This study introduces a 3D food printing approach to fabricate spherical starch beads with small sizes and high porosity for the first time. The results illustrated that 3D food printing could generate starch beads in different sizes depending on the nozzle diameter, printing pressure, and ink viscosity. The 3D-printed beads were characterized for their morphology, crystallinity, and textural properties, while the starch-based ink was analyzed for its rheological properties. A suitable printing was attained when viscosity was in the range of 1000–1200 Pa.s at a low shear rate (˂0.1 s−1). Among the starch concentrations (10–15%, w/w) investigated, 15% starch concentration …

Plastics are versatile and cost-effective materials with a wide variety of functionalities. Their non-biodegradability, however, is an environmental concern. Plastic waste accumulation in landfills and natural habitats results in health issues, mainly due to the leaching of chemicals from plastic products that further transfer to humans and wildlife. Many countries around the globe have imposed restrictions on plastic use. Despite these concerted efforts, a pressing scientific need exists to find an alternative to plastics. Cellulose from abundant agricultural biomass stands out as a viable alternative due to its robust structure, biocompatibility, biodegradability, low density, and non-toxicity. This research aims to …

Relative to standard red/green/blue (RGB) imaging systems, hyperspectral imaging systems offer superior capabilities but tend to be expensive and complex, requiring either a mechanically complex push-broom line scanning method, a tunable filter, or a large set of light emitting diodes (LEDs) to collect images in multiple wavelengths. This paper proposes a new methodology to support the design of a hypothesized system that uses three imaging modes—fluorescence, visible/near-infrared (VNIR) reflectance, and shortwave infrared (SWIR) reflectance—to capture narrow-band spectral data at only three to seven narrow wavelengths. Simulated annealing is applied to identify the optimal wavelengths for sparse spectral measurement with a …
