A surrogate is commonly used for process validations. The industry often uses the target log cycle reduction for the test (LCRTest) microorganism (surrogate) to be equal to the desired log cycle reduction for the target (LCRTarget) microorganism (pathogen). When the surrogate is too conservative with far greater resistance than the pathogen, the food may be overprocessed with quality and cost consequences. In aseptic processing, the Institute for Thermal Processing Specialists recommends using relative resistance (DTarget)/(DTest) to calculate LCRTest (product of LCRTarget and relative resistance). This method uses the mean values …

Faculty Work Comprehensive List

Spatio-temporal particulate matter (PM) measurements are critical to understanding emission profiles to develop effective mitigation strategies. However, high-resolution spatio-temporal measurements using research-grade instruments are cost-prohibitive, making low-cost sensors (LCS) a promising alternative. LCS measures particle light scattering intensity (Isc) and converts it to mass and number concentrations. Such measurements are influenced by particles’ physico-optical properties, which make LCS appropriate for measuring PM with similar properties to those used for calibration. This work evaluates the performance of an LCS (PurpleAir) against reference instruments (SMPS þ APS) during cooking experiments per-formed in a test house where PM0.3/PM10 as high as 90% was …

Smoothing Out Smart Tech’S Rough Edges: Imperfect Automation And The Human Fix, Christian Katzenbach, Christian Pentzold, Paloma Viejo Otero Apr 2024

Smoothing Out Smart Tech’S Rough Edges: Imperfect Automation And The Human Fix, Christian Katzenbach, Christian Pentzold, Paloma Viejo Otero

Human-Machine Communication

In this article, we take issue with an idea of autonomous and efficient automation that is upheld through the paradoxical conjunction of a flawed vision of the technological fix and the under-acknowledged human work required to fill in the gaps between machines and users. Our argument is based on two case studies that sit at opposite tails of automation processes: the front end of self-service checkouts and the back end of content moderation. This juxtaposition allows us to surface three themes on how the hype around automation is enabled by human interventions: the ad-hoc sociality in situated practices of automation, …
