Because supermarkets are a critical part of the community food environment, the purpose of this paper is to examine the association between accessibility to the supermarket where participants were surveyed, frequency of shopping at the supermarket, and self-reported and objectively-assessed fruit and vegetable consumption. Accessibility was assessed using Geographic Information Systems (GIS) measured distance and multiple versions of the modified Retail Food Environment Index (mRFEI), including a localized road network buffer version. Frequency of shopping was assessed using self-report. The National Cancer Institute Fruit and Vegetable screener was used to calculate daily servings of fruits and vegetables. Skin carotenoids were …

The Effect Of Change In Middle School Lunchroom Setting On Student’S Intake Of Broccoli, Mia Wood Angst
Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
Introduction: Over the past three decades, childhood obesity has more than doubled in children and quadrupled in adolescents. One possible solution to combating this growing epidemic is by making small changes to prevent obesity during childhood that will influence children to follow a healthy lifestyle into adulthood. The Smarter Lunchrooms Movement aims to increase healthy eating by incorporating low-cost to no-cost alterations to the school lunchroom in an effort to increase consumption of healthier foods by making them more attractive and convenient.
Purpose: This research study assessed broccoli consumption among 6th – 8th grade students in a selected …

ackground This paper describes the development, reliability, and convergent validity of a practical tool-the Convenience StoreSupportive Healthy Environment for Life-Promoting Food (SHELF) Audit. Methods Audit items included: a variety of fresh, processed, and frozen fruits and vegetables; low-fat dairy products; healthy staples and frozen meals; healthy food incentive programs; items sold in check-out areas; portion/cup sizes; and pricing. Each audit item was scored using a five-point semantic-differential scale (1 = provides little or no support for healthful foods to 5 = provides high support for healthful foods). Convergent validity was examined by comparing the SHELF audit to Ghirardelli et al. …

A Mobile-Based Intervention For Obesity Prevention Among Female College Students In Saudi Arabia: A Randomized Controlled Trial, Abeer Hussain Alssafi
FIU Electronic Theses and Dissertations
College students transitioning from adolescence into early adulthood may encounter new stresses, which may lead to unhealthy weight-related behaviors and weight gain. Students gain approximately 4-9 pounds during their first 2 years in college. Health behaviors in this population pose an increased risk because they tend to persist into adulthood. In Middle Eastern countries including Saudi Arabia, student obesity is on the rise. About 24% of female college students were overweight or obese in Saudi Arabia in 2015. This dissertation describes the development of a mobile intervention program using Instagram and a self-tracking app to minimize the risk of overweight/obesity …

The Healthy Living Ambassador Program brings health, teen leadership, and teamwork to California's elementary school gardens through interdisciplinary UC Cooperative Extension collaboration, community-based partnerships and teen teaching. During spring 2015, teen ambassadors trained by Extension educators and volunteers at UC Elkus Ranch in San Mateo County taught nutrition science, food cultivation and healthy living skills in an 8-week, garden-based, after-school nutrition and physical education program for elementary school children in an urban setting. We conducted a pilot study using a mixed-methods approach to measure and explore the program's impact on children's vegetable selection and consumption preferences, as well as perceived …

Background
Dietary nitrate is an important source of nitric oxide (NO), a molecule critical for cardiovascular health. Nitrate is sequentially reduced to NO through an enterosalivary nitrate-nitrite-NO pathway that involves the oral microbiome. This pathway is considered an important adjunct pathway to the classical l-arginine–NO synthase pathway.
Objective
The objective of this study was to systematically assess the evidence for dietary nitrate intake and improved cardiovascular health from both human and animal studies.
Design
A systematic literature search was performed according to PRISMA (Preferred Reporting Items for Systematic Reviews and Meta-Analyses) guidelines by using key search terms in Medline and …

Research outputs 2014 to 2021
Purpose
Short-term trials indicate inorganic nitrate and nitrate-rich vegetables may have vascular health benefits. However, few observational studies have explored the relationship between nitrate intake and long-term cardiovascular disease (CVD) outcomes. The primary aim of this study was to investigate the association of nitrate intake from vegetables with CVD mortality in a sample of older Australians.
Methods
A subgroup of participants without diabetes or major CVD at baseline (1992–1994) were included from the Blue Mountains Eye Study, a population-based cohort study of men and women aged ≥ 49 years. Diets were evaluated using a validated food frequency questionnaire at baseline, …
