By definition we find "An emulsion being a system containing two liquid phases, one of which is dispersed as globules in the other. That liquid which is broken up into globules is termed the dispersed phase, whilst the liquid surrounding the globules is known as the continuous phase or dispersing medium". If a small portion of benzene is poured into a large volume of water, it can be emulsified by simply shaking or agitating. Again, chloroform and water with shaking gives an emulsion.

The purpose of this thesis is to determine how gelatin behaves in the presence of various acids and alkalis. It is possible to titrate gelatins with acids and bases and thereby determine the relation of the pH of the solution to the amounts of acid or base combined with the gelatin. If the results are plotted, a titration curve is obtained, the value of which gives the acid and base combining properties of a certain gelatin.

The measurement of the ·viscosity of liquids by means of capillary tubes has been carried on for more than a hundred years. It was not, however, until 1846 that the results of Poiseuille's research were given to the public. For the comprehensive study he made of the problem, the concept of the laws controlling viscometry flow is attributed to him. The study of the same problem. was continued by many others in subsequent years. Blood transfusion, within recent years, has become a subject of paramount therapeutic importance. A few years back the technique of blood transfusion was so difficult that there were only a relatively few who possessed the requisite skill to perform the operation and then not always successfully.
