Nutritional Deuterium Depletion And Health: A Scoping Review, Nicole Korchinsky

Department of Nutrition Student Projects

Background: Deuterium depletion is an untapped area of energy metabolism and health.

Objectives: The purpose of this scoping review is to examine the health effects through deuterium depletion via deuterium-depleted water and a deuterium-depleted diet (ketogenic).

Methods: A protocol process approach was used to retrieve current research in deuterium depletion.

Results: 15 research articles were used. Deuterium depletion was found to have beneficial health effects in the following conditions: cancer prevention, cancer treatment, depression, diabetes, long-term memory, anti-aging, and sports performance.

Conclusion: Even with limited data, consistent deuterium depletion was seen across all conditions reviewed. …

The goal is to improve health and nutrition among new mothers and their children who were living in shelters. The mothers received workshops and booklets consisting of information, quick and healthy recipes, and learned how to prepare home-made meals with a low budget. The mothers realized nutritious foods are important for them and their children. They learned how to manage time to make nutritious food at the residence. CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

This creative project was created to serve as a 10-week afterschool club curriculum for 3rd-5th graders to teach them about nutrition and healthy eating patterns. The goal of the program is to help kids establish a foundation for healthy eating that they can utilize throughout their lives, potentially reducing their risk of developing chronic diseases as an adult. Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.

Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. Then to test feasibility of the nutrition-specific curriculum in increasing knowledge, self-efficacy, and attitudes by a case study approach, pre/post intervention design.

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

This research explores summer learning loss and the effect of summer resources on students’ literacy growth. Using the faucet theory, this mixed methods sequential explanatory study was designed to provide equitable resources and educational support for students in grades five through eight in a rural, socioeconomically disadvantaged school district. The Food and Agriculture Organization (FAO) of the United Nations initiated the World Food Summit in 1996 to discuss and call attention to the “widespread undernutrition and growing concern about the capacity of agriculture to meet future food needs” (Food and Agriculture Organization, n.d.). School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens.
