Many variables contribute to the rising prevalence of children being overweight and obese, one being poor nutrition and the lack of a balanced diet. Proper nutrition helps children to grow and develop normally, as well as lowers the risk of developing chronic problems such as cardiovascular disease, coronary heart disease, and certain cancers later in life. Conducted alongside an applied behavioral intervention to increase consumption of fruits and vegetables, a behavioral economic evaluation of demand curves was administered to students in the fifth through eighth grades. Research Question: How can farmers' markets best implement the Supplemental Nutrition Assistance Program (SNAP) to increase sales and provide low income individuals with access to fresh, local produce?

This paper will discuss the use of SNAP benefits (formerly known as food stamps) at farmers' markets, with particular emphasis on the Cache Valley Gardener's Market as an example. Lack of access to adequate food is a major issue in the US. Objectives: Athlete’s nutritional habits and knowledge can directly affect their performance. The purpose of this study is to investigate the nutritional habits and knowledge of the Division I collegiate football player.

Methods: The participants of this study are male Division I college football players at Utah State University. The athletes included 45 players ranging from 18-26 and include freshman through seniors.

Results: Over eighty six percent of the athletes were unaware that a nutritionist was readily available to them. Sixty percent of the athletes were interested in meeting with the nutritionist. Forty percent of the athletes ate at a fast-food …

Background: Adult studies have found a strong correlation between serum carotenoids and skin carotenoids measured by resonance Raman spectroscopy (RRS). No published studies have examined correlations between skin and serum carotenoids among children.

Objectives: (1) To validate skin RRS methodology against serum carotenoid measurements by high-performance liquid chromatography and (2) to determine if RRS skin carotenoids can be used as a valid biomarker of total fruit and vegetable (FV) intake among children.

Design: Participants were 45 healthy children age 5-17 who provided 3 blood samples used to assess serum carotenoid concentrations and 3 RRS skin measurements (using a Biophotonic ScannerTM) …

The purpose of this research study was to evaluate the effect of a weight loss program on individual participant attendance, total club usage and membership attrition. This retrospective study involved a fitness gym located in Utah County, Utah with a total membership of 1,100. The number of clients participating in the weight loss program between December 2011 and May 2012 was 36 (32 females and 4 males). The increase in abundance and distribution of bulbous bluegrass (Poa bulbosa) has been a concern of the Utah Division of Wildlife Resources. Very little research has been conducted to analyze the invasiveness of bulbous bluegrass in the Intermountain West. This study used data from 1982 to 2012 at range trend study sites across the state of Utah to investigate trends in bulbous bluegrass abundance, range expansion, and co-occurrence with big sagebrush (Artemisia tridentata) and cheatgrass (Bromus tectorum). A study was conducted by researchers from Utah State University at Northland Strength and Conditioning/Combat CrossFit to determine the customer satisfaction levels at a CrossFit gym in Liberty, Missouri. A survey was created and sent to current and previous members and responses were analyzed for trends and areas of strengths and weaknesses in the business. Of 194 surveys sent, 67 (35%) were returned. Data was analyzed using the survey administration platform provided by Constant Contact and also by Excel spreadsheet and statistical analyses.

Current written resources for artisan cheese makers include topics concerning cheese history, cheese recipes, budget planning, culture selection, processing parameters, and only limited discussion of food safety associated with cheese manufacturing. Most often food safety discussions center on HACCP, which typically are not included in artisan cheese operation planning. Recent changes in the regulatory landscape, including the Food Safety Modernization Act, make this information timely and needed. Increasing Stringiness Of Low Fat Mozzarella Cheese Using Polysaccharides, Erik N. Oberg

We examined the ability of polysaccharides to function as fat mimetics in low-fat (LF) mozzarella string cheese to improve functionality by acting like fat globules to separate protein fibers during cheese extrusion. Low-fat mozzarella cheese curd made from 273 kg of 0.7% fat milk was salted at a rate of 10 g/kg then divided into 3.6-kg batches that were hand-stretched in 5% brine at 80° C and formed into a homogeneous mass. The hot cheese was hand mixed with a hot 80° polysaccharide slurry, placed into a small piston-driven extruder and then forced through a 16-mm die to form the …

Managed pasture forms the foundation for much of the U.S. livestock iv production. Increased forage yield and quality can be achieved with nitrogen (N) fertilizer but increases the cost of pasture production. Rising prices of N have led to a return to the use of grass-legume pastures to reduce or replace commercial N fertilizer. Individual host immune responses to infectious agents drive epidemic behavior and are therefore central to understanding and controlling infectious diseases. However, important features of individual immune responses, such as the strength and longevity of immunity, can be challenging to characterize, particularly if they cannot be replicated or controlled in captive environments. Our research on bighorn sheep pneumonia elucidates how individual bighorn sheep respond to infection with pneumonia pathogens by examining the relationship between exposure history and survival in situ. Domestic goats, Capra hircus, were intentionally introduced to numerous oceanic islands beginning in the sixteenth century. The remarkable ability of C. hircus to survive in a variety of conditions has enabled this animal to become feral and impact native ecosystems on islands throughout the world. Direct ecological impacts include consumption and trampling of native plants, leading to plant community modification and transformation of ecosystem structure. Although the negative impacts of feral goats are well known and effective management strategies have been developed to control this invasive species, large populations persist on many islands. Ranching has always been a challenging and risky operation. Producers deal with production risk on a daily basis. A late winter storm during calving or lambing season can result in sickness and even death for many new born calves and lambs. Drought can reduce available grazed forages and increase feeding costs.
