Excess phosphorus (P) in manure is a major environmental pollutant associated with poultry and swine production and is directly related to eutrophication, which results in the death of aquatic organisms and loss of biodiversity. Phytate accounts for 50–80% of plant phosphorus and this phytate-bound P is unavailable to simple-stomached animals. As a result, this P is not utilized by the animal and is therefore excreted. Phytases are enzymes that cleave inorganic phosphate from phytic acid, thereby improving its bioavailability to simple-stomached animals. Strategies intended to limit levels of P excretion in production animals have included dietary supplementation of phytase, as …

The effort to sequence the human genome, and subsequently to make the results publicly available, has created a new paradigm in the biological sciences. Now that we have access to the blueprint of our very structure and those of organisms from viruses to plants to animals, a mechanistic understanding of all the processes involved in our growth and metabolism is possible. Characterization of the genetic differences among us is underway, and should provide the information basis for a new approach to individual health. The challenge to the food industry will be to create product lines that will address individual dietary …

Analysis Of Platelet Activating Factor In The Gravid Reproductive Tracts Of Swine, William E. Plummer
Animal Science
Depressed hog prices in 1998 and 1999 were due to not enough shackle space (kill capacity) and not to a glut of slaughter swine. However, many swine producers were put out of business in California. In 2000, market prices rebounded due to increased shackle space and reduced numbers of slaughter swine available as a result of the sellouts of the previous two years. The economic roller coaster ride emphasized the need for maximizing profit while streamlining operations. Increasing numbers of pigs per litter, and thereby reducing the cost per pig produced, is one aspect of streamlining. A significant step in …

A standardized descriptive language for skim milk powder and dried dairy ingredients was developed. The lexicon was initially identified from a large sample set of dried dairy ingredients (138). A highly trained descriptive panel (n = 14) refined terms and identified references. Dried dairy ingredients (36) were then evaluated using the developed language. Twenty-one descriptors were identified for dried dairy ingredients. Seventeen flavors and tastes were identified in skim milk powders (27) with nine flavors/tastes observed in all skim milk powders. Dried dairy ingredients were differentiated using the language (P

Animal Science
This study evaluated the efficacy of marination for increasing consumer acceptability of beef. Top-sirloin steaks from 28 USDA select steers were randomly assigned to one of six marination treatments: control (CT), 150 mM calcium chloride (CA), 10% solution of beef-flavoring/seasoning mixture (FL), CA and FL (CF), 2.5% sodium phosphate and FL (PF), and tap water (TW). Steaks were marinated in vacuum pouches, aged for 7 days, cooked to 70°C and evaluated by a trained sensory panel. Marination with CA did not affect tenderness ratings, but increased (P

Modifications Of Phosphocaseinate Solutions Treated By Selective Adsorption, Nathalie Martin, Rafael Jiménez-Flores, Phillip S. Tong, Yves Pouliot, Michel Britten
Dairy Science
The treatment of phosphocaseinate by adsorption with diatomaceous earths has been studied. The results suggest that magnesium and calcium silicates have a specific affinity for milk proteins. As a result, the ratio of individual casein types in phosphocaseinate solution can be manipulated.
