DURING THE PAST THREE DECADES, childhood obesity rates increased dramatically in the United States. Despite new evidence suggesting a decrease in obesity rates in 2- to 5-year-olds during recent years (Ogden et al. 2014), the prevalence of obesity in this age group remains high and is a major concern for families and early childhood educators alike.
Researchers and policy makers now recognize the critical role of early childhood teachers in shaping children's eating habits through their mealtime interactions with children (Savage, Fisher, & Birch 2007). Understanding adult outcomes of programs aimed at childhood obesity prevention is necessary because parents/caregivers are the most important influence on a child’s physical activity and eating habits. Based on the principles of the social cognitive theory, the iCook 4-H pilot study taught dyads consisting of 9-10 year-old children and their primary meal preparers cooking skills, healthy shopping and meal habits, and easy ways to incorporate physical activity as a family. The program took place in five states, Maine, Nebraska, South Dakota, Tennessee, and West Virginia. In each state, adult-youth dyads (n = 54) were recruited by 4-H programs and nutrition …

Study Abroad Opportunities For Dietetics And Human Nutrition Students: Expectations, Benefits And Barriers, Kailey Marie Cunningham

This study analyzed the perceptions of University of Kentucky Dietetic and Human Nutrition students as they relate to the benefits and barriers of study abroad educational opportunities. The final sample consisted of 164 participants, with 18.9% (n=31) in the Coordinated Program in Dietetics (CP), 32.3% (n=53) in the Didactic Program in Dietetics (DPD), 42.7% (n=70) in the Human Nutrition (HN) program and 5.5% (n=9) who identified their program as ‘other’. The primary barriers to participation in study abroad were cost and problems fitting education abroad into the current program of study. The primary benefits were identified as dietary and health …

This research study was conducted to determine the effectiveness of using facilitated group discussion (FGD), a less traditional method of nutrition education, for increasing parents’ feelings of self-efficacy in their ability to make nutrition-related decisions, and to set and enforce nutrition-related boundaries with their children.

Studies estimate 82% of children less than six years of age in the United States are enrolled in non-parental care outside of their home (1). This study was an analysis of student eating habits in an "all-you-care-to-eat" dining center at a mid-size, four year, Midwest residential institution. The present, quantitative study was replicated based off a study conducted in 2008 at a similar Midwest university by Diana Poovey Duncan. The present study examined college students' (n = 218) eating habits and consumption patterns over a nine-week study period. Participants were solicited to take the pre-intervention survey in person with incentives during the second week of the study while a post-intervention survey was sent electronically during the seventh week only to those whom provided an …

This research study examined the National School Lunch Program and local implementation of federal reform in public and private schools in Milwaukee County, Wisconsin. The survey participants were selected by the way of purposeful sampling; interviews were conducted over the telephone; and a 90-minute focus group was held. Major themes from the study consist of the need for well-balanced meals in schools, concern regarding childhood obesity, and barriers of local implementation of federal guidelines. Many advocates expressed their concern regarding the calorie restrictions, specifically to the 850 kcal maximum for physically active students. This study provides insight on how the …

Study Design: Cross-sectional observational study. Place and Duration of Study: This study was conducted at Gastroenterology Outpatient Clinics at the Aga Khan University Hospital, Karachi, the Aga Khan Health Services, Malir, Karachi and Hamdard University, Karachi, from January to December 2010.

A Mixed Methods Approach To Food Safety Knowledge, Beliefs And Practices In Hispanic Families With Young Children In Nebraska, Kristen M. Stenger

This mixed methods study addresses food safety for Hispanic families with young children in Nebraska. A convergent mixed methods design was used, where qualitative and quantitative data were collected in parallel, analyzed separately and then merged in analysis and interpretation. A quantitative food safety knowledge survey (n=90, 52 from focus groups, 38 from piloting the survey), was used to assess the FightBac!™ concepts: Clean, Separate, Cook, Chill, and two additional concepts: foods that increase risk, and groups at increased risk. Qualitative focus groups explored food safety handling beliefs and practices through the lens of the Health Belief Model. Focus groups …

Phenylketonuria (PKU) is a genetic disorder caused by the deficiency of the enzyme, phenylalanine hydroxylase. Phenylalanine accumulation in brain causes cognitive impairment and behavioral problems, which can be prevented by dietary restriction of phenylalanine. People with PKU have to maintain a highly restrictive low protein diet throughout their entire life. PKU is typically diagnosed at birth through newborn screening. In order for a patient to reach their optimal IQ and health status, they need to maintain their blood phenylalanine (phe) level within the recommended range of 60-360 µmol/L.

The health, economic, and social impacts of physical inactivity and unhealthy dietary patterns are quite significant and evidenced by the fact that only 3-4% of American adults follow all the dietary advice recommended by the Dietary Guidelines for Americans (DGA; Kohatsu, Robinson, & Torner, 2004), and specific subpopulations, including the rural South, are affected even more drastically (McCabe-Sellers et al., 2007). This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey.
The multi-component intervention was implemented at Canyon Elementary during the 2008-2009 school year. Classroom teachers provided 20 minutes of nutrition education to students in grades one through …

This study investigated leadership development of Registered Dietitians in nationally elected or appointed leadership positions of the American Dietetic Association. An explanatory sequential mixed method design: participant selection model was used collecting qualitative data after a quantitative phase. Demographic data were collected via a mailed survey questionnaire followed by, with consent, a web based validated Sentence Completion Test International- Maturity Assessment Profile Research Version (2) (SCTi- MAP) to determine their stage of leadership development. Of the 97 participants, 86% (n=83) responded to the survey questionnaire with 92% (n=79) rating the importance of dietitians being leaders as very important; 100% (n=83) …
