Volunteerism is an important component in the 4-H program. It was initially used as a method to help agents reach the many youth interested in participating in 4-H. Community service has since become a required component for every club project. Research shows that volunteering can impact youth in many different ways. Other research shows that 4-H youth are more likely to contribute or do some type of community service.

In Jack London: Landscape, Love, and Place, American Studies theories and methods formed the prime basis for analysis of London's biography, historical context, and literary significance. Particularly, the ideas of agrarianism, the Turner Thesis moment, Western literature, American masculinity, Victorian ideals, and sustainable farm practices in America were used to understand London's motivations for writing and creating his farm, his influence on American literature, and his texts' abilities to open avenues between literature and place-based education. Key concepts that influenced how London's works could be incorporated into and applied to didactic theory included David Sobel's seminal works in place-based education. …

The purpose of this public abstract is to present research objectives, societal benefits, and costs associated with this dissertation. This dissertation is one the outcomes of a three-year $155,450.86 project whose number is UTA01008. Kynda Curtis, Associate Professor, Department of Applied Economics proposed the project to assess consumer demand and purchase motivations for differentiated produce across direct marketing outlets. In general, this dissertation seeks to analyze consumer primary motivations for attending farmers’ markets, their preferences, and their willingness to pay for differentiated fresh produce. Ultrasound has been used effectively to assess body fat for nearly 5 decades, yet this method is not known as well as many other body composition techniques. The purpose of this review is to explain the technical principles of the ultrasound method, explain the procedures for taking a measurement and interpreting the results, evaluate the reliability and validity of this method for measuring subcutaneous and visceral adipose tissue, highlight the advantages and limitations of ultrasound relative to other body composition methods, consider its utility to clinical populations, and introduce new body composition-specific ultrasound technology. Understanding and predicting the effects of deer (Cervidae) on forest ecosystems present significant challenges in ecosystem ecology. Deer herbivory can cause large changes in the biomass and species composition of forest understory plant communities, including early life-cycle trees (i.e., seedlings and saplings). Such changes can impact juvenile to adult transitions and the future age structure and species composition of mature forests. Changes to understory vegetation also impact flow of energy and nutrients in forest ecosystems. Studies examining the influence of deer on mature trees, however, are rare and rely on extrapolating effects from early life cycle stages of trees. We …

Disclosure of HIV status is an important topic for youth living with HIV/AIDS, yet theoretical frameworks for understanding HIV disclosure motivations have been poorly applied. Self-determination theory (SDT) proposes that people are at optimal functioning when they are engaging in activities that are interesting and enlivening. This study utilized SDT to understand young adults’ motivations to disclose their HIV status. Interviews and observations were conducted with nine youth aged 17–19 and two adult staff. Results indicate that SDT is useful for understanding types of motivation (i.e., amotivation, controlled, and autonomous motivation) to disclose. Amotivation was the most common type of …

Effect Of Lactose Monolaurate And High Intensity Ultrasound On Crystallization Behavior Of Anydrous Milk Fat, Ashwini Wagh, M. K. Walsh, Silvana Martini

Crystallization behavior of anhydrous milk fat (AMF) was studied with the addition of 0.025 and 0.05 % lactose monolaurate (LML). The crystallization behavior was studied at low (ΔT = 3 °C) and high supercooling (ΔT = 6 °C). Polarized light microscopy and laser turbidimetry indicated a delay in crystallization on addition of 0.025 % and 0.05 % LML or Tween 20 to AMF. High intensity ultrasound (HIU) was applied to AMF samples with 0.05 % LML and lower supercooling (T c = 31 °C; ΔT = 3 °C). HIU application in AMF and AMF + 0.05 % LML induced crystallization …

The aim of this study is to investigate the physical properties of aqueous solutions of pectin (PA) containing sunflower wax (SFW), which are used as a basis for producing edible films. The stability and the rheological and microstructural characteristics of SFW/PA mixtures were evaluated. SFW/PA mixtures formed oil-in-water emulsions that were milky and opaque in appearance and were stable towards phase separation. Polarized micrographs revealed the presence of wax crystals, whose size decreased as pectin concentration increased. The rheological behavior of the aqueous solutions of pectin containing different amounts of SFW were best described by the generalized power law model …

Three batches of processed cheese (PC) were manufactured by the standard procedure and packed aseptically in polystyrene (Sunpet) pet jars with screw cap of about 200 g capacity and stored at 5, 30 and, 45°C. The PC samples were analysed for proximate composition, selected physico-chemical characteristics and sensory attributes at intervals of 7 days for the product stored at 5°C upto 56 days, 3 days for the product stored at 30°C upto 6 days and 24 days at 45°C till the sample became organoleptically unacceptable. Deer/human conflicts have increased due to growing deer populations, limited resources and suburban development in deer habitat. In winter, deer often browse in residential landscapes. This can be reduced by selecting unpalatable plants, protecting woody plants with burlap or trunk protectors, and using deer repellent. In extreme cases, deer can be completely excluded with a fence.

Wild mammalian herbivores and cattle are fundamental drivers of African savanna ecosystems and have strong impacts on woody vegetation. However, few experimental studies have investigated the separate and combined influences of different large herbivores on spatial vegetation patterning. In East Africa, temporary cattle corrals (bomas) develop after abandonment into productive, treeless 'glades' that attract both domestic and wild herbivores. Edges of glades exhibit unusually high densities of large trees. We used a long-term, broad-scale manipulative experiment to test whether megaherbivores (elephants and giraffes), wild meso-herbivores (15–1000kg), or cattle caused shifts in woody plant abundances in glate edges. The objective of this study is to evaluate remote sensing as a tool for measuring wheat nitrogen (N) content and then demonstrate how that information may be used by crop managers to improve grain protein content. Remote sensing data from aerial and satellite platforms were collected and compared with flag leaf N concentrations. Flag leaf N was significantly correlated with reflectance (r2 = 0.52-0.80) during 2002 and 2003. A mid-season application of N increased grain protein in every treatment, but most significantly in the N-stressed treatments. Using remote sensing as a tool, wheat growers can estimate N stress …

While there are many vision-based mobile applications to identify products, there is a relative dearth of applications for extracting useful nutrition information. In this report, we study the performance of existing OCR systems available for the Android platform, and choose the best to extract the nutrition facts information from U.S grocery store packages. Oxidation leads to rancid flavors or odors in oils and meat and causes discoloration in muscle foods. There is a great concern about economic loss when oxidation is not effectively controlled. Novel processing and storage methods such as ultrasound, interesterification, or gas emitter sachet in meat packaging have been studied to provide desirable quality properties of oils and meat products. However, there are not enough studies to explain their effect on oxidative stability. The USA is the third major world producer of peaches but consumption has decreased over the last two decades. Consumers have cited mealy texture, fruit browning and lack of sweetness as some undesirable characteristics in peaches, which may be related to the decline. The focus of this study was to evaluate the effect of farm management practices on fruit quality. Physical parameters (color, firmness and size), volatiles and metabolite data was collected.

The typical Western dietary pattern is characterized by the consumption of energy-dense, nutrient-poor foods and has been linked to increased risk of colorectal cancer (CRC). Salinity is a significant stress for plants world-wide. In agriculture, salts reduce germination, overall growth, yield, and sometimes death in crop plants. Salinity similarly affects turfgrass in our urban landscapes. Kentucky bluegrass (Poa pratensis L.) is the most widely used cool-season grass in the northern part of the United States, including the cool-arid West, but generally is a salt sensitive species. Alliant Techsystems, Inc (ATK) manufactures solid rocket motors for the National Aeronautics and Space Administration (NASA) at the Promontory, UT facility. Periodically ATK conducts static test fires, where the rocket is restrained horizontally and fired into a hillside. The plume entrains native soil and is carried by the wind until it cools and settles. Although the area around ATK is sparsely populated, residents of nearby Penrose and Thatcher, UT are concerned with the deposition of the test fire soil (TFS) from the static rocket tests. In 2010, several crop fields nearing harvest were dusted with TFS, prompting the investigation of …
