Objective: To determine current food handling practices, knowledge and beliefs of primary food handlers with children 10 years old and the relationship between these components.

Design: Surveys were developed based on FightBac!™ concepts and the Health Belief Model (HBM) construct.

Participants: The majority of participants (n= 503) were females (67%), Caucasians (80%), aged between 30 to 49 years old (83%), had one or two children (83%), prepared meals all or most of the time (76%) and consumed meals away from home three times or less per week (66%).

Holocarboxylase synthetase (HCS) catalyzes the binding of biotin to lysine (K) residues in histones H3 and H4. Histone biotinylation marks play important roles in the repression of genes and retrotransposons. Preliminary studies suggested that K16 in histone H4 is a target for biotinylation by HCS. Here we demonstrated that H4K16bio is overrepresented in repeat regions {pericentromeric alpha satellite repeats; long terminal repeats (LTR)} compared with euchromatin promoters. H4K16bio was also enriched in the repressed interleukin-2 gene promoter. The enrichment at LTR22 and promoter 1 of the sodium-dependent multivitamin transporter (SMVT) depended on biotin supply; and was significantly lower in fibroblasts …

Naturally occurring compounds and lifestyle modifications as combination and mono-therapy are increasingly used for dyslipidemia. Specficially, phytosterols and fatty acids have demonstrated an ability to modulate cholesterol and triglyceride metabolism in different fashions. In two separate studies, the lipid-lowering effects of black raspberry seed oil and three different phytosterol stearates were examined in order to elucidate the effects of these dietary components and the factors influencing their therapeutic actions.

Research was conducted to determine the prevalence of cardiovascular disease risk factors in U.S. children ages 6-11 and associations with body fat, diet, and physical activity. Data for 685 children ages 6-11 was obtained from the National Health and Nutrition Examination Survey (NHANES). NHANES data was examined to determine the prevalence of cardiovascular disease risk factors in these children, the impact of indicators of body fat on cardiovascular disease risk factors, the association between cardiovascular disease risk factors and dietary components, and the relationship between physical activity and cardiovascular disease risk factors among U.S. children. Carbohydrates are a major energy source for the human body and particularly glucose is the only energy source for the brain. Thus glucose metabolism is important to maintain normal brain function. Evidence showed insulin resistance and diabetes are associated with cognitive decline and a large amount of highly processed carbohydrate intake; in other words, a high glycemic load diet, which increases blood glucose faster and insulin demand, is associated with increased risk of insulin resistance and diabetes.

Purpose: To compare selected food /nutrient consumption between families that educate their children at home with those that educate their children in the public school system.

Methods: The study sample included 112 children aged 7-11 years in Fayette Co Kentucky. The children were divided into groups according type of education. There were 65 home-schooled children and 47 children who attend public school. Subjects recorded their dietary intake for one week. The data were analyzed using Nutrition Data Software for Research (2006). Comparisons were made for the intake of selected nutrients using two tailed independent sample t-tests.

Demographic, socio-economic, attitudinal, dietary, health behavioural and anthropometric data were collected from 221 “disadvantaged” and 74 “advantaged” women aged 18-35 years across Dublin, according to the provisions of a novel socio-economic sampling frame. Internal and external validation techniques established the dietary assessment method of choice and identified “valid” dietary reporters (n=216, 153 disadvantaged, 63 advantaged) among this sample. Five qualitative focus groups (n=5-8 per group) were also conducted among disadvantaged women to examine their diet and health behaviour choices. Increasing numbers of people worldwide are being diagnosed with Celiac Disease, an intestinal disorder caused by ingestion of foods containing gluten. Traditional baked goods are prepared using wheat flour that contains gluten. Literature suggests that the absorptive surface of the small intestine is damaged in people susceptible to gluten. Nutrition implications associated with nutritional care of the high-risk infant and obstetric population are emphasized. Statistical information was gathered concerning the population growth of multiple births over the past twenty years. Literature to identify both maternal and neonatal risk factors associated with multiple gestation pregnancies was also reviewed. Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The purpose of this study was to examine the correlation between dietary trans fatty acids and levels of total serum cholesterol, high and low density lipoproteins, and the ratio of total serum cholesterol to HDL in apparently healthy post-menopausal women.

Subjects (n = 21) were current members of the Eastern Illinois University Adult Fitness Program. All were moderately active Caucasian women determined to be post-menopausal and not taking hormone replacement therapy or lipid lowering medications. Mean age of the subjects was 69.1 ± 9.1 years.

Few studies have examined the risk factors associated with reduced bone mass in Asians, but none specifically investigated Singaporean Chinese women. The subjects in this study were 16 premenopausal, 8 perimenopausal and 13 postmenopausal women who participated in a larger study which began in 1986. Bone density was measured in 1986 and 1992. Dietary and lifestyle data were collected for this study by personal interview. Association between dietary and lifestyle factors and bone density variables and change in bone density at the end of the 6 year period were assessed by univariate regression analyses.

Relationships between dietary nutrients and plasma and fecal estrone, estradiol-17β, testosterone, and plasma prolactin levels were studied in young Seventh-day Adventist men: 18 nonvegetarians (NV), 20 lacto-ovovegetarians (LOV), and 15 vegans (V). Blood samples and 3 d dietary records were obtained. Contemporaneously collected diet composites and stool samples were analyzed for fiber. The vegetarians consumed significantly more fiber than the omnivores, while NVs and LOVs consumed more saturated fat than the Vs. Although plasma steroid hormone status did not differ, the Vs had significantly higher fecal estrogen levels than the NVs or LOVs. Plasma prolactin levels were significantly higher in …

This study was designed to investigate the effectiveness of dextrose on cardiovascular endurance. The subjects were nineteen male students enrolled at Loma Linda University in Riverside, California. The subjects were exercised to their maximum while being tested on the treadmill.· Subjects were each tested twice. Thirty minutes before exercising, they ingested one hundred grams of dextrose for one test and ten ounces of sugar-free Kool-aid for the second test. The difference in exhaustion times was then recorded.

The data indicated that dextrose ingestion decreased exhaustion time on the treadmill. Subjects were able to exercise for a longer period of time …

In this study, the copper status of 18 vegetarian and 17 non-vegetarian men were compared. Copper status was assessed by determining red blood cell superoxide dismutase (RBC-SOD) activity and plasma copper. Plasma copper levels were measured by atomic absorption spectroscopy. Plasma cholesterol, triacyclglycerols, HDL cholesterol, LDL cholesterol VLDL cholesterol were also determined. Twenty-four hour recalls and three-day food records were obtained to determine copper, zinc, energy, protein, fat, fiber, saturated fat, oleic acid, linoleic acid and cholesterol intake. Non-vegetarians had a significantly higher plasma cholesterol and LDL cholesterol than vegetarians. They also had a significantly higher cholesterol, saturated fat, percent …

A total of 18 obese men and women volunteered and participated in a seven-day protein sparing modified fast providing 400 calories per day. The subjects were concurrently participating in an eight-week weight control program combining the facets of nutrition education, group therapy, and values clarification. The modified fast, which was optional, was conducted during two different time periods with a conventional low calorie diet prescribed during the four-week interval.

Studies were conducted utilizing albino rats to determine the relationship of voluntary alcohol consumption with various dietary additives and exposure to cigarette smoke in combination with poor quality diets. Male, Sprague-Dawley rats, from weanling age to 100 grams, were given the various experimental diets and a free fluid choice of ten per cent ethanol or tap water. Fluid intakes were recorded and analyzed statistically. Individual variation was common with a generally low level of alcohol consumption when rats were fed a poor quality diet of common United States foods. The first study was designed to evaluate by the nitrogen balance method the protein quality of a pure-vegetarian diet containing about 6 grams of nitrogen per day. The group as a whole maintained nitrogen equilibrium the average being - 0.11 grams of nitrogen per day. Two subjects were not in nitrogen balance, however, factors other than diet may have contributed to these results and are discussed in the thesis. Hemoglobin, serum cholesterol and total serum proteins did not change significantly during the study. The average true digestibility of 5 of the subjects was 85 percent. This study was involved in the selection of recipes for a cookbook. Over a thousand recipes were screened from a much larger number. These recipes were processed by grouping, combining and arranging into a uniform style and format. Many recipes were revised and tested. All recipes were of a lacto-ovo-vegetarian type, free from soda, baking powder and harmful condiments and spices.

Basic ingredient cards were prepared for the IBM computer from tables of food composition. Recipe ingredient cards for each item in the recipes were also prepared. These were programmed into the computer to give the total and per serving …

The effect of a high unsaturated-low saturated fat diet on serum cholesterol levels were studied. Subjects were clinic patients receiving the following hypocholesterolmeic agents: triparanol (MER-29), diildothyroacetic acid (Diac), dextrothyroxine (d-T4) and 3-methoxy-16, alpha-methyl-1,3,5, (10)-estratriene-16 beta, 17 beta-diol (Manvene or Anvene).

Fifteen hypercholesterolemic patients, eleven of whom were diabetic, were placed on diets with prescribed amounts of unsaturated fat. The caloric distribution was 40 per cent carbohydrate, 20 per cent protein, and 40 per cent fat. The level of unsaturated fat was 70 per cent of the total fat.
