The study of emulsions and emulsification is of very great theoretical and practical interest. From the standpoint of pure science it throws much light on the problems of surface tension, surface concentration, absorption, surface films, electrical double layers. Brownian movement, and the general theory of disperse systems and colloids. It is also of importance in biological science, e.g., the adsorption of fats and the permeability of membranes. When industrial and applied science are considered, it is remarkable how many subjects of interest and importance are dependent on a knowledge of the formation, behavior, and stability of emulsions.
