School Food Environment The Frontline For Childhood Obesity Prevention: A Mixed-Method Study Of Nutritional Competencies And Skills Of School Nutrition Professionals In Nebraska, Zainab Rida

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.

Impact Of The Home Food Environment On Dietary Intake, Obesity And Cardiovascular Health Of U.S. Children And Adolescents, Aged 6–19, Melissa A. Masters

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Youth obesity is an ongoing problem in the United States. Obese children and adolescents are likely to be obese as adults and have an increased risk of developing chronic diseases, including coronary heart disease, earlier in life. The multifactorial nature of obesity continues to challenge researchers and health professionals to determine methods for preventing and reducing childhood obesity. Research has suggested that obesity is a normal response to an “obesigenic” environment. Emerging as one of the most influential environments in obesity and behavior development is the home food environment. However, little is understood about the role of the home food …

As a result of ongoing efforts in the U.S. to promote breastfeeding as the normal way to nourish an infant, breastfeeding initiation rates are higher than they have been in decades. As the experts on food and nutrition through the lifecycle, registered dietitians (RDs) should be knowledgeable to promote and support breastfeeding. It is not well known if RDs have this knowledge. The purpose of this study was to determine the current knowledge of RDs about breastfeeding, the types of professional opportunities RDs have to promote and support breastfeeding, and the level of education RDs have to deal with breastfeeding …

Structure, Function And Diversity Of The Healthy Human Microbiome, Curtis Huttenhower, Jacques Izard Jun 2012

Structure, Function And Diversity Of The Healthy Human Microbiome, Curtis Huttenhower, Jacques Izard

Department of Food Science and Technology: Faculty Publications

Studies of the human microbiome have revealed that even healthy individuals differ remarkably in the microbes that occupy habitats such as the gut, skin and vagina. Much of this diversity remains unexplained, although diet, environment, host genetics and early microbial exposure have all been implicated. Accordingly, to characterize the ecology of human-associated microbial communities, the Human Microbiome Project has analysed the largest cohort and set of distinct, clinically relevant body habitats so far. We found the diversity and abundance of each habitat’s signature microbes to vary widely even among healthy subjects, with strong niche specialization both within and among individuals. …

Laboratory selection for resistance to starvation has been conducted under relatively controlled conditions to investigate direct and correlated responses to artificial selection. With regard to starvation resistance, there are three physiological routes by which the trait can evolve: resource accumulation, energy conservation and starvation tolerance. A majority of energetic compounds and macromolecules including triglycerides, trehalose and other sugars, and soluble protein increased in abundance as a result of selection. Movement was additionally investigated with selected males moving less than control males and selected females exhibiting a similar response to selection. Results obtained from this study supported two of the possible …

Perceived Importance And Actual Intake Of Calcium And Vitamin D In Young Female Athletes, Miriam E. Zambrano

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Calcium needs increase as a child grows. Actual intake often decreases as a child gets older, leaving his/her developing bones at risk for injury during childhood and increasing the risk of developing osteoporosis later in life. The purpose of this study was to investigate relationships between psychosocial factors influencing consumption of calcium and vitamin D-rich foods and actual intakes of these nutrients. We examined the dietary calcium and vitamin D intakes, determined serum vitamin D levels, and assessed nutrition knowledge and perception of a sample of 20 young girls participating in competitive cheerleading in Omaha, Nebraska. From this information we …

Effects Of Single Nucleotide Polymorphisms In The Human Holocarboxylase Synthetase Gene On Catalytic Activity, Shingo Esaki Aug 2011

Effects Of Single Nucleotide Polymorphisms In The Human Holocarboxylase Synthetase Gene On Catalytic Activity, Shingo Esaki

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Holocarboxylase synthetase (HCS) catalyzes the covalent binding of biotin to carboxylases and histones in eukaryotic cells. Biotinylated carboxylases play essential roles in the metabolism of fatty acids, amino acids, and glucose; biotinylated histones play essential roles in gene regulation and genome stability. HCS null individuals are not viable whereas HCS deficiency is linked to developmental delays and phenotypes such as short life span and low stress resistance. Greater than 2,500 single nucleotide polymorphisms (SNPs) have been reported for HCS, but the biological importance of these polymorphisms is unknown. We hypothesized that some of these SNPs impair catalytic activity and that …

Intervention To Increase Knowledge And Consumption Of Folate-Rich Foods Based On The Health Belief Model, Lindsay M. Labrosse Jul 2011

Intervention To Increase Knowledge And Consumption Of Folate-Rich Foods Based On The Health Belief Model, Lindsay M. Labrosse

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Folate is important in the prevention of birth defects and in the maintenance of general health. Even after mandatory fortification, many people are still not consuming the RDA of 400 mcg/day. Consuming a diet rich in naturally high-folate foods, as opposed to supplementation, may offer additional health benefits and promote an overall healthy diet.

The purpose of this pilot study was to test the hypothesis that a learner-centered educational intervention based on the Health Belief Model (HBM) will successfully increase knowledge and consumption of folate-rich foods, while increasing positive beliefs about folate and health. A two group parallel control trial …

Regulation Of Sterol Transport By Dietary Phytosterol Esters, Trevor J. Carden Apr 2011

Regulation Of Sterol Transport By Dietary Phytosterol Esters, Trevor J. Carden

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

LDL cholesterol is associated with the development of atherosclerosis and is therefore considered an important target for intervention to prevent cardiovascular diseases. The inhibition of cholesterol absorption in the small intestine is an attractive approach to lowering plasma cholesterol, one that is exploited by drug therapy as well as dietary supplementation with plant sterols. The mechanism of action of plant sterol esters (PSE) is still incompletely understood, therefore this study was conducted to test the hypothesis that hydrolysis of plant sterol esters is necessary for their cholesterol-lowering effects to be realized.

Male Syrian hamsters were fed diets containing no PSE, …

Preschool Children’S Willingness To Try And Preference For Docosahexaenoic Acid Omega-3 Foods, Bethany Joann Bettenhausen

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

During the preschool years, obesigenic eating habits are formed which are strongly associated with risk of developing chronic diseases later in life particularly cardiovascular disease. Docosahexaenoic acid (DHA) omega-3 fatty acid is a polyunsaturated fat with known benefits for heart health, brain cell structure, and retinal development. Current intakes of DHA are below recommended levels. United States (US) Midwestern children may be particularly at risk for suboptimal intakes of DHA. However, foods fortified with life’sDHATM, a product of Martek Biosciences and omega-3 eggs may provide culturally acceptable sources of DHA to Midwestern children.

Very little is known about …

Mechanisms Of Decreased Cholesterol Absorption Mediated By Phytosterols In The Intestinal Lumen, Andrew W. Brown Jan 2011

Mechanisms Of Decreased Cholesterol Absorption Mediated By Phytosterols In The Intestinal Lumen, Andrew W. Brown

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Phytosterols and their fatty acyl esters have been known for decades to lower LDL cholesterol, making them powerful nutraceuticals in lowering cardiovascular disease risk. The mechanisms by which phytosterols lower cholesterol, though, have been incompletely characterized. Three studies were executed to examine three aspects of cholesterol and phytosterol interactions in the intestinal lumen. In the first study, the ability of pancreatic cholesterol esterase to hydrolyze phytosterol esters was examined. Pancreatic cholesterol esterase hydrolyzed phytosterol esters, but the rate of hydrolysis proved sensitive to the structures of both the sterol and ester components. In the second study, cholesterol micellarization was challenged …

Regulation Of Atp Binding Cassette Transporter A1 And G1 Expression By Fatty Acids, Chai Siah Ku Aug 2010

Regulation Of Atp Binding Cassette Transporter A1 And G1 Expression By Fatty Acids, Chai Siah Ku

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

High density lipoprotein (HDL) is an atheroprotective element which is critical in the reverse cholesterol transport (RCT) pathway to eliminate excess cholesterol from the periphery of the body. A low plasma HDL cholesterol levels indicate a higher risk of getting cardiovascular diseases (CVD). Formation and metabolism of HDL largely rely on ATP binding cassette transporter A1 (ABCA1) and G1 (ABCG1) that are transporters to facilitate the efflux of cellular cholesterol to outside of cells. ABCA1 in the liver and small intestine is the major contributing factor for HDL formation. On the other hand, ABCA1 and ABCG1 present in macrophages contribute …
