Exploring The Significance Of The Traditional Chef’S Uniform In Making Sense Of Professionalism In Culinary Arts Using Interpretative Phenomenological Analysis, Orla Mc Connell

Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. Agroforestry is the intentional integration of trees into agricultural landscapes. Advancing agroforestry has the potential to support just food system transition, but it must take direction from traditional approaches (culturally-embedded, millennia-old agroforestry practices in forest ecosystems) and agroecology (the movement, science, and practice for just and sustainable food and agricultural systems). An agroecological approach to agroforestry is essential to avoid agroforestry replicating the logics and harms of industrial agriculture and to encourage learning from traditional agroforestry practices, and likewise, traditional approaches to agroforestry can support a transformative agroecological transition through redesign of agroecosystems and shifting perspectives and ethics. Ever since the eighteenth century, experts have tried to tell farmers how to farm. The agricultural enlightenment in Europe marked the beginning of a long arc of new experts aiming to change agricultural knowledge and practice. This dissertation analyzes the pivotal period in the late nineteenth and early twentieth century in Germany and the United States when scientists, improvers, and market agents began to develop comprehensive ways to communicate agricultural innovation to farmers. Solanum jamesii is a wild potato found in the US southwest. There is ample evidence that this potato was used by ancestral Puebloans as a food source, where some researchers think it was used as a starvation food while others consider it to be regular food source. Currently this potato is being grown by Native Americans, notably the Navajo, as a specialty food as well as a food crop. 4-H and the Extension Service were instrumental in contributing to the nationwide increase in food production that sustained the United States and its armed forces during World War II. At the onset of the war, the Extension Service distributed essential information at the national, state, and local levels through universities and the 4-H program. 4-H drew upon the intellectual and cultural tradition that they had cultivated to motivate and organize the food effort and help the allies win the war. 4-H’s national influence and resources provided eager allies to war-oriented programs. This thesis provides a culturally-comprehensive review of the plants utilized for food in the Bitterroot Salish tribe of northwestern Montana. As part of the larger Confederated Salish and Kootenai Tribes (CS&KT) of the Flathead Indian Reservation, the Bitterroot Salish historically utilized hundreds of plants for food, medicine and hygiene. This thesis aims to highlight food plants and their important cultural components. The information herein is a combination of history, ethnography, linguistics, ethnobotany, and first-hand experience with the current Salish community to provide a holistic framework of understanding traditional food plants today. This paper aims to shed light on the dissonance caused by the superimposition of Dominant Human Systems on Natural Systems. I highlight the synthetic nature of Dominant Human Systems as egoic and linguistic phenomenon manufactured by a mere portion of the human population, which renders them inherently oppressive unto peoples and landscapes whose wisdom were barred from the design process. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

I make an annual summertime return to Naknek, a town on Bristol Bay where the salmon have made their own annual summertime return for thousands of years. My thesis is a series of nonfiction essays about my background there, both as a commercial fisherman and my upbringing. It is something I consider the “Part One” of a book still under the process of writing. It is a series of essays, alternating these two motifs of the salmon and of my experiences growing up somewhere like Naknek.

Bill Owens is a pioneer in the United States craft brewing industry through his efforts as an advocate, writer, publisher, brewer, and entrepreneur who created a lasting legacy by influencing generations of brewers and beer fans. Owens wrote the first book on homebrewing equipment (How to Build a Small Brewery: Draft Beer in Ten Days in 1982). He opened the third brewpub in the country (Buffalo Bill's Brewery in Hayward, California in 1983) where, in 1985, he introduced the first commercial pumpkin beer among other beer style firsts. Owens published numerous brewery-focused magazines that featured many illustrious beer writers. …

The intention of this study is to see how traditional subsistence farming actually takes place and the social settings formed by these practices. A university-level course on science, history, and culture of beer and brewing offers students from a wide range of disciplines a unique opportunity to learn from each other. They gain an appreciation for STEAM and the interaction of a number of disciplines while examining a subject of growing interest. This paper provides a brief description of such a course and includes specific examples of ways in which students explore science, engineering, humanities and the arts, as these areas of research come together in the study of beer and brewing.

When the Europeans first colonized New England they initiated the process of transforming the landscape into something more familiar. In order to ensure access to food and medicine and recreate the pastoral landscape of the Old World they brought with them a variety of known plant species for cultivation. With time, shifts in medical practice, agriculture, food preservation, and dietary preferences, reliance on these plants declined. As knowledge of these plant species disappeared from popular consciousness, so too did they disappear into the wilds of America, exploiting new found ecological niches, and becoming New England’s naturalized flora. Kathryn E. Briwa was a foods and nutrition specialist for the University of Maine Extension Service from 1941 until her retirement in 1960. She earned a B.A. degree from Vassar College and an M.A. and Ph.D. from Columbia University. She received a national Superior Service Award from the United States Department of Agriculture in 1960 for her work in promoting better nutrition, strengthening school lunch programs, training volunteer groups for wartime and emergency meal planning, and for pioneering work in group weight control.

The development of the Rio Grande Valley of Texas and its citrus industry is a popular subject in the area. It is a topic local authors write about. Furthermore, it is not unusual for Valley newspapers and magazines to occasionally mention the greatness of the area and its citrus business.

Most of what is written, however, is used to propagandize the area and the citrus industry. Moreover, little, if anything, is mentioned about the Mexican and Mexican-American and his contribution, with the exception of the Laguna Seca ranch, the Vela family, and a few affluent individuals.

James G. Matthews was a jack-of-all-trades. He worked as a coal miner for James C. Coal Company, worked for United Fuel Gas Company, the Nickel Plant, and as a mail courier. He also performed as part of a singing quartet. Mr. Matthews was born on May 30, 1902. He grew up on a farm near East Lynn, WV. After the death of his mother, Mr. Matthews attended elementary school on a part-time basis in order to work on the family farm.
