Naturally occurring compounds and lifestyle modifications as combination and mono-therapy are increasingly used for dyslipidemia. Specficially, phytosterols and fatty acids have demonstrated an ability to modulate cholesterol and triglyceride metabolism in different fashions. In two separate studies, the lipid-lowering effects of black raspberry seed oil and three different phytosterol stearates were examined in order to elucidate the effects of these dietary components and the factors influencing their therapeutic actions.

The first study examined high cholesterol diets supplemented with crude and refined black raspberry seed oils, coconut oil or soybean oil. The crude and refined raspberry seed oil (RSO) treatments significantly …

Research was conducted to determine the prevalence of cardiovascular disease risk factors in U.S. children ages 6-11 and associations with body fat, diet, and physical activity. Data for 685 children ages 6-11 was obtained from the National Health and Nutrition Examination Survey (NHANES). NHANES data was examined to determine the prevalence of cardiovascular disease risk factors in these children, the impact of indicators of body fat on cardiovascular disease risk factors, the association between cardiovascular disease risk factors and dietary components, and the relationship between physical activity and cardiovascular disease risk factors among U.S. children. Validation of the nutrition standardized language (SL) confirms the language is accurate for use in practice, research, and policy. Nutrition diagnostic terms are identified by concept analysis using literature review and experts to distinguish and differentiate one nutrition problem from a similar or related problem. The Fehring models, used in nursing diagnosis validation research, are adopted to validate the SL nutrition diagnostic terms using experts and weighted inter-rater reliability ratios. In the first phase of validation research, diagnostic terms are validated by experts using the Diagnostic Content Validity Model (DCV). Tell mediated immunity requires T cell receptor (TCR) cross-reactivity, the mechanisms behind which remain incompletely elucidated. The αβ TCR A6 recognizes both the Tax (LLFGYPVYV) and Tel1p (MLWGYLQYV) peptides presented by the human class I MHC molecule HLA-A2. Here we found that although the two ligands are ideal structural mimics, they form substantially different interfaces with A6, with conformational differences in the peptide, the TCR, and unexpectedly, the MHC molecule. The differences between the Tax and Tel1p ternary complexes could not be predicted from the free peptide-MHC structures and are inconsistent with a traditional induced-fit mechanism. The purpose of this project was to investigate interest of Midwestern dietitians in online omega-3 fatty acids information and education resources useful within their work setting. Qualitative in-depth interviews with ten registered dietitians, selected from the Nebraska Dietetic Association online membership map were used to identify themes useful in website development. Twelve overarching themes were identified. Valued online features include information that is easy to access, scan, save, print, and send. Findings highlight the need to reformat current online information to accommodate time sensitive search methods used by dietitians. This descriptive survey invited all Board Certified Specialists in Gerontological Nutrition (CSG) to participate by mail. An instrument was developed that included the definition, etiologies, and signs and symptoms of the diagnosis with items added from literature review. CSG rated how common or characteristic each item is to the diagnosis using a 5 point Likert scale. A weighted response for each item was used to calculate a Diagnostic Content Validity (DCV) score. This study investigated leadership development of Registered Dietitians in nationally elected or appointed leadership positions of the American Dietetic Association. An explanatory sequential mixed method design: participant selection model was used collecting qualitative data after a quantitative phase. Demographic data were collected via a mailed survey questionnaire followed by, with consent, a web based validated Sentence Completion Test International- Maturity Assessment Profile Research Version (2) (SCTi- MAP) to determine their stage of leadership development. A necessary feature of the immune system, TCR (T-cell receptor) cross-reactivity has been implicated in numerous autoimmune pathologies and is an underlying cause of transplant rejection. Early studies of the interactions of αβ TCRs (T-cell receptors) with their peptide–MHC ligands suggested that conformational plasticity in the TCR CDR (complementarity determining region) loops is a dominant contributor to T-cell cross-reactivity. Omega-3 fatty acids are essential to health and provide cardio-protective benefits. To estimate omega-3 fatty acid dietary intake, we developed a semi-quantitative food frequency questionnaire (FFQ) and pilot tested its reliability and validity in a convenience sample of cardiac patients in the Midwest. The FFQ was developed using the USDA Nutrient Database for Standard Reference and the ESHA Food Processor, ESHA Research, Salem, Oregon. Three 24-h recalls and two administrations of the FFQ two weeks apart were obtained by a dietitian by phone and home visit from 28 volunteers. A subset of registered dietitians (RDs) is known to practice at an advanced level, but a clear educational pathway supporting advanced medical nutrition therapy practice has not been identified. Thus, an electronic survey was designed to investigate interest of clinical RDs, employers, and educators in advanced practice competencies and professional doctorate degree programs in clinical nutrition. Usable responses were obtained from 440 of 978 (45%) RDs, 61 of 107 (57%) employers, and 76 of 114 (67%) educators. The purpose of this research was to generate a model of advanced medical nutrition therapy (MNT) practice based on descriptions of their clinical activities provided by advanced- level MNT practitioners. A qualitative approach using grounded theory methodology was employed. The model of advanced MNT practice was based on interviews with 21 credentialed advanced practice registered dietitians from across the United States and Canada. Verbatim transcripts of the interviews were coded for aggregation into themes and subthemes. The resulting model included a single overarching theme: using initiative to achieve autonomy. The purpose of this pilot study was to test the validity and reliability of a quantitative n-3 fatty acid food frequency questionnaire (FFQ) for later use with larger groups of individuals. A convenience sample of heart patients provided dietary data via three 24-hour food recalls and FFQs. Participants were women (n = 17) and men (n = 11), 43 to 77 years of age. In eukaryotic cell nuclei, DNA associates with the core histones H2A, H2B, H3 and H4 to form nucleosomal core particles. DNA binding to histones is regulated by posttranslational modifications of N-terminal tails (e.g., acetylation and methylation of histones). These modifications play important roles in the epigenetic control of chromatin structure. The objectives of the current study were to investigate the consumption and the food sources of n-3 FAs in two samples of elderly men living in different geographic locations (coastal and internal regions) of Saudi Arabia. This study examined the effectiveness of consuming omega-3 fatty acid-enriched eggs (Omega Eggs) in increasing total diclary omega-3 fatty acids. Also examined was the impact of Omega Egg consumption on serum lipids. Sixteen hypercholesterolemic men and women with baseline serum total cholesterol concentrations of 5.17-7.76 mmol/L (200-300 mg/dL) followed the National Cholesterol Education Program Step I diet guidelines under the following conditions: (a) Step 1 diet without eggs, (b) Step I diet plus 12 regular eggs per week, and (c) Step I diet plus 12 Omega Eggs per week. The purpose of this project was to determine if the addition of a laboratory measurement, i.e., measurement of serum cholesterol, would increase the effectiveness of nutrition counseling in young men. Subjects were a random sample of 45 healthy male students from a Midwestern university, between the ages of 20 and 25 who were consuming >30% of kcal from fat. Low birthweight (LBW), defined as an infant weighing less than 2,500 grams (1), is a major determinant of infant mortality and contributes to infant and childhood morbidity and increased healthcare costs (2-4). LBW occurs due to preterm delivery (length of gestation less than 37 weeks), growth retardation, or both (2). In the United States, higher rates of LBW occur in urban areas with high concentrations of low-income ethnic minorities (5). Consumption of long-chain n-3 polyunsaturated fatty acids (n-3 PUFA) is low among certain population subgroups in the United States, especially in people living in Midwestern states and those who dislike fish. Therefore, there is a need to identify acceptable food sources of n-3 PUFA. Vegetable oils, such as canola and soy, provide some n-3 fatty acids. However, these sources are high in n-6 fatty acids and there is concern that they may have detrimental side effects. Dietary intake of omega-3 fatty acids (n-3 PUFA) decreases the risk of heart disease, inhibits the growth of prostate and breast cancer, delays the loss of immunological functions, and is required for normal fetal brain and visual development. The US has not established a recommended daily intake for n-3 PUFA. However, Canada has established the Canadian Recommended Nutrient Intake (CRNI) at 0.5% of energy. Dietary sources of n-3 PUFA include fish, chicken, eggs, canola oil, and soybean oil. Food consumption studies in the US indicate that the majority of Americans do not meet the CRNI for n-3 PUFA. The objectives of this project were to detennine the omega-3 fatty acid (ω-3 FA) consumption of low-income pregnant women, and to identify food sources of ω-3 FA in their diets. Thirty women provided three days of dietary intake that were analyzed using the Food Processor Plus computer program. Mean daily consumption of ω-3 FA was 1.060 ± 0.030 g/day. The major form of the ω-3 FA was α-linolenic acid (α-LNA; 93%), with less from eicosapentanoic acid (EPA; 2%), and docosahexanoic acid (DHA; 5%). Comparison of five methods for calculating gas chromatographic peaks (disc integration, triangulation, peak height X width at half height, Rt X peak height, and peak height) shows no significant difference in the calculated results when aldrin, heptachlor epoxide, and dieldrin are injected into a gas chromatograph equipped with electron capture detector.

Problems are associated with the calculation of toxaphene, chlordane, DDT, and BHC. The author makes suggestions for calculating these four residues when present individually and in combinations with other pesticides. Use of the last four toxaphene peaks compares favorably with results obtained by using the entire toxaphene curve. …

Diphenylamine-ZnCI, has been evaluated as a chromogenic agent for detection of toxaphene, DDT, and chlordane on Al2O3 a thin layer plates. Characteristic colors were obtained for these pesticides; a lower level of about 5 μg was detectable. Color reactions of 34 pesticides at the 20 μg level are presented.

There has been much lay and medical concern regarding toxic effects of insecticides on the general population. In addition to direct toxic effects, it is suspected that insecticidal application has deleterious physical effects on persons with respiratory diseases. To evaluate some of these problems, the authors have attempted to quantitate actual absorption, symptoms, and laboratory evidence of intoxication in persons with varying degrees of exposure to parathion. By means of controlled observations, the respiratory effect of application of this compound on persons with bronchial asthma was also measured. Some organic phosphorus pesticides have been determined successfully by polarography (1-7). However, in most cases the methods were used to determine the pesticide in commercial formulations. Little has been reported on the polarographic determination of microgram amounts of these pesticides such as those encountered in pesticide residue analysis.

Many of the methods used for the determination of these pesticides are nonspecific. They are based on cholinesterase assay (8- 12), radioactive tracer analysis (13, 14), total phosphorus (15-17), and paper chromatography (18-24).
