Bakso (Traditional Indonesian Meatball) Properties With Postmortem Condition And Frozen Storage, Dino Rahardiyan

Bakso is a finely comminuted boiled Indonesian meat product that is traditionally made of starch, salt and emulsified prerigor or early postmortem meat and often sold from street vendors. Recently processors have begun to commercially manufacture bakso. This research was conducted to investigate the substitution of early postmortem meat with postrigor meat to allow more efficient manufacturing and raw material procurement. The first experiment was to determine the properties of bakso with three tapioca starch concentrations added to early or late postmortem beef. No differences (p<0.05) were observed in bakso properties of composition and texture, though bakso made of post-rigor meat had slightly less elasticity, strength and shear. These disadvantages were compensated by incorporating 15% starch concentration, indicating that the replacement of early postmortem meat with postrigor meat was applicable in industrial mass production of bakso. The second phase of experiments was to investigate the properties of bakso with different frozen storage times of raw postrigor meat and after different times of frozen storage for bakso made from postrigor and early postmortem meat. Postrigor meat substitution for early postmortem meat in bakso with 15% tapioca starch resulted in minimum composition and textural differences (p>0.05). Four experiments were conducted to evaluate the effects of diets with reduced Ca or nonphytate P (nPP) levels with supplemental virginiamycin (Vm) on growth performance and bone response variables in chicks. All diets were corn-soybean meal based and all treatments were replicated six or eight times with five or six chicks each. Reducing dietary nPP from 0.45 to 0.15, 0.25, or 0.35% decreased most growth and bone response variables. Mastitis in prepartum dairy heifers has been recognized as a significant economic problem for the dairy industry. Intramammary infusion of cephapirin sodium was completed in 20 treatment animals and the results were compared to 25 non-treated control animals. Bacteriological data from the quarter milk samples were used to determine and compare initial infection rates and cure rates following calving between treatment and control groups. Comparisons were also made between groups for differences in reproductive performance, milk yield, somatic cell count and milk ketone concentration. This study was carried out between January 1996 and December 1997 in Kayaboğazı Dam Lake. During this period 424 specimens were examined. The age of females and males ranged from I to VII. The fork length and weight of females and males were 102-277 mm and 15-377.02 g and 125-274 mm and 27-369.02 g, respectively. There was no statistically significant difference between females and males in terms of body length and weight.The sex ratio (male:female) was 0.947:1. Bottlenose dolphins, Tursiops truncatus, commonly occur in fission-fusion social systems. For this study, I analyzed photo-identification data from 1994 to 1999 to describe association patterns of bottlenose dolphins in the nearshore waters of Virginia Beach, Virginia. Bottlenose dolphins are present seasonally (late April until early November) in these waters and individuals are considered to be members of the North Atlantic coastal migratory stock. I selected 78 individuals for detailed analyses from the 972 dolphins identified in the study area. Author's abstract: Q-fever is a zoonosis caused by a worldwide-distributed bacterium Coxiella burnetii. Ticks are vectors of the Q-fever agent but play a secondary role in transmission because the agent is also transmitted via aerosols. Most Q-fever studies have focused on farm animals but not ticks collected from dogs in animal shelters. In order to detect the Q-fever agent in these ticks, a nested PCR technique targeting the 16S rDNA of Coxiella burnetii was used. Texture Profile Analysis of minced catfish products indicated that minced proteins from the belly flap meat have excellent functional properties to form gels or restructured products. Belly flap meat is considered a low-value trimming, with about 16.9% protein and 11.2% total lipid. Washing of minced catfish trimmings increased the moisture content from 71.5% to 77.9% while reducing mechanical hardness (19.1 N to 11.9 N), chewiness index (14.2 N to 8.83 N) and shear energy (0.82 J to 0.51 J). No significant changes were found in cohesiveness, resilience, and springiness of the minced fish after washing or the addition of 3.3% …

The subfamily Tenthredininae in the family Tenthredinidae was treated in this part of the study regarding the sawfly (Symphyta, Hymenoptera) fauna of Turkey. The materials were collected from various localities around the country, though examples from eastern Turkey are predominant. After examining more than 2500 specimens, 57 species in 8 genera were recorded. Eleven species were new for Turkish fauna; of these 3 species were recorded for the first time as Asian fauna. The histology of the esophagus of Oncorhynchus mykiss was studied. The structure of the esophagus exhibited differences as well as similarities when compared with previous studies. In this study, the histochemical and ultrastructural structure of the tunica muscularis externa in the esophagus of this fish is investigated. The muscle fibers are described as red and intermediate fibers according to the pH stability of their mATPase activities. The red fibers showed intense staining, while intermediate fibers showed moderate staining with succinic dehydrogenase (SDH) and toluidine blue. In addition, small diameter fibres were seen. The effect of propolis on the growth of Lactobacillus casei RSKK 591, Streptococcus mutans NCTC 10449 and Streptococcus sobrinus DSN sobrinus 20742 was investigated in vitro. Bursa propolis had the most inhibitory effect on S. sobrinus. The effect of Bursa propolis on rats inoculated with S. sobrinus was also studied. In rats inoculated with the bacteria and given propolis, the severity of sulcal enamel and superficial dentine lesions was significantly less than that in the control group, but colony forming unit numbers and the caries scores in other levels were not different. In the second part of this contribution to the fauna of the typical sawfly, Tenthredinidae in Turkey, the subfamilies Blennocampinae, Dolerinae, Nematinae and Selandrinae are discussed. Twenty-seven species in 13 genera of Blennocampinae, 7 species in 2 genera of Dolerinae, 9 species in 6 genera of Nematinae, and 4 species in 4 genera of Selandrinae, a total of 47 species, are recorded. Of these, 7 species were new to the Turkish fauna. New data on geographical distribution and host plants are given for some species. For each species, a chorotype is reported.

Biological characteristics such as sex, age and length compositions, growth, condition factor, reproduction, mortality and exploitation rates of the silver crucian carp, Carassius gibelio (Bloch 1782), population in Lake Eğirdir were investigated between March 2001 and February 2002. According to the 616 specimens ranged in age groups from I to VI, the percentages of male and female individuals in the population were 53.4% and 46.6%, respectively. Morphological, biometrical, karyological, bacular and phallic aspects of Apodemus mystacinus populations in Turkey were studied based on 117 specimens. The biometrical and phallic comparisons confirmed the distinctness of A. m. mystacinus and A. m. epimelas. The UPGMA tree divided populations in Turkey into 2 groups. The distance (D) between A. m. mystacinus and A. m. euxinus was 0.469. A. mystacinus had karyotypic values of 2n = 48, NFa = 50, and NF = 52. Being different from A. m. epimelas, there was a short groove in the dorsal view of the phallus in populations of A. m. mystacinus in Turkey.

In the course of examining rumen contents obtained from 8 domestic goats (Capra hircus L.) from the south-east of Turkey, a new ciliate species Entodinium salmani n.sp. (Entodiniidae, Entodiniomorphida) and 4 formae [E. salmani salmani n.sp., n.f., E. salmani monospinosum n.sp., n.f., E. salmani bispinosum n.sp., n.f., E. salmani trispinosum n.sp., n.f.] were distinguished. The main characteristics of these species and formae are described in detail and compared with those of similar ones previously reported.

The Birds Of Dicle Dam (Diyarbakır), Recep Karakaş, Ahmet Kiliç

The birds of Dicle Dam, which is located 50 km north-east of Diyarbakır city centre, were studied between February 2000 and February 2002. During the observation period 116 bird species that belong to 15 orders and 38 families were determined and listed. Among these species defined, 44 of them certainly and 26 presumably breed in the area, while 46 of them are transitory migrating or wintering birds for the region. Three species are globally under threat. The determination of bird species will help in the evaluation and comparison of possible changes regarding the bird fauna in the future.

This study focused on the crustacean fauna of Cystoseira facies in the upper infralittoral zone of the Turkish Aegean coast. Investigations were carried out at 9 stations along a depth gradient of 2 to 5 m in June and July 1995. A total of 2179 specimens belonging to 81 species were identified. Among the species encountered, Ampithoe ramondi was the most common, with a dominance value of 11%, followed by Leptochelia savignyi (7%). This study aimed to contribute to the knowledge of Turkish Malacostraca fauna by determining the Malacostraca (Crustacea) fauna of Yuvarlak Stream. Monthly sampling was performed at 10 stations along the stream between May 2001 and April 2002. Eleven taxa were determined; of these, 5 (Gammarus balcanicus, Gammarus longipedis, Echinogammarus antalyae, Corophium orientale and Orchestia platensis) belong to Amphipoda, 3 (Palaemonetes antennarius, Atyaephyra desmarestii orientalis and Potamon potamios) to Decapoda, 2 (Lekanesphaera hookeri and Cyathura carinata) to Isopoda and 1 (Diamysis mesohalobia mesohalobia) to Mysidacea.

The present work was undertaken to study the histopathological changes in the intestine of male rat Nesokia indica. Histopathological sections of infected intestine were prepared by fixing small pieces of intestine in buffer formalin for 24 h. The fixed material was washed with 70% alcohol and dehydrated and cleared for paraffin block making by the usual procedure. Sections of 5 to 7 µ thickness were used for the present study. The cranial anatomy of plesiosaurs in the family Polycotylidae (Reptilia: Sauropterygia) has received renewed attention recently because various skull characters are thought to indicate plesiosauroid, rather than pliosauroid, affinities for this family. New data on the cranial anatomy of polycotylid plesiosaurs is presented, and is shown to compare closely to the structure of cryptocleidoid plesiosaurs. The morphology of known polycotylid taxa is reported and discussed, and a preliminary phylogenetic analysis is used to establish ingroup relationships of the Cryptocleidoidea.
