keeping system for beef cattle in Utah. Some computer programs for beef cattle records presently exist but a program was needed that was readily available to the USU animal science extension and resident staff.

Low phosphorus content and low protein content of pastures usually go hand in hand and as most dry feed is deficient in both of these important nutritional needs, it is easy to understand why our Kimberley cattle do well in the "wet" when ample green feed is available, but fall away rapidly in condition as the feed dries out. Increasing the protein content is essentially a long-term project, but I feel that the remedying of phosphorus deficiency is an economic possibility, which could be put into effect fairly rapidly.
