Along with insects and lab-grown meat, for years seaweed has been lauded as a sustainable “food of the future” by the U.N. Food and Agricultural Organization. As the world increasingly turns to alternative foods in pursuit of a healthier Earth, seaweed has all the makings of an ecological savior. It’s plentiful — seaweeds and ocean algae make up roughly nine tenths of all the plant life on Earth — it’s cheap to harvest and get to market, packed with nutrition, and keeps oceans clean, absorbing more carbon dioxide and releasing more oxygen than the world’s rainforests.

Many studies examine the correlation between the use of resources such as water, energy and land, and the production of food. These nexus studies focus predominantly on large scale systems, often considering the social dimensions only in terms of access to resources and participation in the decision- making process, rather than individual attitudes and behaviours with respect to resource use. Such a concept of the nexus is relevant to urban agriculture (UA), but it requires customisation to the particular characteristics of growing food in cities, which is practiced mainly at a small scale and produces not only food but also …

Disturbances are inherent in every socio-ecological system (SES). However, the spate and scope of upheavals in contemporary SES has increased dramatically in recent years. Agricultural systems are perhaps the most impacted when disasters occur because different aspects of agricultural production are directly affected. The burgeoning farmers-Fulani herdsmen conflict in West Africa is a manifestation of these challenges. When faced with events like these, contemporary food systems are faced with two options: collapse or transform. Grains are the most widely consumed foods worldwide, with maize (Zea mays) being frequently consumed in developing countries where it feeds approximately 900 million people under the poverty line of 2 USD per day. While grain handling practices are acceptable in most developed nations, many developing nations still face challenges such as inadequate field management, drying, and storage. Faulty grain handling along with unavoidably humid climates result in recurrent fungal growth and spoilage, which compromises both the end-quality and safety of the harvest. Covid-19 Impacts On Food Security And Systems: A Third Survey Of Vermonters, Meredith T. Niles, Emily H. Belarmino, Farryl Bertmann

This brief report highlights the findings from a third survey of Vermonters since COVID-19. We surveyed 600 Vermonters, representative on Vermont demographics on race, ethnicity and income in August and September 2020. We find that nearly 30% of Vermont respondent households were food insecure between March and September, with households experiencing a job disruption, households with children, and respondents without a college degree at greater odds for food insecurity. One-third of respondents used some type of food assistance program since the onset of the COVID-19 pandemic. This infographic details the summary results from a second Vermont survey on food and job insecurity in Vermont during COVID-19 in March and June 2020. Key results include: 1) Nearly 1 in 4 Vermonters experience food insecurity in June 2020; 2) People of color, those without a college degree, with job disruption, with children, and women were more likely to be food insecure; 3) More than 50% of Vermonters experienced job loss or disruption, and 20% received unemployment in June 2020; 4) Use of food assistance programs rose significantly between March 2020 and June 2020.

Covid-19 And Food Insecurity Impacts: A Follow Up Vermont Study, Meredith T. Niles, Anna L. Josephson, Farryl Bertmann, Emily H. Belarmino, Roni Neff

This brief report details the results from a follow-up survey of 1,236 Vermonters in June 2020, after an initial survey in March/April 2020 focused on the impact of COVID-19 on food access and security. The key results include: 1) Nearly 1 in 4 respondents (23%) were classified as food insecure in June, a reported 22% decrease since March, but higher than before COVID-19. 2) People of color, those without a college degree, those with a job loss, households with children, women, and younger people had greater odds of experiencing food insecurity. 3) The majority of respondent households had experienced some …

Food Insecurity (FI) is defined as a condition in which individuals lack access to adequate food due to limited financial resources. FI is estimated to impact 12% of households in United States. Adults and children who experience FI are an increased risk for developing metabolic disease such as type 2 diabetes, obesity, hypertension, and cardiovascular disease. The negative health outcomes associated with FI are multi-factorial, however, many of them may be caused by limited nutritional intake and poor diet quality. The novel coronavirus (COVID-19) pandemic has affected people worldwide, disrupting food access and security. To understand how food systems and security are impacted during this pandemic, an online survey was launched in Vermont from March 29th - April 12th, 2020 (less than a week after the Governor’s Stay Home/Stay Safe order). A total of 3,219 Vermonters responded, and nearly half provided written comments in response to open-ended questions about worries or general remarks. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers’ Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. Users are able to spend these dollars on fruits, vegetables, eggs, meats, dairy, jam/jelly, honey and food producing plants. DYD’s goal is to incentivize healthy eating among individuals of low income, promote local purchases, and increase spending at farmers markets. Objective: To assess spending by beneficiaries of Benazir Income Support Programme on monthly food commodities, and contribution of the cash grant programme on purchase of nutritious foods.
Methods: The descriptive cross-sectional survey of households enrolled in the Benazir Income Support Programme was conducted during July and August, 2013, in Matiari district of the Sindh province of Pakistan. Monthly household food expenditure on food commodities and use of the cash grant on type of food purchased was assessed through structured interviews of the beneficiaries. Worries over widespread food shortages in the first few weeks of the COVID-19 lockdowns in the United States eclipsed the real hunger crisis on the horizon—one intimately tied to already existing inequalities. In the midst of the pandemic, the specter of hunger is haunting the same people it always has—the poor, the undocumented, low wage workers, the un- and under employed. It is not our supply systems that are breaking down and causing hunger, but our systems for ensuring people can access the food that exists which have been broken for a long time.

This paper analyzes the effects of the hegemonic food system on low income consumers in Salta, Argentina. Results from previous literature indicate a relationship between the dominant agroindustrial model in Argentina and the concentration of power in the food production system. This paper seeks to contextualize the reports of malnutrition in Salta, a province in northwest Argentina, within larger social, cultural, and nutritional trends. In 2017, Mozambique ranked as one of the least developed countries in the world by measures of health, education, and income. With a minimal annual income, purchasing adequate food to meet recommended levels of nutrients for a healthy diet is difficult, leaving 40% of the country undernourished. This study analyzed what foods are available during the dry months (hungry season) of May through October in the Nampula province of Mozambique to determine if it is possible to meet recommended levels of nutrients from purchasing and growing food.
