Bacillus spp. are ubiquitous, Gram-positive, spore forming bacteria that are commonly recovered from the environment and gastrointestinal tract (GIT) of poultry. These spores are capable of withstanding harsh condition such as feed pelletization, which facilitates inclusion in poultry feeds. Once ingested by the bird, spores germinate into metabolically active vegetative cells which can produce extracellular enzymes which can hydrolyze otherwise indigestible components of the feed. For studies 1 through 3, 20 steers of predominantly Angus breeding, were stratified by body weight (279 ± 13.2 kg), assigned randomly to 6 paddocks, and fed a low S ground corn and soybean meal supplement that did not contain any byproduct feeds (0.31% total dietary S; LS) or LS supplement with an additional 0.25% S provided from sodium sulfate (Na2SO4; 0.58% total dietary S; HS) for a 114-d growing phase. Our investigation of respiratory chain activity, mitochondrial protein oxidation and protein expression was an expansion to the subcellular/molecular level. In experiment 1, 80 steers (197.0 kg initial body weight; BW for fall, 116.9 kg for spring), were stocked at 2.45 and 4.1 calves/ha in fall and spring, respectively in 16 tall fescue pastures [fall ergovaline (EV) = 1,475 ppb and spring EV = 1,173 ppb] under 2 treatments, mineral (MIN) (n = 8) and cumulative management (CM) (n = 8). Forage allowance did not differ (P = 0.76) between CM and MIN during fall but differed during spring (P ≤ 0.05, 2.55 vs. 3.22 kg DM/kg BW, for MIN and CM, respectively). Thus, interventions aiming to reduce C. jejuni counts on poultry products could greatly reduce the incidence of human campylobacteriosis. The goal of the LCA was to identify the impacts of greenhouse gas emissions, water use, and land use of pork containing and porkless diets and meal plans in a field-to-fork analysis. In two experiments, dark-cutting (DC) beef strip loins were used to test the effects of citric acid-enhancement pH on visual and instrumental color of fresh and cooked steaks. Dark cutting and normal pH strip loin were injected to 111% of raw product weight with pH 3.5, 4.0, 4.5, or 5.0 solutions by mixing citric acid in either 0.05% phosphate solution or tap water (Exp 1), or with pH 2.0, 2.5, 3.0, and 3.5 solutions made by mixing citric acid in either a 0.5% orthophosphate solution (PO4) or a 0.5% tripolyphosphate solution (STP) (Exp2). The general objectives of this research were to evaluate the interaction effects of sixteen different antimicrobial treatments throughout seven days of display on physical, chemical and sensory characteristics of ground beef patties, when compared to an un-treated control. Antimicrobial treatments included: fumaric acid, malic acid, octanoic acid, decanoic acid, sodium propionate, propionic acid solution, potassium lactate/diacetate blend, sodium benzoate, hexanoic acid, pyruvic acid, levulinic acid, lactic acid/ citric acid blend, sodium diacetate, lemon juice and acetic acid. Three studies were conducted to improve and incorporate reproductive management practices into beef cow-calf production. First study evaluated serial use of Estrotect estrous detection patches as a simple, cost-effective reproductive management tool to identify cyclic animals before breeding, distinguish between females conceiving to AI versus natural service, and determine seasonal pregnancy rate after bull removal. Also determined, was effectiveness of altered timing of GnRH treatment (1 d ± CIDR removal) in a modified 14-d CIDR-Select Synch protocol. When evaluated over a 4-wk period, estrous detection patches correctly (P < 0.01) identified 79% of cyclic and 86% of non-cyclic heifers. Patches were 96 and 98% accurate in identifying heifers and cows pregnant by AI, respectively, and were 76 and 87% accurate in identifying pregnant heifers and cows at the end of the breeding season (P < 0.01). Treatment with GnRH at CIDR removal reduced labor costs and animal handling without compromising estrous response (both ~63.0%) and AI pregnancy rates (~76 and 77%; P > 0.1).
