Menus of the 21st Century

Barry Fitzgerald and Claire-Marie Thomas's neighbourhood bistro has been a cornerstone of the Dublin dining scene since opening, in 2015, and is a major part of the new wave of restaurants taking the capital up several notches on a globally recognised level. It's still as good as ever and not sitting still for a second. Sunday lunch here is the ultimate reward after a trying week.

The Legal Eagle Restaurant Menus 2020, Legal Eagle

Menus of the 21st Century

If only all pubs could grow up to be like this revamped veteran beside the Four Courts. The evolution of the Legal Eagle under the talented restaurateur Elaine Murphy put a dream list of Irish food, craft beer and cider, and gutsy flavours into the spotlight. There are toasties here and cote de boeuf for a spendy splurge, continuing Murphy's theme of unpretentious, always tasty Irish food.

Menus of the 21st Century

It's the small touches that I remember from a lovely meal in this Drogheda restaurant: creative, ambitious ideas like the smoked oyster mayonnaise for dipping pencil thin bread sticks baked in the sister Brown Hound bakery, next door. This is a restaurant that started out great and keeps getting better.

Menus of the 21st Century

Jess Murphy isn't the sort of chef who'll fire off an email to a supplier and wait for the boxes to arrive in the door. She's more likely to pull on her wellies, zip up her orange anorak and go down to the farm to see and taste it. If there were a Pulitzer prize for provenance, then the Irish Times cookery writer would be a contender. It's the starting point that makes the food in her Galway restaurant sing.

Ard Bia At Nimmos Restaurant Menus 2020, Ard Bia At Nimmos

Menus of the 21st Century

Aoibheann McNamara is a bona fide trailblazer. Her team at Ard Bia, led by the restaurant's manager, Amelia Colleran, take inspiration from McNamara's love of travel and slow food when it comes to their menu. Vegans will love their vegan breakfast and daily vegan stew of the day; nonvegans will love Middle Eastern and Mediterranean inspired dishes featuring the best of Irish ingredients, such as Gubbeen cheese, Hegarty cheddar, Colleran's ham, Burren Smokehouse salmon and Galway goat's yogurt. Even after nearly two decades of serving food in Galway, the Ard Bia family still have their finger firmly on the pulse.

Pudding Row Cafe Menu 2020, Pudding Row

Menus of the 21st Century

The buzz of conversation as you walk up the stairs into this first floor cafe is the sound of summer. A trip (or several) to Pudding Row has become an unmissable part of family stays in Sligo. A perfect day involves wrestling a surfboard in Inniscrone for a couple of hours and then heading over to Easkey rubbery-kneed with the hunger, to tuck into Dervla James's cooking. I'm already planning this year's visit.

Ubh Cafe Menu 2020, Ubh Cafe

Menus of the 21st Century

Having paid her dues working in fine dining, the pastry chef Emma Spain decided to rediscover her passion for a simpler approach to cooking by opening Ubh, in early 2017. Her partner, Shane Byrne, roasts the coffee while their team of cooks, baristas and floor staff work with Spain to design a menu that changes every other week. On the roster are Dunlavin Dairy milk, Gubbeen cheese and chorizo, Toons Bridge ricotta, Garryhinch Wood mushrooms, local egg supplier Chick O'Loughlin (best name ever for an egg supplier?) and local Polish bread baker Richard Kamola. Regulars are obsessed with their mushrooms …

Ox Restaurant Menu 2020, Ox Restaurant

Menus of the 21st Century

Chefs still get in a spin about fine dining in Ireland, try too hard, throw too many things into Squeezy bottles and get so stressed about it all that you can nearly taste the hydrocortisone on the plate. Stephen Toman knew exactly what he wanted to do in Ox when he opened it with the king of front of house Alain Kerloc'h six years ago. The aim was to keep getting better. And it has. Ox is wonderful.

Canteen Celbridge Restaurant Menu 2020, Canteen Restaurant

Menus of the 21st Century

Some chefs still think "posh" food must involve ingredients from high on the hog, the fois-gras-and-fillet-of-beef school of cooking where it feels like an algorithm set to bling has composed the menu. James Sheridan's menus are always interesting and personal, not in a whacky fashion, but in a "here's a chef who's thinking" sort of way. Sheridan's partner, Soizic Humbert, brings total professionalism to front of house. They're a great team, and this is a great restaurant.

Variety Jones Restaurant Menu 2020, Variety Jones

Menus of the 21st Century

We are barely two generations removed from people who learned instinctively how to cook over fire, the predominant method of most Irish households. Knowing how fire works is a central plank of Variety Jones, a wonderful addition to Thomas Street in Dublin. The fire became central almost accidentally when Keelan and Aaron Higgs, who are brothers, couldn't get their gas hob connected. Now it's a crucial part of the wonderful cooking that's happening here.

Gertrude Restaurant Menu 2020, Gertrude Restaurant Jan 2020

Gertrude Restaurant Menu 2020, Gertrude Restaurant

Menus of the 21st Century

The first proper restaurant from the 3fe coffee roastery was planned with children (and their food - and wine-loving parents) very much in mind. The spacious interior is buggy friendly and has high chairs aplenty as well as a comfortable nappy-changing facility. Even better than all of that is that children aren't condemned to chicken nuggets and chips. Half-portions of everything on the adult menu are available at half-price, and there's a simplified menu, with beans on toast and pancakes, in case your mini-me doesn't feel up to the pork tonkatsu sandwich or the duck buns - but why wouldn't …

Overends Kitchen Menu 2020, Overends Kitchen

Menus of the 21st Century

Children get excited about food in a way that more jaded adults sometimes miss out. Airfield is a working model farm where warm eggs can be collected and milking watched, food grown, or mooing within earshot of this lovely cafe. The food in Overends Kitchen is as impressive as the farm. Sunday lunch is a particular favourite, and the Woolapalooza Festival gets better every year.

Urban Green Space: Mitigator Or Multiplier Of Inequality In The Denver Metropolitan Area?, Joshua Charles Baldwin Jan 2020

Urban Green Space: Mitigator Or Multiplier Of Inequality In The Denver Metropolitan Area?, Joshua Charles Baldwin

Electronic Theses and Dissertations

Studies have shown that communities of color and low-income populations are likely to live in neighborhoods that lack access to quality green spaces, unable to directly benefit from the environmental, recreational, and cultural services they provide. The goal of this research was to determine if the green space inequality patterns seen globally and nationally exist in the Denver Metropolitan Area. Using an existing green space dataset, ecosystem services fieldwork, GIS digitizing, and bivariate correlation analysis I uncovered numerous green space inequalities based on proximity, acreage, and quality. Key findings included 1) Lakewood’s Hispanic and less-educated populations have relatively little access …

Ayahuasca’S Religious Diaspora In The Wake Of The Doctrine Of Discovery, Roger K. Green Jan 2020

Ayahuasca’S Religious Diaspora In The Wake Of The Doctrine Of Discovery, Roger K. Green

Electronic Theses and Dissertations

‘Ayahuasca’ is a plant mixture with a variety of recipes and localized names native to South America. Often, the woody ayahuasca vine (Banisteriopsis caapi) is combined with chacruna leaf (Psychotria viridis) in a tea, inducing psychedelic effects among its users. While social usage varies among Indigenous Peoples of South America, during the twentieth century new religious movements in Brazil began employing the mixture as religious sacrament. Additionally, various centers for ayahuasca “healing” have emerged both inside and outside of the Amazon Rainforest, frequently with the aim of helping people addicted to other substances. As interest grew, …

An Examination Of Relational Health, Belonging, And Self-Compassion In Chinese International Students, Elizabeth A. Harris Shaffner Jan 2020

An Examination Of Relational Health, Belonging, And Self-Compassion In Chinese International Students, Elizabeth A. Harris Shaffner

Electronic Theses and Dissertations

Chinese international students (CISs), the largest segment of international students coming to the US to study at institutions of higher education (IIE, 2016), are reported to experience more acculturative stress than other international students because of the vast differences in social and cultural norms between the United States and China (Li & Glasser, 2005; Yeh & Inose, 2003). The present study used Relational-Cultural Theory (RCT) as the framework to explore the ways undergraduate CISs struggle and thrive in the face of acculturative stress and to understand how positive and negative outcomes are associated with their relational health, sense of campus …

Tempered Radicalism And Intersectionality: Scholar-Activism In The Neoliberal University, Jennifer Richter, Flora Farago, Beth Blue Swadener Jan 2020

Tempered Radicalism And Intersectionality: Scholar-Activism In The Neoliberal University, Jennifer Richter, Flora Farago, Beth Blue Swadener

Faculty Publications

Using a collaborative critical personal narrative methodology grounded in intersectionality, we interrogated tensions in identifying ourselves as tempered radicals and scholar-activists who were involved in a local university-community activist organization. We assert the value of informal activist spaces within the university and identify issues related to the lack of recognition of scholar-activism as legitimate scholarship, including the paradox of universities as colonizing and liberatory spaces for community engagement and activism. Our themes highlight how mentorship affects scholar-activism and how activism transforms and disrupts the neoliberal university. Yet, activism is rendered invisible, making homeplaces for scholar-activism critical for students, faculty, staff, …

Normalizing Deviants: Notes On The De-Stigma Trend, Melissa F. Lavin, Medora W. Barnes Jan 2020

Normalizing Deviants: Notes On The De-Stigma Trend, Melissa F. Lavin, Medora W. Barnes

2020 Faculty Bibliography

This article explores destigmatization discourses in the United States in the early 21st century, as social and political strategies and as narrative social movements unto themselves. We argue that the first decades of the new century see a trend of marginalized actors across many categories, including queer marriage, drugs, (discreditable) mental illness and (discredited) other areas of identity and disability, make narrative attempts to neutralize their “deviant” identities. We argue that de-stigmatization has occurred through the successful use of medicalization and assimilation framing of de-stigma discourses. Assimilationist frames increase “liberal” emphasis on actionable outcomes of de-stigma, like cultural access (i.e. …

Clearing The Field: How Do Presidential Primary Candidates Win Big On Super Tuesday?, Colin D. Swearingen Jan 2020

Clearing The Field: How Do Presidential Primary Candidates Win Big On Super Tuesday?, Colin D. Swearingen

2020 Faculty Bibliography

In presidential primaries, Super Tuesday elections play a significant role in winnowing candidate fields and establishing nomination frontrunners. Despite their importance, scholars know little about why and how candidates win or lose the states comprising these events. This study explores which factors help explain candidate performance in Super Tuesday primaries between 2008 and 2016. Using pooled cross-sectional time-series analysis, the results indicate three key drivers of Super Tuesday success: candidate viability, public attention, and media attention. These findings imply that presidential campaigns continue to be complex electoral events beyond the early primary states and suggest that underdog candidates can still …

Co-Navigating The Complexities Of School Reform: The Establishment And On-Going Maintenance Of Relational Trust In School Reform Efforts, Sarah C. Lightener, Sara K. Parrish, Robert Drewry, Patricia L. Scharer Jan 2020

Co-Navigating The Complexities Of School Reform: The Establishment And On-Going Maintenance Of Relational Trust In School Reform Efforts, Sarah C. Lightener, Sara K. Parrish, Robert Drewry, Patricia L. Scharer

2020 Faculty Bibliography

The purpose of this research was to examine the ways in which the principal and literacy coach collectively developed and maintained relational trust in order to establish school literacy reform efforts. Drawing from a larger set of data, we employed qualitative methods to explore interviews and surveys from the principals and literacy coaches at two different schools who were able to implement literacy reform for several consecutive years. The relational trust established between the coach and principal enabled them to co-navigate issues that might have otherwise impeded literacy reform efforts in their school. Acting together, the principal and the coach …

Naturalness And The Legitimacy Of Thoroughbred Racing: A Photo-Elicitation Study With Industry And Animal Advocacy Informants, Iris Bergmann Jan 2020

Naturalness And The Legitimacy Of Thoroughbred Racing: A Photo-Elicitation Study With Industry And Animal Advocacy Informants, Iris Bergmann

Horse racing and competitions

The idea of what is natural has particular relevance in the thoroughbred racing and breeding discourse. It guides breeding regulations; influences how the thoroughbreds’ behaviour is perceived and has implications for husbandry, handling, training and racing practices. This study investigates how key industry and animal advocacy informants based in the US, Australia and the UK conceptualise naturalness within the context of common racing practices that potentially impact the horses’ welfare. The informants were interviewed using semi-structured interviewing and photo-elicitation. Four common images of thoroughbreds on race day were presented to elicit the informants’ responses. Differences emerged between how the two …

Social Learning In Solitary Juvenile Sharks, Catarina Vila Pouca, Dennis Heinrich, Charlie Huveneers, Culum Brown Jan 2020

Social Learning In Solitary Juvenile Sharks, Catarina Vila Pouca, Dennis Heinrich, Charlie Huveneers, Culum Brown

Social Behavior Collection

Social learning can be a shortcut for acquiring locally adaptive information. Animals that live in social groups have better access to social information, but gregarious and nonsocial species are also frequently exposed to social cues. Thus, social learning might simply reflect an animal's general ability to learn rather than an adaptation to social living. Here, we investigated social learning and the effect of frequency of social exposure in nonsocial, juvenile Port Jackson sharks, Heterodontus portusjacksoni. We compared (1) Individual Learners, (2) Sham-Observers, paired with a naïve shark, and (3) Observers, paired with a trained demonstrator, in a novel foraging task. …

Richard A. Harrison Symposium

The Harrison Symposium celebrates independent and collaborative student research in the Social Sciences and Humanities. The Harrison is usually held as an annual conference in May, but this year’s shift to remote teaching and the new coronavirus pandemic eliminated the opportunity for in-person presentations. Instead of cancelling the event, students nominated by faculty members were invited either to participate in next year’s Harrison, or to contribute to the volume you are now reading. Reimagining the Harrison as a written artifact was inspired by the 1997 Harrison Symposium. In the early years of the conference, the Dean of Faculty Richard A. …

Transitions Into Higher Education, Brynn M. Huguenel, Colleen S. Conley Jan 2020

Transitions Into Higher Education, Brynn M. Huguenel, Colleen S. Conley

Psychology: Faculty Publications and Other Works

The transition into higher education is internationally recognized as a critical developmental period characterized by changes in contexts, identities, relationships, roles, and responsibilities. Further, it typically coincides with the developmental progression from late adolescence to emerging adulthood, which brings its own challenges and opportunities for success as well as struggle. This confluence of disruption and change can contribute to psychological upheaval or reveal resilience. The entry begins with a discussion of the current state of higher education enrollment, and describes the transition to higher education within various key domains, including considerations of identity and development in emerging adulthood, relational and …

Validating The Chinese-Translated Version Of The Spiritual Health And Life-Orientation Measure (Shalom) Amongst The Chinese Youth Populations In 2010 And 2018, Joe Pong, Chi Hung Leung, Ching-Leung Lung

Faculty of Management & Hospitality (THEi)

This cross-sectional study validated the Chinese-translated version of the Spiritual Health and Life-orientation Measure (SHALOM) in two samples of university students in Hong Kong. The first sample comprised 546 Chinese university students who were educated under the old educational system (i.e. 3 + 2 + 2 + 3 scheme) and are known as ‘Generation Y’. Data for this sample were collected in 2010 for Fisher and Wong. The second sample involved 474 Chinese university students educated after educational reform in 2009 (i.e. 3 + 3 + 4 scheme) collected in 2018. Results in both years revealed high internal consistency. Whereas …

When Statistical Significance Is Not Enough: Investigating Relevance, Practical Significance, And Statistical Significance, Kaveh Mohajeri, Mostafa Mesgari, Allen S. Lee Jan 2020

When Statistical Significance Is Not Enough: Investigating Relevance, Practical Significance, And Statistical Significance, Kaveh Mohajeri, Mostafa Mesgari, Allen S. Lee

Information Systems Publications

The notions of significance and relevance have provoked much controversy and confusion among those who conduct and those who are intended to be informed by quantitative research in the information systems (IS) field. The history of quantitative research in the IS field and beyond reveals not only disputes over the adequacy of statistical significance to warrant the scientific merits of research, but also pleas for drawing attention to practical significance, as well as a lack of distinction between relevance and practical significance. This essay offers a remedial, overarching account. We establish the position that statistical significance, practical significance, and relevance …
