Concerns about unsafe food influence food choice, and consumption of unsafe foods increases morbidity and mortality, particularly in low- and middle-income countries. Actions to ensure safety of food are dominated by mitigation of biological and chemical hazards through supply-side risk management, disregarding individuals’ experiences and perspectives of food safety. We aimed to identify and categorize perspectives about food safety in five countries. Five Drivers of Food Choice projects provided transcripts from 17 focus groups discussions and 303 interviews in Kenya, Ghana, India, Guinea, and Vietnam. INTRODUCTION: Nutrition incentive programs provide low-income populations with a monetary resource to make healthy foods affordable and accessible. This study aimed to use geospatial analysis to evaluate availability of the Link Match nutrition incentive program in Chicago, Illinois, to determine whether underresourced communities have access.

METHODS: We obtained 2018 spatial data on census tract-level sociodemographic characteristics in Chicago. Fifty-seven retailers (eg, farmers markets, food cooperatives) offered Link Match across the city's 801 census tracts. We examined ordinary least squares and spatial lag regression models to identify census tract-level variables associated with distance (in miles) from the nearest Link Match retailer. …

This project contributes to the growing field of feminist food studies by examining Victorian women’s relationships to food. I argue that beginning at a young age Victorian middle-class girls and women had to learn to regulate their appetites and eating as a way of performing “proper” Victorian femininity. Chapter one explains why the Victorian period, the middle-class, and women are apt subjects for a feminist food studies exploration of literature and culture. Stress results in many people altering their eating patterns, often consuming food high in sugar and fat. Such behavior is a factor in the growing obesity epidemic and can potentially cause the development of chronic diseases, resulting in employment problems and billions of extra dollars spent on national health care programs. Irritable bowel syndrome (IBS) is a functional bowel disorder with 6.5% worldwide prevalence that causes gas production, abdominal distension, and abdominal pain or discomfort. This systematic review describes efficacy of the Low-Fermentable Oligosaccharides, Disaccharides, Monosaccharides And Polyols (FODMAP) diet (Low-FODMAP diet or LFD) to alleviate IBS symptoms using the PRISMA guidelines. Nine randomized controlled trials (RCT) and one non-RCT consecutive controlled study published between 2015 to 2019 were identified using PubMed and CENTRAL. Included studies involved adult IBS participants with symptoms of abdominal pain, constipation, and/or diarrhea. This study examined socio-economic differences in diverse food consumption among children 6–23 months of age in South Asia and Southeast Asian countries.
SUBJECTS/METHODS
Data from Demographic and Health Surveys in four countries in South Asia (n = 15,749) and four countries in Southeast Asia (n = 10,789) were used. Survey-design adjusted proportions were estimated for the following 10 food items: grains, legumes, dark green leafy vegetables (DGLV), vitamin A-rich fruits, vitamin A-rich vegetables, other fruits and vegetables (OFV), fish, meat, dairy, and eggs. In this study, we examined the ability of nisin A and a rationally assembled bank of 36 nisin derivative producing Lactococcus lactis strains to inhibit Listeria. A broth-based bioluminescence assay for screening single and combinations of bioengineered nisin derivatives using cell-free supernatants (CFS) from nisin derivative producing strains was developed. In this way, we screened 630 combinations of nisin derivative producing strains, identifying two (CFS from M17Q + N20P and M17Q + S29E) which exhibited enhanced anti-listerial activity when used together compared to when used alone, or to the nisin A producing strain. Don’t Get Me Started About the Water analyzes the food in the dinner of Juvenal’s fifth satire from the perspective of Roman foodways in the first and second centuries. This analysis provides a surprising conclusion: although the guest and host are served dishes differing vastly in quality, neither man gets a nutritious meal. This follows with arguments elsewhere in the Satires, namely that Rome itself kills its occupants and the best course of action is to abandon the city for the countryside.

This study surveyed consumers in Fayetteville, Arkansas to assess their perceptions of plastic-free food packaging. Due to the COVID-19 pandemic, surveys were administered via email to Dale Bumpers College of Agricultural, Food and Life Sciences undergraduate students and faculty at the University of Arkansas. Eleven questions were asked in the survey. Numerical values were assigned to each answer option in order to interpret the results. The food–energy–water (FEW) nexus describes interactions among domains that yield gains or trade-offs when analysed together rather than independently. In a project about renewable energy in rural Alaska communities, we applied this concept to examine the implications for sustainability and resilience. The FEW nexus provided a useful framework for identifying the cross-domain benefits of renewable energy, including gains in FEW security. However, other factors such as transportation and governance also play a major role in determining FEW security outcomes in rural Alaska. “We’Re Sinking And We’Re Sinking Quick”: Family And Feeding Work During The Covid-19 Pandemic For Single, White, Middle-Class Mothers, Debora Garrison

This study examines the work of single, white, middle-class women feeding and caring for their families during the COVID-19 pandemic in the year 2020. The study draws from qualitative analyses of one-on-one interviews conducted with seven single mothers. After situating single mothers and family food provision in the academic literature, as well as and current knowledge about the pandemic in the U.S., the author explores ways that the pandemic disrupted family life. Findings indicated that the single mothers were keenly impacted by being cut off from child care, schools, and other social connections they needed to maintain employment. Further, their …
