BACKGROUND: Most neighborhood food and activity related environment research in children has been cross-sectional. A better understanding of prospective associations between these neighborhood environment factors and children's weight status can provide stronger evidence for informing interventions and policy. This study examined associations of baseline and changes in neighborhood healthy food access and walkability with changes in children's weight status over 5 years.
METHODS: Height, weight, and home address were obtained for 4,493 children (> 75% were Black or Latinx) from primary care visits within a large pediatric health system. Eligible participants were those who had measures collected during two time …

Background: Accurate estimation of dietary intake is challenging. However, whilst some progress has been made in high-income countries, low- and middle-income countries (LMICs) remain behind, contributing to critical nutritional data gaps. This study aimed to validate an objective, passive image-based dietary intake assessment method against weighed food records in London, UK, for onward deployment to LMICs.

OBJECTIVE: This paper assesses trends in food environment and market concentration and racial and ethnic inequities in food environment exposure and food retail market concentration at the US census tract level from 2000 to 2019.
DESIGN: Establishment-level data from the National Establishment Time Series were used to measure food environment exposure and food retail market concentration. We linked that dataset to race, ethnicity and social vulnerability information from the American Community Survey and the Agency for Toxic Substances and Disease Registry. Methods of hydrolysis of grains to starch under the influence of hydrodynamic and enzymatic processes are logically based. Polysaccharides derived from starchy grains are known and popular in the food industry for their thickening and stabilizing properties. To date, studies that allow for a deeper understanding of the mechanism of interaction of polysaccharide-containing products with their main components, the effect on the set of rheological, organoleptic, physico-chemical properties of food products that determine their functions are relevant.

BACKGROUND: School-based gardening and nutrition education interventions report improvements in dietary intake, notably through fruit and vegetables. However, gardening, cooking, and nutrition randomized controlled trials are limited in evaluating dietary quality, and none have examined processed food consumption to date.
OBJECTIVES: The study examined the effects of Texas Sprouts (TX Sprouts), a gardening, cooking, and nutrition education intervention, compared with control on unprocessed and ultra-processed food (UPF) consumption in predominately low-income Hispanic children.

INTRODUCTION: Limited access to healthy food in areas that are predominantly food deserts or food swamps may be associated with obesity. Other unhealthy behaviors may also be associated with obesity and poor food environments.
METHODS: We calculated Modified Retail Food Environment Index (mRFEI) to assess food retailers. Using data collected from the Behavioral Risk Factor Surveillance System (BRFSS) survey, the NJ Department of Health (NJDOH), and the US Census Bureau, we conducted a cross-sectional analysis of the interaction of obesity with the food environment and assessed smoking, leisure-time physical activity (LPA), and poor sleep.

Alternaria mycotoxins are the secondary metabolites of Alternaria species, which have obvious toxicity (mutagenicity, teratogenicity and carcinogenicity, etc) to humans and animals. Alternariol (AOH), alternariol monomethyl ether (AME), alternuene (ALT), tenuazonic acid (TeA) and tenoxin (TEN) are the most studied at present. Alternaria mycotoxins was reported in apples, orange, tomatoes, corns and other agricultural products. Background and aims: Polyphenol-rich foods have beneficial properties that may lower cardiometabolic risk. We aimed to prospectively investigate the relationship between intakes of dietary polyphenols, and metabolic syndrome (MetS) and its components, in 676 Danish residents from the MAX study, a subcohort of the Danish Diet, Cancer and Health–Next Generations (DCH-NG) cohort. Methods and results: Dietary data were collected using web-based 24-h dietary recalls over one year (at baseline, and at 6 and 12 months). BACKGROUND: Lack of access to adequate, safe, and nutritious food is a major concern for the Afghan population due to ongoing war and humanitarian crises. Recently resettled Afghan refugees in the US continue to face challenges securing adequate, nutritious food resources in new environments. This study examined Afghan refugees' food access and insecurity in the San Joaquin Valley, California.
METHODS: Semi-structured, in-depth interviews were conducted to collect the perspectives and experiences of key informants and newly arrived Afghan refugees.

Food literacy is the interrelated knowledge, skills and behaviors needed to plan and manage, select, prepare, and eat healthy food. It is positively associated with improved consumption of nutritious diets, and can be beneficial to limited-resource adults, who are often at risk for chronic diet-related diseases. Valid instruments for measuring food literacy in this population are scarce but urgently needed. The Eating and Food Literacy Behavior Questionnaire (EFLBQ) can be used to measure food literacy among limited-resource audiences.

The symbiotic harboring of gut microorganisms within the gastrointestinal tract has a profound influence on host physiology, well-being, and disease pathology. More specifically, the gut bacteria are able to interact with dietary components from foods chosen by the host and consequently relay their beneficial or precarious effects locally and systemically. The gut bacteria have the capacity to maintain a healthy gut microbiome or perpetuate intestinal imbalance, known as gut dysbiosis. In a food blog-style post, I reflect on my own connection to black cake – a liquor soaked fruit cake born from the enslavement of African people in the Caribbean – while examining the cultural and food rhetorics around this delicacy to understand how the tragic meaning of black cake has evolved into a joyous one: for eating and sharing with family during the holiday season. The enclosure of land and food production technology that began during Western colonization in what is now called Lewiston was part of a larger global movement towards the commodification of food through Western notions of capital and private ownership. The contention of this paper is that this historical context has produced our current food crisis: a paradox where, despite production of more than enough food to feed the world’s population, hundreds of millions of people do not have access to adequate food. Food is a universal human necessity, yet food often serves more than a biological purpose as it informs individual and communal identities, and even facilitates memory. This thesis explores personal memory, the development of identity, and an almost reverential connection to nature in several food poems by Li-Young Lee in Rose (1986) and Behind My Eyes (2008). Born in 1957, Lee has been writing poetry since he was young, studying under Gerald Stern in the late 1970s, and he is known for writing sublime, transcendent yet incredibly accessible and expressive poetry. This research assessed the effects of manipulating choice of edible items by increasing choice of nutrient-dense items and restricting choice of calorie-dense items on skill acquisition. A preference assessment was utilized to identify the top three preferred nutrient-dense and calorie-dense food items. Participants were then exposed to four different conditions in which their preferred edible items were delivered as reinforcers following skill acquisition targets to compare skill acquisition rates between the following reinforcers: nutrient-dense food items with choice, nutrient-dense food items without choice, and calorie-dense food items without choice. Neurocomputational Mechanisms Of Food And Physical Activity Decision-Making In Male Adolescents., Seung-Lark Lim, Amanda S. Bruce, Robin P. Shook

We examined the neurocomputational mechanisms in which male adolescents make food and physical activity decisions and how those processes are influenced by body weight and physical activity levels. After physical activity and dietary assessments, thirty-eight males ages 14-18 completed the behavioral rating and fMRI decision tasks for food and physical activity items. The food and physical activity self-control decisions were significantly correlated with each other. In both, taste- or enjoyment-oriented processes were negatively associated with successful self-control decisions, while health-oriented processes were positively associated. Commensality (the act of eating together) has been shown to increase psychosocial wellbeing. As culture differs, so do the ways commensality occurs. This thesis uses established literature to compare the commensality between two countries, the United States and Italy, and conclude how those behaviors impact psychosocial wellbeing. After exploration and drawing connections, the hope is that this thesis encourages a call for change on the way we view eating and how we can gather more often to improve overall psychosocial wellbeing.

Given the life-long impact of diabetes(1-5), it is important to engage in behaviors that promote health and wellness to delay or prevent negative health outcomes(3, 6-10). Despite this, youth and young adults with diabetes generally do not adhere to nutritional(11-17) or physical activity(18, 19) recommendations. In households experiencing financial difficulties, especially those who are having difficulty providing sufficient food to all of its members, adhering to recommendations may be even more difficult.
