This project looks at obesity and undernourishment in American students. The project discusses the importance of physical education and nutrition education and the lack there of in the 21st Century. Research indicates current legislative mandates involving standardized testing and a stress on core academics, changing familial and societal structures and evolving food technology have helped lead to the obesity epidemic in the United States. The project also looks at different ethnic and socioeconomic groups and the impact nutrition and overall health plays in these groups. Growing an edible garden in a poverty-affected school serves multiple purposes. It provides a way to increase parent involvement at the school while increasing student knowledge of nutrition. This comprehensive plan prepares a school to implement a school garden run solely by teacher, students, parents, and community volunteers. The potential results are that parents will get involved at their child's school while the students can learn about nutrition along with their families.

A thematic unit for integrating social studies and science with other curriculum areas was developed for first grade students. The theme for the unit centered around farms. The unit was divided into five subunits: farms, farm animals, orchards/vineyards (to include fruits of the Yakima Valley and apples), crops (to include vegetables of the Yakima Valley, pumpkins, and wheat), and nutrition/four food groups. The literature was reviewed to establish a theoretical foundation for the unit and for activities that focused on reading, writing, and language development.

The utilization of cooking experiences in the elementary school can increase student involvement and participation. In addition, when carefully planned cooking experiences are presented, a wide variety of learning opportunities is possible. This project is intended to assist teachers wishing to incorporate cooking experiences into the classroom. Cooking lessons, teaching suggestions, additional recipes, and enrichment ideas are included. A list of cooking terms and definitions and additional sources of information are also given.
