Intervention projects in the developing world normally aim to satisfy either the nutritional needs of a group, or advancing the economic stability, but not both. One of the many issues that may arise by narrowly focusing and creating an aid program is that although a group may be fed, they are not equipped to mitigate risks that will arise after project completion and thus continue or revert back to a malnourished state. A bridge is required to join the economic and nutritional programs to create aid interventions that are sustainable past the point of donor separation.

Small burnet is a relatively unknown plant that is commonly used in North America. It is a hardy, relatively long lived forb native to Eurasia that grows well in most of North America. It is considered to be excellent forage for livestock and wildlife and because of its evergreen nature there is interest in its use to extend grazing of pastures and rangelands into late fall and winter.

The effect of commercial shortenings (butter, lard, margarine, all-purpose shortenings, soybean oil, and interesterified soybean oil) on the physical and sensory characteristics of baked products was evaluated. Results showed that lipid viscoelastic character, melting point, onset melting temperature (Ton), and melting enthalpy (ΔH) affect the physical qualities of baked products, such as batter density of cake, spread of cookies, and breaking strength of pie crust. With a larger 𝛿 value (less plastic character), less crystal structure is present in the lipid and fewer air bubbles were incorporated into cake batter, which results in a denser batter. With a …

Invasion of natural communities by introduced plants is considered one of the biggest threats to biodiversity. Weeds in rangelands cause an estimated loss of $2 billion per year in the United States. These costs include losses in forage quality and yield, grazing interference, animal poisoning, lowering land values, depleting soil water and resources available to native plants, increasing costs of managing livestock, and impacts on wildlife habitat and forage. The purpose of lactation is for nutrient provision and also importantly for protection from various environmental stressors. Milk polar lipids reduce cholesterol, protect against bacterial infection, reduce inflammation and help maintain gut integrity. Dynamic interactions within dietary fat, lipid metabolism, gut permeability and inflammatory cytokines remain unclear in the context of obesity and systemic inflammation. A rat model and three mouse models were developed to test the hypotheses that dietary milk polar lipids may affect lipid metabolism and intestinal integrity and may protect against systemic inflammation in the context of stressful diet, systemic inflammation, and obesity.

Our forests provide us with a variety of services from clean water, forest products and wildlife habitat to the lesser known functions of nutrient cycling and carbon
sequestration. This research helps to demonstrate the extent of some of these services in a heavily disturbed southern Appalachian spruce-fir forest within Great Smoky Mountain National Park, the most heavily visited National Park in the United States. Following a catastrophic infestation of the non-native balsam wooly adelgid, the future of this forest was unknown, causing some to speculate about the future of this sensitive forest type. A major class of synthetic emulsifiers used in food is sucrose esters. However, the use of lactose esters in foods is not very well known. Lactose monolaurate was characterized in our laboratory with respect to its antimicrobial, emulsification and fat crystallization modifier properties. The benefits of this study were multifold. A single compound was explored for multiple functionalities. Enzymatic synthesis and characterization of lactose monolaurate was carried out in the laboratory using food grade solvents. This process utilized lactose, a major byproduct of the dairy industry which is cheaper than sucrose.

Research has found that attachment relationships between parents and children are formed independent of each other and have different outcomes for the child. Very little research regarding parent-child attachment relationships has been done with children who have a disability. This study aimed to learn more about whether differences exist in attachment relationships between mothers and fathers and whether or not the child has a disability. Results indicate that fathers of children with a disability appear to have less secure attachments with their children compared to fathers of typically developing children as well as mothers of children with and without disabilities. …

The purpose of this study was to explore the influences that promoted and restricted three women early childhood educators' inclusion of open-ended outdoor learning in a Head Start center. With the recorded history of human's impact on nature, along with the majority of women in the early childhood workforce, I chose a theory, ecofeminism, that looked at both the domination of women and nature in the early childhood setting.

Nationwide, mathematical scores have been a topic of concern among elementary and secondary educators for many years. Teaching contextualized math has been found to be effective and includes providing a direct application to real-life scenarios rather than teaching linear equations and algebraic principles outside of their application.

Diet-Induced Obesity Decreases Liver Iron Stores In Mice Fed Iron Deficient, Adequate, Or Excessive Diets, Brett J. Healy

Epidemiological and observational evidence suggests that obesity is related to poor Fe status. To determine interactions between obesity, dietary Fe intake and Fe status; male, weanling C57BL/6J mice were fed either high fat diets to induce obesity or a standard diet for 16 weeks. Fe concentrations of both the high fat or control diet (4.5 vs 3.8 kcal/g) were set at: 5, 50 or 500 mg Fe/kg diet. Mice fed the high fat diets had significantly higher percentage body fat (17.9%) compared to mice fed control diets (5.3%, P<0.001). Among obese mice, dietary Fe levels did not significantly influence body composition. Conversely among lean mice, mice fed the iron excessive diet had significantly less fat mass when compared to mice fed the iron deficient diet (P<0.05). Obesity and/or dietary Fe concentration did not significantly affect plasma Fe levels. ANOVA analysis showed significant effects of diet-induced obesity, dietary Fe and an interaction between both factors on liver Fe levels (P< 0.05). Obese mice had significantly lowered liver Fe levels compared to lean cohorts fed the same amount of dietary Fe (P<0.05 for all comparisons). Moreover, lean mice fed the Fe deficient diet (5 mg Fe/kg diet) had similar liver Fe levels (127 mg Fe/kg ± 0.04) compared to obese mice fed the 50 mg Fe/kg diet (132 mg Fe/kg ± 0.05). These data suggest that obesity, independent of dietary Fe intake, influences liver Fe stores.

Microalgae are single celled plants that inhabit aquatic and terrestrial environments across the planet. Many species are oleaginous, which means they are capable of producing oils, similar to many higher plants we are familiar with like canola, safflower and coconut. Different from higher plants, however, algae have simple structures that allow them to grow at very high rates. Due to these characteristics—oil production and rapid growth rates—algae are considered a promising future source of oil. Algal oils could be useful for production of food for people, feed for animals, biodiesel, detergents, and many other applications.

This study examined the psychological and physiological effects of adding animal-assisted therapy to a modified mindfulness-based stress reduction program (MBSR) for clients experiencing psychological distress, including anxious and depressive symptoms. State and trait mindfulness, state and trait anxiety, psychological distress, blood pressure, and heart rate were collected during each session of the intervention from college students recruited at Utah State University. Results support that participants experienced less anxiety and depressive symptoms and increased mindfulness skills from pre- to posttreatment. The people of the Islands of Fiji suffer from a growing prevalence of noncommunicable (NCD) diseases that are often nutrition related. Much of the blame for the growing rate of these diseases is due to lifestyle choice, specifically food-related decisions. Fiji’s nutrition concerns and NCD prevalence are greater in urban centers, compared to a lower frequency in rural villages. Contrasting demographics are composed of dissimilar food environments that influence inhabitants’ food decisions, in turn increasing the prevalence of nutrition-related concerns.

A 2-year grazing study was conducted to evaluate the growth performance, ruminal fermentation, carcass characteristics, and fatty acid compositions in subcutaneous adipose tissue of beef steers grazing tall fescue (Festuca arundinacea Shreb.; TF) pastures without or with N fertilization. Nitrogen fertilization increased crude protein concentration of TF pasture and average daily gain of beef steers. Increase in total volatile fatty acids (VFA) and ammonia-N (NH3-N) concentrations were detected in steers grazing fertilized TF. Kisspeptins are hormones involved in the onset of puberty in adolescents and maintenance of reproductive function in adults. Defects in kisspeptin signaling are associated with many reproductive disorders. Kisspeptins were originally discovered as metastasis suppressors and have been found to suppress the metastasis of certain cancers. Unfortunately, many aspects of kisspeptin action at a cellular level remain unknown. Kisspeptins, therefore, are attractive candidates for large-scale production for use as research and therapeutic reagents. A record high number of students enrolled in The Science and Application of Human Nutrition (NDFS 1020), during the Spring semester of 2010. With enrollment rates projected to continue to rise, NDFS 1020 faculty recognized that the existing traditional, lecture-based course structure did not allow for further growth of the program if academic integrity was to be upheld. NDFS 1020 was, consequently, transitioned to a hybrid format presenting 2/3 of the course experience online, and the remaining 1/3 in a face-to-face format. In two lactation studies reported in this dissertation, it was hypothesized that feeding 35% brown midrib corn silage (BMRCS) and 25% alfalfa hay (dry matter basis) would result in increased dry matter intake (DMI) around peak lactation compared with feeding conventional corn silage (CCS), causing longer peak milk production, and that feeding dairy cows in early lactation a 16% crude protein diet with fair quality alfalfa hay (FAH) in BMR-based diets would maintain milk production, reduce urinary N excretion, and improve N efficiency compared to those fed high quality alfalfa hay ( …

Microalgae are the preferred crop for the production of biodiesel. Microalgae are microplants that have the ability to harness sunlight more efficiently than other plants and store 20-80% lipids per g of dry algae in their cells. Microalgae have the extraordinary ability to grow in brackish water or wastewater. Microalgae can be grown in municipal wastewater to uptake phosphorus and nitrogen and remediate the wastewater of these nutrients. Microalgae thus cultivated accomplishes a dual role of wastewater treatment and provides a sustainable feedstock for biofuels and other bioproducts.

Observed reductions in animal and bird populations associated with sagebrush, invasion of exotic annual grasses such as cheatgrass (Bromus tectorum), and other concerns with climate change have led to a growing awareness of the need to monitor and better understand the rate of habitat loss. The Computer Science Assistive Technology Laboratory (CSATL) at Utah State University has a long history of research in visually impaired grocery shopping tech. CSATL’s ShopMobile II introduced nutrition facts table (NFT) analysis but only with perfectly aligned and square input images.
A new method which detects and localizes NFTs more quickly and from rotated or non-square images has been released and is slated for integration with ShopMobile II to improve this feature substantially. Valles Caldera National Preserve (VCNP) managers were concerned about low elk recruitment observed at the same time as an apparent increase in sightings of coyotes and observations of coyote predation on elk calves. The goal of this study was to describe coyotes’ ecological interactions with elk, particularly coyote diet and movements on the Valle Grande, a large grassland meadow in the southeastern portion of the VCNP.

Assessing FV intake among young children is difficult and can be a time-consuming, resource-intensive, and burdensome. The aim of this study was to create a simple, self-assessment tool to estimate and detect changes in FV consumption among fourth and fifth graders. Such a tool would ease the complications and resources of other diet assessment options that are used to measure FV consumption when implementing school-based nutrition programs.

I designed a suite of studies in coordination with Utah Division of Wildlife Resources (UDWR) to evaluate waterfowl use of the GSL in winter and ecological aspects associated with GSL use. These studies provided insight into key information gaps previously identified by UDWR regarding management of GSL resources. Population surveys indicated total duck abundance was low when GSL surface elevations were low and wetland resources diminished because of persistent drought in the system. Livestock production systems have emphasized low diversity of high-producing forage species dependent upon costly fossil-fuel inputs. However, diversity of plants in natural systems is common, and diverse plant communities enable herbivores to meet needs for nutrition and health. Plants provide herbivores with nutrients and bioactive compounds – plant secondary compounds (SCs), which at appropriate concentrations can reduce internal parasites and greenhouse gas emissions, improve nutrient utilization and enhance meat quality in ruminants. In addition, SCs confer plants more resistance to environmental challenges such as drought or pests.
