Rice flour generated from broken rice (brokens) has inconsistencies in functional properties. This may be due to differences in size and composition of brokens used for the flour. It is postulated that size classification of brokens can improve flour functionality. This study sought to investigate the effect of size fractionation of brokens on the functional or pasting properties of resulting rice flour. Broken rice was generated from six cultivars of freshly harvested rough rice that were dried at 25◦C in the laboratory. This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. The interview data revealed individualized needs based on the size, years in operation, and mission of each urban farmer interviewed. General needs were determined, such as market pricing, co-ops, and access to appropriate equipment, but generally …

The animal liberation movement, among other goals, seeks an end to the use of animals for food. Philosophers who write against animal exploitation agree on the goal but differ in their approaches: Deontologists argue that rearing animals for food infringes animals’ inherent right to life. Utilitarians claim that discontinuing the use of animals for food will result in the maximization of utility. Virtue-oriented theorists argue that using animals for food is an unvirtuous practice. Introduction: Framing is an important aspect of the policy process that helps the public and decision makers sort through and resolve highly charged claims about an issue. Through slight changes in the presentation of issues, a framing effect may alter public support. The way a proposed sugary drink tax is discussed in public discourse and by the media significantly influences policy acceptance. Given the public health significance of obesity and diabetes in West Virginia (WV) the study of media frames employed to represent a sugary drink tax policy is useful.

In this brief, Jess Carson explores the food landscape of New Hampshire, documenting where lower incomes and low population density might lead to food insecurity, and mapping the locations of various food sources. Much of the northern and western parts of the state have high proportions of low-income residents and low population density, compared with more southern parts of the state. In terms of food sources, retail locations roughly mirror the state’s population distribution, with many options throughout the southern tier of the state and concentration around the Interstate 93 corridor into Northern New Hampshire. Background: Food insecurity amongst South Asian Americans is a major public health issue. The South Asian American (SAA) community is the third largest Asian community in the United States. Despite this fact, very few specific studies have been conducted to investigate the food needs and barriers that exist within the SAA community so as to successfully help them improve dietary habits.

This thesis focuses on the adverse health impacts food systems have on Latinx immigrant communities. Marquez looks closely at emergency services programs using the food bank run by the Our Lady of the Pillar in Half Moon Bay, California, and interviewed five Latina immigrants from Mexico and Central America. While the food banks provided these families with fresh produce, the women expressed that it is substandard to the produce in their home countries. However, women are not meeting these rates because they are not receiving enough support from their communities. Societal support is essential to successful breastfeeding rates. It is known that lack of sleep correlates with more stress throughout the day. In this unique study, we utilize participants smartphones to complete surveys through a hyperlink via text message. The use of smartphones could help because stress and sleep can only be measured at a moment’s notice. A sample of 8 participants were assessed for Pittsburgh Sleep Quality Index (PSQI), Perceived Stress Scale (PSS), College Student’s Stressful Event Checklist (CSSEC) along with their height, weight, and blood pressure at baseline. Cooking Lessons: Oral Recipe Sharing In The Southern Kitchen, Alana Claxton

This study analyzes oral recipe sharing practices as they emerge in Southern cooking. Researcher and participants were immersed in cooking recipes together in a qualitative research method that combined interactive interviewing with sensory ethnography. Findings revealed a category of oral recipe sharing practices that is missing from the literature: cooking lessons. This study identified cooking lessons as a distinct recipe sharing practice and worked to further operationalize and concretize such practices in hopes of spurring further research.

The purpose of this pilot study was to understand student awareness of food insecurities. Subjects for the study were students enrolled in a Foundations in Human Sciences course at a university located in East Texas (n=55). Students were asked to complete an online survey concerning knowledge of food insecurities, impacts of budgeting on food buying, previous personal food insecurity, skipped or had less nutritious meals due to the cost, and the food pantry on campus.

Lithuania hosts a diversity of places that offer consumers a taste of local food, which appear to mirror the recent popularity of local and alternative food initiatives globally. In this paper we show that the proliferation of local foods in the region is not a novel phenomenon, nor is it solely a manifestation of taste preferences or identities associated with food. Drawing on the growing scholarly work on the role of infrastructures in mediating social, economic and political relations, we conceptualize the taste for local food as embedded in broader networks and reproduced through material facilities.
