The Effect Of Change In Middle School Lunchroom Setting On Student’S Intake Of Broccoli, Mia Wood Angst Nov 2018

The Effect Of Change In Middle School Lunchroom Setting On Student’S Intake Of Broccoli, Mia Wood Angst

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Introduction: Over the past three decades, childhood obesity has more than doubled in children and quadrupled in adolescents. One possible solution to combating this growing epidemic is by making small changes to prevent obesity during childhood that will influence children to follow a healthy lifestyle into adulthood. The Smarter Lunchrooms Movement aims to increase healthy eating by incorporating low-cost to no-cost alterations to the school lunchroom in an effort to increase consumption of healthier foods by making them more attractive and convenient.

Purpose: This research study assessed broccoli consumption among 6th – 8th grade students in a selected …

A Mobile-Based Intervention For Obesity Prevention Among Female College Students In Saudi Arabia: A Randomized Controlled Trial, Abeer Hussain Alssafi Nov 2018

A Mobile-Based Intervention For Obesity Prevention Among Female College Students In Saudi Arabia: A Randomized Controlled Trial, Abeer Hussain Alssafi

FIU Electronic Theses and Dissertations

College students transitioning from adolescence into early adulthood may encounter new stresses, which may lead to unhealthy weight-related behaviors and weight gain. Students gain approximately 4-9 pounds during their first 2 years in college. Health behaviors in this population pose an increased risk because they tend to persist into adulthood. In Middle Eastern countries including Saudi Arabia, student obesity is on the rise. About 24% of female college students were overweight or obese in Saudi Arabia in 2015. This dissertation describes the development of a mobile intervention program using Instagram and a self-tracking app to minimize the risk of overweight/obesity …

Effect Of Larval Starvation On Lipid Content Of Drosophila Melanogaster Over 15 Days, Fabian Leija, Allen Gibbs Sep 2018

Effect Of Larval Starvation On Lipid Content Of Drosophila Melanogaster Over 15 Days, Fabian Leija, Allen Gibbs

LSAMP Poster Presentations

Starvation-resistant Drosophila melanogaster, common fruit flies, deriving from 121 generations of starvation selection, have resulted in genetically, behaviorally, and physiologically different individuals compared to non-resistant counterparts. Starvation-resistant Drosophila are more obese, containing twice as much lipids as control flies. This is a result of starvation-resistant fly larva feeding for 5 days and then entering the pupa stage while non-resistant flies only feed for 4 days.

In this experiment, we hope to answer the question of whether the starvation-resistant flies are genetically predisposed to be substantially more obese than wild populations or if it is a result of this alternate behavior …

Effect Of Grain Sorghum Polyphenols On Fecal Fermentation, Danielle Marie Ashley Aug 2018

Effect Of Grain Sorghum Polyphenols On Fecal Fermentation, Danielle Marie Ashley

Graduate Theses and Dissertations

Obesity is an increasing epidemic which during 2015-2016 afflicted 39.8% of adults and 18.5% of youth in the United States. Not only can obesity affect quality of life, but it can lead to life-threatening diseases such as type 2 diabetes, heart disease, stroke, and some cancers. Animal and human research have demonstrated a pattern of gut microbiota perturbation in overweight and obesity, characterized by a reduction of beneficial bacterial species and increase in harmful species. Diet has been established as a contributing factor in gut ecology, and foods including fiber, resistant starch, and polyphenols have been found to both enhance …

Very Low-Carbohydrate, High-Fat, Weight Reduction Diet Decreases Hepatic Gene Response To Glucose In Obese Rats, Kathleen V. Axen, Marianna A. Harper, Yu Fu Kuo, Kenneth Axen Jul 2018

Very Low-Carbohydrate, High-Fat, Weight Reduction Diet Decreases Hepatic Gene Response To Glucose In Obese Rats, Kathleen V. Axen, Marianna A. Harper, Yu Fu Kuo, Kenneth Axen

Publications and Research

Background: Very low carbohydrate (VLC) diets are used to promote weight loss and improve insulin resistance (IR) in obesity. Since the high fat content of VLC diets may predispose to hepatic steatosis and hepatic insulin resistance, we investigated the effect of a VLC weight-reduction diet on measures of hepatic and whole body insulin resistance in obese rats.

Methods: In Phase 1, adult male Sprague-Dawley rats were made obese by ad libitum consumption of a high-fat (HF1, 60% of energy) diet; control rats ate a lower-fat (LF, 15%) diet for 10 weeks. In Phase 2, obese rats were fed energy-restricted amounts …

Parnell, Yu-Chi Lee, Dolores Corella, Paul Hopkins, Bertha A. Hidalgo, Stella Aslibekyan, Michael A. Province, Devin Absher, Donna K. Arnett, Katherine L. Tucker, Jose M. Ordovas

Epidemiology and Environmental Health Faculty Publications

Background: The putative functional variant −265T > C (rs5082) within the APOA2 promoter has shown consistent interactions with saturated fatty acid (SFA) intake to influence the risk of obesity.

Objective: The aim of this study was to implement an integrative approach to characterize the molecular basis of this interaction.

Design: We conducted an epigenome-wide scan on 80 participants carrying either the rs5082 CC or TT genotypes and consuming either a low-SFA (< 22 g/d) or high-SFA diet (≥ 22 g/d), matched for age, sex, BMI, and diabetes status in the Boston Puerto Rican Health Study (BPRHS). We then validated the findings in selected participants in the Genetics of Lipid Lowering Drugs and Diet Network (GOLDN) Study (n = 379) and the Framingham Heart Study (FHS) (n = 243). Transcription and metabolomics analyses were conducted to determine the relation between epigenetic status, APOA2 mRNA expression, …

Childhood obesity influences nurses in many areas, including inpatient hospitals, schools, and …

Effects Of Mitochondrial Nadp+-Dependent Isocitrate Dehydrogenase Deficiency On Fructose-Induced Obesity In Mice, Allison Michelle Montalbano, Kaleigh Elizabeth Beane May 2018

Effects Of Mitochondrial Nadp+-Dependent Isocitrate Dehydrogenase Deficiency On Fructose-Induced Obesity In Mice, Allison Michelle Montalbano, Kaleigh Elizabeth Beane

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Obesity prevalence in the United States continues to increase and is associated with health consequences such as type 2 diabetes, hypertension, atherosclerosis, and hyperlipidemia. Among many contributing factors to obesity, fructose may be one of the major reasons as it disrupts the antioxidant system thereby resulting in an accumulation of reactive oxidative species and leading to obese conditions. The enzyme, isocitrate dehydrogenase 2 (IDH2), reduces nicotinamide adenine dinucleotide phosphate from the TCA Cycle, hence might be implicated with not only energy metabolism but also cellular redox homeostasis. Therefore, the hypothesis was that IDH2 deficiency in mice would exacerbate hepatic lipid …
