Nutritional Deuterium Depletion And Health: A Scoping Review, Nicole Korchinsky

Background: Deuterium depletion is an untapped area of energy metabolism and health.
Objectives: The purpose of this scoping review is to examine the health effects through deuterium depletion via deuterium-depleted water and a deuterium-depleted diet (ketogenic).
Methods: A protocol process approach was used to retrieve current research in deuterium depletion.
Results: 15 research articles were used. Deuterium depletion was found to have beneficial health effects in the following conditions: cancer prevention, cancer treatment, depression, diabetes, long-term memory, anti-aging, and sports performance.
Conclusion: Even with limited data, consistent deuterium depletion was seen across all conditions reviewed. …

Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.
Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. Then to test feasibility of the nutrition-specific curriculum in increasing knowledge, self-efficacy, and attitudes by a case study approach, pre/post intervention design.

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

The Meal Gap: A Food Activist Curriculum is a series of fifty-four lessons for fourth grade students that introduces them to the topic of food insecurity. The Food and Agriculture Organization (FAO) of the United Nations initiated the World Food Summit in 1996 to discuss and call attention to the “widespread undernutrition and growing concern about the capacity of agriculture to meet future food needs” (Food and Agriculture Organization, n.d.). School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. While many researchers have studied school gardens, few have compared two countries, focused on environmental sustainability, or investigated Maine in particular. Growing an edible garden in a poverty-affected school serves multiple purposes. It provides a way to increase parent involvement at the school while increasing student knowledge of nutrition. This comprehensive plan prepares a school to implement a school garden run solely by teacher, students, parents, and community volunteers. The potential results are that parents will get involved at their child's school while the students can learn about nutrition along with their families.

A thematic unit for integrating social studies and science with other curriculum areas was developed for first grade students. The theme for the unit centered around farms. The unit was divided into five subunits: farms, farm animals, orchards/vineyards (to include fruits of the Yakima Valley and apples), crops (to include vegetables of the Yakima Valley, pumpkins, and wheat), and nutrition/four food groups. The literature was reviewed to establish a theoretical foundation for the unit and for activities that focused on reading, writing, and language development.

In addition, when carefully planned cooking experiences are presented, a wide variety of learning opportunities is possible. This project is intended to assist teachers wishing to incorporate cooking experiences into the classroom. Cooking lessons, teaching suggestions, additional recipes, and enrichment ideas are included. A list of cooking terms and definitions and additional sources of information are also given.
