As consumers have become increasingly interested in where their food comes from and how it is grown, the cattle and beef industry is without exception. Many consumers are beginning to question traditional animal husbandry practices and on-farm animal welfare protocol. It is essential that the food system meets new demands and understands consumer views. This project was initially created for use at Fort Hope in Arroyo Grande, California. It designs lesson plans created to teach children about the beef cattle industry. The project consists of lesson plans for three age groups: 7-9, 10-12, and 13-15. Each age group will learn various aspects about beef cattle, and lessons will increase in complexity as the children advance age groups. The groups will spend six days in lecture completing worksheets and activities, and on the seventh day, after completion of a review game, the children receive certificates. This paper aimed to achieve two different objectives. The first objective of this study was to identify and explain the genetic gain achieved in commercial beef cattle operations with the use of genomic predictions versus the use of visual appraisal and EPDs. The second goal of this paper was to develop a method to easily explain genomic predictions and their practical applications on commercial beef operations to a lay audience, specifically to ranchers. The effect of feeding Zilpaterol hydrochloride (ZH) with a 3 or 10 d withdrawal (WD) period to calf-fed Holstein steers (N=2993) on carcass characteristics and tenderness were evaluated in a feed lot experiment. Cattle were fed 0 or 8.3 mg/kg of ZH for the final 20 d of the feeding period, each treatment level was assigned a WD period of either 3 or 10 d. Treatment groups consisted of Control 3 d WD (C3) and 10 d WD (C10), and ZH fed 3 day WD (Z3) and 10 d WD (Z10). Cattle were slaughtered at a commercial facility, carcasses chilled …
