Chapter one devises an approach to adjust estimates of the number of food insecure for changes in sedentarism over time. Existing methodologies are biased upwards and date back several decades. We build a household model utilizing a Stone-Geary utility function, which rationalizes households shifting their labor decisions towards sedentary activities. Our comparative statics examine the impacts of changes in the productivities of sedentary types, as opposed to my physically demanding types, of activities and also their returns. Our empirical approach is informed by our theoretical model and comparative statics, in which we construct a unique pseudo-panel dataset. Sitting time serves …

Despite the importance of seed availability to food and agriculture, seed systems have received scant attention within Extension research and practice. To address this gap, we designed a participatory needs assessment revolving around the 2021 Northeast Organic Seed Conference to assess individuals’ experiences within Northeastern organic seed systems and their opinions concerning their resource access, challenges, and sense of empowerment. Based on a post-conference survey, our findings suggest that Extension’s future efforts should focus on facilitating partnerships between and among community-based/non-profit seed groups, at-home gardeners, seed companies, university researchers, and legal scholars to promote equity and inclusion.

Situating itself amidst the lived experiences of diverse Cubans, the study examines the enduring impact of historical challenges, particularly the Special Period, on present-day perceptions and experiences. The Farmstand at the Food Shelf is a program created by South Burlington non-profit Common Roots and the South Burlington Food Shelf, where organic, local food grown at the Common Roots farm is distributed to food shelf customers. Along with fresh produce, Food Shelf customers are also able to take prepared meals, recipe samples, local animal protein, plant starts, and other offerings. This research explores the wants and needs of customers at the South Burlington Food Shelf through quantitative and qualitative research in order to understand the limits and strengths of the current programming offered by Common Roots. In this autoethnographic depiction, I tell a story of change and renewal. In the narrative, I present a story of personal choices and epiphanies that have changed the course of my life. At the turning point, I portray the process of learning new skills regarding food self-provisioning. The effects of climate change from human-made emissions of greenhouse gases are devastating and accelerating; yet are uncertain and uneven both in terms of geography and socio-economic impacts. I discuss potential for positive social change by addressing the strains imposed by capitalist systems on labor relations, problems with consumer accessibility, and the social stratification of food systems and spaces. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. This dissertation is composed of two essays on agricultural trade and food security. The first chapter is entitled “Decomposing the GMO regulation impact on bilateral trade.” The essay analyses the complex impact of GMO regulations among countries on bilateral trade with a focus on GMO approvals. Three effects impact bilateral trade flows between trade partners: productivity enhancements in the source country, sorting cost from bilateral dissimilarity in regulations, and stringency impact on import demand. We estimate the model using a panel dataset of corn trade and two econometric approaches (PPML, Heckman sample-selection). We find that GMO laxity in production of …

The first Conference held more than 50 years ago by President Nixon in 1969 had significant impacts on our Department and the prevalence of food insecurity in our country. Nost notably, the Conference sparked significant expansions to Food Stamps, now known as the Supplemental Nutrition Assistance Program (SNAP), from 2 million in 1968 to 11 million by 1971. The Conference also increased the reach of the National School Lunch Program (NSLP), which served 2.9 million low-income children at the time of the Conference and expanded to serving nearly 8 million low-income children by 1971. This research paper aims to understand the presence of sustainable food waste management in food retail businesses, as well as the importance of food donation to the success of food insecurity remediation organizations in the city of Melbourne, Victoria. Intensive in-person, online, and over-the-phone interviews were conducted in two categories: food retail businesses (subcategories being supermarkets and restaurants) and food insecurity remediation organizations. This brief details the results from three separate surveys of Northern New Englanders in Maine and Vermont in summer 2020, spring 2021, and spring 2022. A survey was conducted in summer of 2020 to understand the initial and continued impacts of the COVID-19 pandemic on food security, diet, and health outcomes. Food insecurity among college and university students has increased in the past decade. The COVID-19 pandemic has presented unique public health challenges, including increased food insecurity. In a cross-sectional survey of students at a private university in the midwestern U.S. (N=253) we examined how student food security status changed during the pandemic and what relation-ships exist between changes in food security and various aspects of student identities. Twenty-nine percent of responding students indicated that they became less food secure during the pandemic, and the overall reported food insecurity rate increased by 130.77%.
