The United States beef industry has experienced increasing hot carcass weights (HCW) and improvements to quality grade the last three decades. Postmortem chilling of beef carcasses is critical to overall product quality. Carcass weight and composition may influence carcass temperatures during postmortem chilling. The objective of this research was to evaluate the effects of HCW and quality grade during postmortem chilling and on product quality. Effective and efficient chilling of beef carcasses will directly influence meat quality and consumer acceptance. Over the past century the United States’ meat industry has evolved, and spray chilling system have become common practice utilized by the beef industry. However, many of the chilling systems presently in use were designed to chill carcasses averaging lighter than the average beef hot carcass weight of today. Beef hot carcass weight has increased 68 kilograms from 1991 to 2019. Consumers consider tenderness and steak color to be two important attributes associated with meat quality. However, inconsistencies in both tenderness and steak color remain despite similar production practices of beef cattle. Stressful events before harvest may impact meat quality by initiating certain pathways such as abundance of heat shock proteins (HSP) and oxidation within the skeletal muscle. Heat shock proteins have been associated with tenderness while oxidation may affect steak color and flavor. Despite the increasing worldwide demand for beef as a protein source, consumers are concerned about the sustainability of ruminant production systems. Their main concerns are animal welfare for feedlot-fed animals, greenhouse gas (GHG) emissions, global warming and worker safety. Traditional feedlot-based beef production systems have been associated with locally greater levels of soil, water and air contamination, as well as the overuse of antibiotics and growth hormones. The objective of this study was to evaluate the effect of timing of electrical stimulation on free calcium concentration, calpain-2 activity, Warner-Bratzler shear force (WBSF), and consumer sensory analysis. Twenty-three beef steers were harvested and stimulated (S) using extra-low voltage or not stimulated (NS), at exsanguination and/or 1 h postmortem, resulting in 4 different stimulation treatments: NS-NS, NS-S, S-NS, or S-S. National cattle genetic evaluations assume technician and imaging lab do not contribute to phenotypic variation when measuring carcass traits by ultrasound. The objective of this study was to estimate variance components of ultrasound carcass measurements, specifically variance contributed by ultrasound technician and imaging laboratory. Accounting for technician and imaging lab variation may increase accuracy of genetic predictions for carcass traits. The objective of this study was to evaluate the effectiveness of the SDSU Beef 2020 program on increasing participant knowledge and impacting production practices. Unlike the pork or poultry industries, the US beef industry is not vertically integrated, and as a result the beef supply is managed by producers in a variety of roles. While these producers are knowledgeable about their specific sector, some may not be as familiar with the other aspects of beef production. South Dakota State University hosts an Extension program entitled Beef 2020 with the goal of bridging this knowledge gap.

Genetic panel use as a selection tool has grown in popularity in the beef industry. The objective of the study was to determine whether beef cattle genetically selected for tenderness generated a tender product. Igenity® (IT) panel results were provided by a cattle producer for 52 steers, which were harvested at a commercial harvest facility. Boneless strip loins (Institutional Meat Purchase Specifications #180; United States Department of Agriculture [USDA] Choice, n = 32; USDA Prime n = 20) were collected from the left side of each carcass and transported to the University of Idaho Meat Science Laboratory. The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. Ultrasound technology provides cattle breeders a relatively quick, non-invasive, and economical way to gather carcass data on live animals. Ultrasound provides the means to accurately predict body composition and develop estimated breeding values; however, national cattle genetic evaluations assume homogenous additive genetic and residual variances. Rapid prediction of beef quality remains a challenge for meat processors. This study evaluated the potential of Raman spectroscopy followed by chemometrics for prediction of Warner-Bratzler shear force (WBSF), intramuscular fat (IMF), ultimate pH, drip-loss and cook-loss. PLS regression models were developed based on spectra recorded on frozen-thawed day 2 longissimus thoracis et lumborum muscle and validated using test sets randomly selected 3 times. The aim of this study was to examine the efficacy of lauric arginate (LAE, 1000 ppm – 3000 ppm) as an assisting tool to reduce starved Listeria monocytogenes population in ground beef following sous-vide processing at different temperatures (55–62.5 °C). Ground beef mixed with LAE was vacuum sealed and a laboratory water bath was used for sous-vide cooking. Loglinear and Weibull models were fit to the survival microbial population and the D and Z-values were determined at 55–62.5 °C. The presence of <1% of an undeclared species in ground meat is generally thought to be indicative of cross-contamination as opposed to intentional mislabeling; however, this has not been experimentally tested. The objective of this study was to quantify the effects of poor sanitation on the cross-contamination of animal species in ground meat products, with the example of undeclared pork in ground beef. Cross-contamination was quantified using real-time polymerase chain reaction (PCR). Three different sanitation treatments were tested with a commercial grinder (“no cleaning”, “partial cleaning”, or “complete cleaning”) in between grinding of pork and beef samples (13.6 kg each). A 100-g sample was collected for each 0.91 kg (2 lb) of beef processed with the grinder and each sanitation treatment was tested twice. For the “no cleaning” treatment, the first 100-g sample of ground beef run through the grinder contained 24.42 ± 10.41% pork, while subsequent samples (n = 14) contained <0.2% pork. With “partial cleaning,” the first sample of ground beef contained 4.60 ± 0.3% pork and subsequent samples contained <0.2% pork. Pork was not detected in ground beef following “complete cleaning.” These results indicate that incomplete cleaning of grinding equipment leads to species cross-contamination at levels of <1% in most cases. Proper sanitation procedures must be followed when grinding multiple species in order to prevent cross-contamination and product mislabeling.

Grasslands in the Northern Plains provide the primary forage source for ruminants throughout much of the year (Schauer et al., 2004). Supplementation practices are often necessary to maintain production and offset forage nutritive decline throughout the grazing season (Schauer et al., 2004; Cline et al., 2009). Typically, to maintain a targeted production level, energy and protein supplementations are used for grazing livestock (Caton and Dhuyvetter, 1997). The purpose of this research study was to compile regional profiles of the consumers who intend to consume grass-fed beef in the U.S. and to create marketing strategies that would assist producers in marketing their product to consumers. The researcher sent an online survey to a panel of 484 consumers across the U.S. to learn about their perceptions of and intention to purchase grass-fed beef.

This study compared the quality variation and thermal inactivation of Escherichia coli O157:H7 in non-intact beef and veal. The effects of dietary ingredients on the proteome profile of postmortem beef longissimus lumborum (LL) muscle were evaluated. In the first experiment, the influence of dietary ractopamine on the whole-muscle proteome of beef LL was examined. Five proteins were differentially abundant between ractopamine-fed (RAC) and non-ractopamine fed (CON) groups. The differentially abundant proteins were over-abundant in RAC and were related to muscle structure development (F-actin-capping protein subunit beta-2 and PDZ and LIM domain protein-3), chaperone (heat shock protein beta-1), oxygen transportation (myoglobin), and glycolysis (L-lactate dehydrogenase A chain). Postmortem aging is widely practiced in the beef industry to improve eating quality characteristics. However, the oxidative stability of aged beef muscle could be negatively affected by extending aging period. The use of ruminal bypass amino acids allows levels of crude protein in the diet to be lowered and may also positively impact oxidative stability of aged beef muscle. Crude glycerin was included in high-forage beef growing diets at 0, 4, 8, and 12% diet DM to determine the effect on fiber digestion by evaluating changes in microbial species abundance, NDF digestibility, and VFA concentrations. Total tract NDF digestibility decreased with increasing inclusion of GLY in high-forage diets. However, there was no decrease in in situ NDF digestibility and Fibrobacter succinogenes microbial populations were unaffected, indicating that fiber digestion was not directly affected by inclusion of GLY. Acetate decreased while propionate and butyrate VFA proportions increased as GLY increased.

The objective of this study was to assess the impact of cattle finishing diet and muscle type on meat quality. Consumer sensory response, proximate composition, Warner–Bratzler shear force (WBSF), fatty acid composition, and volatile compounds were assessed from the gluteus medius (GM) and triceps brachii (TB) muscles of cattle (n = 6 per diet) which were grain-finished (USUGrain) on conventional feedlot or 2 forage diets, a perennial legume, birdsfoot trefoil-fin-ished (USUBFT; Lotus corniculatus), and grass-finished (USUGrass; Bromus riparius). The primary objective was assessment of effect of sample pooling on Tritrichomonas foetus detection using qPCR in beef bulls within 5 logs of trichomonad concentration in spiked preputial samples. The secondary objective was to use qPCR Ct values to estimate the percentage of beef bulls in the field population within each log of trichomonad concentration. Solutions containing none, 1,10,100,1000 and 10,000 trichomonads (T)/ml were made and tested by qPCR.
