BACKGROUND: High ultra-processed food consumption is associated with higher risk of CKD. However, there is no biomarker for ultra-processed food, and the mechanism through which ultra-processed food is associated with CKD is not clear. Metabolomics can provide objective biomarkers of ultra-processed food and provide important insights into the mechanisms by which ultra-processed food is associated with risk of incident CKD. Our objective was to identify serum metabolites associated with ultra-processed food consumption and investigate whether ultra-processed food-associated metabolites are prospectively associated with incident CKD.

In Minahasa, North Sulawesi, the people in the villages of Minahasa has an annual harvest-related celebration called Pengucapan Syukur or Thanksgiving celebration of the people of Minahasa. According to a research in South Minahasa, this Christian celebration that has been practiced at least since 1940 has gone through changes along the way. This tradition has developed as such in line with the dynamics of the Minahasans. BACKGROUND: Food prescription programs are gaining interest from funders, policy makers, and healthcare payers as a way to provide value-based care. A small body of research suggests that such programs effectively impact health outcomes; however, the quality of existing studies is variable, and most studies use small samples. This study attempts to address these gaps by utilizing a quasi-experimental design with non-equivalent controls, to evaluate clinical outcomes among participants enrolled in a food prescription program implemented at scale.

OBJECTIVES: Preterm infants are born functionally pancreatic insufficient with decreased pancreatic production of lipase and proteases. Developmental pancreatic insufficiency (PI) may contribute to reduced nutrient absorption and growth failure. We sought to determine longitudinal fecal elastase (ELA1) levels in a cohort of preterm infants and whether levels are associated with growth outcomes.
METHODS: Prospective observational study of 30 infants 24-34 weeks gestational age and birth weight ≤1250 g fed the exclusive human milk diet, consisting of human milk with human milk-based fortifier. ELA1 was quantified by ELISA during the first 2 weeks of life [Early; 7.5 ± 1.8 days of …

The current food system is directly responsible for much environmental damage including severe climate change, biodiversity loss, and land scarcity. This research aims to find some strategies to mitigate these damages through diet by specifically targeting adolescents because they are potential problem-solvers. This period is also when personality and habits are articulated. By focusing on reducing greenhouse gas emissions, land use, and food waste, a more environmentally sustainable diet can be formulated. Blockchain In The Food Industry: Integrating Machine Learning In A Systematic Literature Review, Juan M. Gómez, Omar H. Fares, Myuri Mohan, Seung Hwan Lee

This study provides a systematic literature review of blockchain technology in the food industry with a supply chain lens. We identify primary and sub-themes, discuss implications and applications in terms of delivering value and propose literature-informed future research directions. This review uncovered three primary themes: a) Value Creation; b) Supply Chain Digitization; and c) Transformation. It demonstrates that digitalizing food networks with blockchain technology may benefit from increased stakeholder involvement and data visibility to gain competitive advantage. Beyond the theoretical contributions, this research provides a methodological contribution by demonstrating the uses of machine learning techniques to perform systematic literature reviews.

In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is now expected to allow participants to redeem their food benefits online, i.e., via online ordering, rather than only in-store. However, it is unclear how this new benefit redemption model may impact participants’ welfare since vendors may have an asymmetric information advantage compared with WIC customers. The WIC online ordering environment may also change the landscape for WIC vendors, which will eventually affect WIC participants. Dietary patterns are inherently related to greenhouse (GHG) emissions via agricultural practices and food production systems. As the global population is predicted to increase from 8 billion (current) to 9.6 billion by 2050 added pressure will be placed on existing agricultural systems, resulting in increased GHG emissions thus exacerbating climate change. Therefore, there is an urgent need to understand present-day dietary patterns to shift to sustainable and healthy diets to mitigate GHG emissions and meet future climate targets. Rising rates of prevalence pose grave risks to population health and underscore the need for a greater understanding of the underlying mechanisms that contribute to increased eating and weight gain. In this paper I describe two distinctions about what “eating animals” entails which are often confused in conversations or arguments aimed against meat-based diets and try to show how both distinctions, on their own lights, ultimately support a concern for all fellow creatures, regardless of species or other biological categories. Precision nutrition is an emerging concept that aims to develop nutrition recommendations tailored to different people's circumstances and biological characteristics. Responses to dietary change and the resulting health outcomes from consuming different diets may vary significantly between people based on interactions between their genetic backgrounds, physiology, microbiome, underlying health status, behaviors, social influences, and environmental exposures. On 11-12 January 2021, the National Institutes of Health convened a workshop entitled "Precision Nutrition: Research Gaps and Opportunities" to bring together experts to discuss the issues involved in better understanding and addressing precision nutrition. Background: Limited literature is available on the dietary pattern and its consequences on health of women living in coastal slums of Karachi, Pakistan.
Material and methods: The study employed a mixed-method approach where concurrent quantitative and qualitative assessments were carried out. An analytical cross-sectional survey was conducted to collect information on demographic, household, obstetrics characteristics, and dietary pattern of married women of reproductive age (MWRA). Blood samples were collected to identify the hemoglobin level to determine anemia. In the context of the rapid nutrition transition experienced by middle-income countries of the Arab region, children and adolescent’s food choices and dietary behaviors are early risk factors for the development of non-communicable diseases. This dissertation is an interpretive project that uses autoethnography and qualitative interview methods to understand the role Inflammatory Bowel Disease (IBD) plays in women’s quality of life and interpersonal relationships. It focuses on the impacts on patients of dietary changes and how food choice serves to make this ordinarily “invisible” illness visible to others, leading to unwanted exposure. Using Erving Goffman’s stigma theory and its extensions in studies of chronic illness, I demonstrate that IBD is characterized by layers of stigma because it creates situations in which patients are forced to disclose their illness even if they are not ready …

Problem: Over 1/3 of children in the United States are overweight or obese and children’s nutritional status while hospitalized worsens rather than improves. Hospital meals have too many calories, too much sugar, and too few nutrients compared to recommended guidelines for children. The primary purpose of this quality improvement project is to increase the amount of healthy foods ordered by children in a southeastern pediatric hospital unit through implementation of a menu guide.

This dissertation examines Syria during the French Mandate using food as a primary unit of analysis. The exploration of food pushes this project beyond the boundaries of political and diplomatic histories of Syria during the French Mandate, bringing forward the hidden voices of the nonelite. Nonelites are often not visible in archives, but their absence in most written sources permits us to ascertain their experiences in studying the materials that comprised their everyday lives. The sources consulted for this work include memoirs, print media, and state archives, to name a few.

Contemporary food access literature in the social sciences centers on models of food decisions emphasizing income, prices, distance, and time. To challenge this analysis, this research conducts interviews with six residents of Oxford, Mississippi, focused on their food habits. These interviews have been summarized, and motivating factors have been extracted and compared back to the literature’s findings. The motivating factors found through the interviews include perceived differences in food quality, store opening/closing hours, partner/family preferences, family/cultural influences, and perceived risks from the COVID-19 pandemic. The goal of this research is to determine the frequency of food insecurity among college students at a four-year college institution during COVID-19 pandemic in association to mental and physical health status.
Methods: This study was conducted among college students using cross-sectional study method. All data were collection virtually and kept anonymous. All statistical analyses were conducted using SPSS version 28 with (p<.05), denoting significance.
