These species are primarily captured by demersal gillnets used in the TDGDLF that operate in the West Coast and South Coast Bioregions. For the North Coast bioregion, no commercial fishing for sharks …
An Examination Of The Relationship Between Health Literacy And Dietary Practices Among College Students: A Test Of The Integrated Model Of Health Literacy, Alison B. Oberne
An Examination Of The Relationship Between Health Literacy And Dietary Practices Among College Students: A Test Of The Integrated Model Of Health Literacy, Alison B. Oberne
USF Tampa Graduate Theses and Dissertations
Overweight and obesity continue to plague Americans and contribute to decreased quantity and quality of life. Americans of all ages experience overweight and obesity; however, increasing rates occur during young adulthood. Young adults develop dietary practice behaviors that persist into adulthood and can contribute to weight-related chronic diseases. Approximately half of all young adults are enrolled in college, and, approximately 38% of college students are either overweight or obese.
Dietary practices are health behaviors that can either increase or decrease risk for overweight and obesity. Much research has explored predictors of dietary practices among college students; however, there is a …

Background: The tetracycline-responsive system (Tet-ON/OFF) has proven to be a valuable tool for manipulating gene expression in an inducible, temporal, and tissue-specific manner. The purpose of this study was to create and characterize a new transgenic mouse strain utilizing the human skeletal muscle α-actin (HSA) promoter to drive skeletal muscle-specific expression of the reverse tetracycline transactivator (rtTA) gene which we have designated as the HSA-rtTA mouse. Methods: To confirm the HSA-rtTA mouse was capable of driving skeletal muscle-specific expression, we crossed the HSA-rtTA mouse with the tetracycline-responsive histone H2B-green fluorescent protein (H2B-GFP) transgenic mouse in order to label myonuclei. Results: …

Few studies work with college students as equal partners in all aspects of Community-Based Participatory Research (CBPR) and even less evaluate behaviors of those college partners. The current study aimed to examine health behaviors of students by designing and implementing a peer-led, social marketing campaign (Get Fruved) to promote healthier lifestyles on their campuses. Enrolled students (n = 376) were trained to either design and implement a health promotion intervention (Social Marketing and Environmental Interventionists; SMEI, n = 78), be peer mentors (PM; n = 205), or serve as control participants (n = 93). Students' behaviors (dietary, activity, and stress) …
Influences Of Antroquinonol And 4-Acetylantroquinonol B On Inflammatory Tumorigenesis In The Mcf-7 Breast Cancer Cell Line With Or Without Tnf-Α Stimulation, Ting-Chun Lin
Masters Theses
Breast cancer (BC) is one of the most common cancers among women worldwide that ~25% of new cancer cases diagnosed every year would be BC; moreover, ~15% of cancer deaths per year caused by BC makes it the leading cause of cancer death among women worldwide. To date, though the cause of a large proportion of BC are still unclear, recent studies have revealed that a supportive breast tissue microenvironment is critical for the development and progression of BC, especially the communication with immune cells within breast tissue. Therefore, breast inflammatory microenvironment is currently received a substantial attention in the …
Adding Increased Value To Strawberry Puree By Adding Xylo-Oligosaccharides To Improve Health, Haochen Dai
Adding Increased Value To Strawberry Puree By Adding Xylo-Oligosaccharides To Improve Health, Haochen Dai
Masters Theses
Cancer is a global risk for human wellness and health. Dietary habits could profoundly affect the risk of certain cancer, such as colorectal cancer (CRC) (Platz, 2000). CRC has listed the third leading cancer among male and female in the United States (Stewart, 2014). Surprisingly, the consumption of dietary fiber has an inverse correlation with the mortality of CRC (Song, 2018). However, most Americans do not consume enough dietary fiber to meet the recommended level of dietary fiber intake (Clemens, 2012; Lee-Kwan, 2017). Hence, it is reasonable to increase the nutrient density, i.e., dietary fiber, of current food model. Xylo-oligosaccharides …
Micronutrient Availability In Alternative Foods During Agricultural Catastrophes, David C. Denkenberger, Joshua M. Pearce
Micronutrient Availability In Alternative Foods During Agricultural Catastrophes, David C. Denkenberger, Joshua M. Pearce
Department of Materials Science and Engineering Publications
Several catastrophes could block the sun, including asteroid/comet impact, super volcanic eruption, and nuclear war with the burning of cities (nuclear winter). Previous work has analyzed alternate food supplies (e.g., mushrooms growing on dead trees, bacteria growing on natural gas). This was shown to be technically capable of feeding everyone with macronutrients (protein, carbohydrates, and lipids) and minerals, although economics and politics remain uncertain. The present work analyzes vitamin availability in such alternative food scenarios. The vitamin content of various alternate foods is compared to the US recommended daily allowance (RDA) as well as the average requirement defined by the …

BACKGROUND: When dietary behaviors are habitual, intentions are low, and environmental cues, such as the consumer food environment, might guide behavior. How might intentions to eat healthily and ultimately actual dietary behaviors, be influenced by the consumer food environment (including the availability and affordability of healthy foods) in convenience stores? This study will determine pathways between the healthfulness of convenience stores and college students' dietary intentions/behaviors, and body mass index (BMI).
METHODS: Through multilevel structural equation modeling, a comparison was made of students' healthful meal intentions (HMI); intake (fruits/vegetables, %kcal/fat, sugar-sweetened beverages (SSBs) and whole-grains); and measured BMI; as well …

Maternal Choline And Betaine Supplementation Modifies The Placental Response To Hyperglycemia In Mice And Human Trophoblasts, Khatia Nanobashvili, Chauntelle Jack-Roberts, Rachel Bretter, Naudia Jones, Kathleen Axen, Anjana Saxena, Kali Blain, Xinyin Jiang
Publications and Research
Gestational diabetes mellitus (GDM) is characterized by excessive placental fat and glucose transport, resulting in fetal overgrowth. Earlier we demonstrated that maternal choline supplementation normalizes fetal growth in GDM mice at mid-gestation. In this study, we further assess how choline and its oxidation product betaine influence determinants of placental nutrient transport in GDM mice and human trophoblasts. C57BL/6J mice were fed a high-fat (HF) diet 4 weeks prior to and during pregnancy to induce GDM or fed a control normal fat (NF) diet. The HF mice also received 25 mM choline, 85 mM betaine, or control drinking water. We observed …

Food And Nutrition Care In Long-Term Care Facilities: Examining The Perspectives Of Frontline Workers, Renata Blumberg, Charles Feldman, Douglas Murray, Nechama Burnes, Debra Murawski
Department of Nutrition and Food Studies Scholarship and Creative Works
Malnutrition in older adults residing in long-term care facilities continues to be a problem in the United States. Existing research has identified a list of possible contributing factors, including staffing problems. Few studies on food and nutrition care have attempted to gain the perspectives of nursing or dietary aides (henceforth, aides), the frontline staff who work most closely with the residents of long-term care facilities. The current study takes a qualitative approach grounded in a theoretical perspective based on Total Quality Management (TQM) to increase understanding of the interpersonal and management practices that affect resident wellbeing, health, and nutrition. Four …

Dietary supplements are meant to aid in providing additional vitamins, minerals, fiber, amino acids, herbs and botanicals to ones’ diet that may be deficient. These supplements are available in various forms and advertise to promote various health claims. However, often there is little research to support these health claims. Supplement use date back as far as 1920 when cod liver oil was introduced as a food nutrient. The first known multivitamin/multimineral /Phytonutrient supplement called Nutrilite was introduced in the United States in 1934.1 With the growth of dietary supplement manufacturing the possibility of misbranding, and false product claims required …
