Preceptors are critical in the education of dietetic students and over the years, interest in preceptor training has grown. As a result, the American Dietetic Association recently established a task force to develop and implement a Preceptor Training Certificate Program. There is, however, limited information with regard to formal preceptor training currently being offered by dietetic internships and the affect it may have on programs. Over the past 30 years obesity in elementary school age children has gone from almost non-existence to common place. With obesity on the rise, the occurrence of diseases associated with it such as Type II diabetes, hypertension and dyslipidemia have also risen for children. These diseases are often carried into adulthood since overweight children are more likely to become overweight or obese adults. This will create another generation of obese children, continue to strain a failing health system, and add additional problems to our economy as the current obese generation heads into retirement.

Dietetics education requires a minimum of a baccalaureate degree and 900 hours of supervised practice for eligibility of candidates to sit for the Registration Exam. The primary goals of this study are to determine perceptions of preceptors of supervised practice about their roles and practices and their expectations for students, and to compare and/or contrast these between the three main areas of dietetics: clinical, community and food service management.

Millions of dollars are spent annually on special educational programs for children whose severe behavior disorders prevent them from participating in the regular school setting despite average or above average intellectual capacity. A growing body of research indicates that some of these behavior disorders are related to nutritional problems. (Pfeiffer and Iliev 1972; Kittler 1973; Mayron 1979; and Buckley 1977), and many clinicians support the view that no matter what the etiology of behavioral disorders, nutritional programs can improve the baseline data on medical, social and intellectual achievement, and on personality measures (Palmer 1978). The Ten State Nutrition Survey (1968-1972) included West Virginia as a participant and provided data on the nutritional status of various age groups including preschool children. Information from biochemical tests, anthropometric measurements and a 24-hour dietary recall indicated that a significant number of children in West Virginia and the United States are malnourished or at nutritional risk. For this reason it is essential that nutritional evaluation of children be carried out during physical examinations. However, it may not be necessary for the evaluation to be completed by a nutritionist.

The quality of nutrition education programs is seriously being considered today. Numerous concerns have led to the investigation of underlying problems associated with ineffective nutrition education programs. The need for a nutrition component to be integrated in all educational systems became apparent immediately following the 1969 National Nutrition Survey. West Virginia was one of ten states to be surveyed and results clearly indicated that the nutritional status of the individuals under consideration was less than adequate. Recent nutritional surveys suggest that diets in the United States are often inadequate in one or more nutrients. In the West Virginia Nutrition Survey, 1969, unacceptable nutrient levels were most prevalent in children under seventeen years of age. Preliminary biochemical data resulting from the survey suggest that iron, vitamin A, and ascorbic acid are inadequately consumed. School lunches, as defined by the National School Lunch Program, are supposed to contribute a significant portion of the nutrients required daily by children.

This thesis, submitted to Xavier University in 1933, surveys the chemical classification of proteins and their role in human nutrition, with the stated aim of preparing home economics students to understand protein's function in the diet. Jones organizes proteins into three major classes: simple proteins, including albumins, globulins, glutelins, protamins, and histones; conjugated proteins, including nucleo-proteins, glyco-proteins, phospho-proteins, and hemoglobins; and derived proteins, including albumoses, peptones, and peptids, describing the chemical composition, solubility properties, and sources of each.

The thesis then examines amino acids as the end products of protein digestion, identifying those essential for growth and maintenance, including tryptophane, …
