The overall purpose of this dissertation was to examine the planning, implementation, and formative evaluation of a community-based food literacy program for youth. Article 1 provided a summary of the community-based cooking program for at-risk youth. Objectives included the provision of applied food literacy and cooking skills education augmented with fieldtrips to local farms. Eight at-risk youth (five girls and three boys, mean age = 14.6) completed the intervention. Post intervention, five of eight participants completed in-depth interviews about their experiences.

Objective: To test differences on mean fruit and vegetable (FV) eaten, liking, preference, and self-efficacy scores among 3 modes of nutrition education intervention after a 3-week intervention.
Design: Convenience sample, pre- and post-test, quasi-experimental design.
Setting: Three elementary schools in a rural Eastern Tennessee County.
Participants: Participants were 160 3rd-5th graders.
Interventions: Three study schools: experiential (nutrition education, taste tests, and learning activity), conventional (nutrition education and learning activity), and control (learning activity).
Main Outcome Measures: Changes in pre- to post-intervention mean FV eaten, liking, preference, and self-efficacy scores.

Nutritional and energetic needs of female mammals depend upon size or reproductive investment and shape individual activity budgets and behavioral patterns. To maximize nutritional and energetic intake females may increase time allocated to foraging or access resources through risk-prone behaviors, represented as aggression or leadership. Conversely, to minimize nutritional and energetic spending females may engage in risk-averse activities such as resting or nonaggressive social interactions. Females with the highest needs should exhibit activities and behaviors that facilitate the greatest nutritional and energetic returns or highest metabolic savings. Mixed results, in terms of performance benefits, have been found when comparing carbohydrate (CHO) and carbohydrate-protein (CHO-P) supplementation during endurance exercise. Thus this study assessed performance from three different supplements (CHO-P, CHO, double carbohydrate [CHO-CHO]) as compared to a placebo (PLA) during a time trial (TT) run. Twelve male recreational runners (age = 32.4 ± 9.5 yrs; body mass index [BMI] = 22.7 ± 1.5 kg/m2; VO2max = 59.68 ± 7.53 mL/kg body weight; 100% white) individually completed four, 12-mile TT runs, 7-10 days apart, at about 75% of the their race pace. Obese and diabetic humans display decreased plasma high-density lipoprotein cholesterol (HDL-C) concentrations and an increased risk for coronary heart disease. However, investigation on HDL metabolism in obesity with a particular emphasis on hepatic ATP-binding cassette transporter A1 (ABCA1), the primary factor for HDL formation, has not been well studied. The purpose of this study was to describe the nutrition knowledge and child care feeding practices of Early Childhood Education students in a university setting. Thirty-three Early Childhood Education students from seven geographically diverse universities completed a web-based survey assessing nutrition knowledge and child feeding practices. A nutrition knowledge instrument was developed and validated to measure knowledge of nutrition for preschool-aged children. The Comprehensive Feeding Practices Questionnaire, which has been previously validated in parents, was slightly modified and used to assess child feeding practices. A number of studies have demonstrated the ergogenic effects of induced-alkalosis on high-intensity intermittent exercise performance. Purpose: The aim of the present study was to examine the effects of sodium bicarbonate (NaHCO3) administration on a high-volume hypertrophy-type resistance exercise regimen for the lower body. This study explored dietary behavior in terms of dietary intake, dietary intake change and dietary contributing factors in a sample of Hispanic males residing in southern Mississippi that are at various stages of the acculturation process. Grounded theory and the bidimensional acculturation model were incorporated to identify the dietary factors and assess acculturation in each participant. Adenosine triphosphate–binding cassette transporter A1 (ABCA1) plays a critical role in the formation and metabolism of high-density lipoproteins (HDLs). Adenosine triphosphate–binding cassette transporter A1 in the liver and small intestine, in particular, accounts for approximately 90% of plasma HDL cholesterol. Therefore, any alterations in the hepatic and intestinal expression of ABCA1 could have a large impact on HDL biogenesis. We tested the hypothesis that ABCA1 expression is regulated differentially by different types of fatty acids in the liver and small intestine. Thirty six Holstein cows, four ruminally cannulated, (mean ± SD, 111 ± 35 DIM; 664 ± 76.5 kg BW) were used in replicated 4×4 Latin squares to investigate the effects of brown midrib (bm3) and conventional (DP) corn silages, and the inclusion of dried distillers grains plus solubles (DDGS) on milk production and N utilization. In each 28 d period cows were assigned to one of four treatments: DP plus 0% DDGS (CON); bm3 plus 0% DDGS (BMR); DP corn silage plus 30% DDGS (DP+DG); and bm3 plus 30% DDGS (BMR+DG). Dry matter intake was greater (P < 0.01) for cows consuming bm3 (25.8 VS 24.4 ± 0.47 kg), likewise for DDGS (24.3 and 25.9 ± 0.47 kg/d for 0 and 30%). Compared to DP hybrid, NDFD was higher (P < 0.01) for bm3 (32.5 VS 38.1 ± 1.79%). There was a hybrid × DDGS interaction (P < 0.01) for total concentration of volatile fatty acids (VFA) and rumen pH as the highly digestible treatment BMR+DG resulted in the highest VFA and the lowest pH. Milk yield was not affected by treatment and averaged 30.6 ± 1.09 kg/d. Milk protein yield (MPY) was greater (P < 0.01) for bm3 and DDGS treatments. There was a hybrid by DDGS interaction (P = 0.02) for milk fat yield (MFY) resulting in 1.03, 1.08, 0.84 and 0.78 ± 0.045 kg/d for DP, BMR, DP+DG and BMR+DG. Fat corrected milk (FCM) was affected by DDGS (P < 0.01) and averaged 30.0 and 26.4 ± 1.0kg/d (0% and 30% inclusions). Urinary N excretion was similar among treatments; however fecal N was lower (P = 0.03) for diets containing bm3 corn silage which caused lower (P = 0.02) manure N. These results indicate that bm3 corn silage and DDGS increase DMI, NDFD and MPY; however high inclusion of corn silage with 30% DDGS reduces FCM. Nitrogen excretion was reduced when cows consumed bm3.

Food borne illnesses continues to be a public health challenge in the United States (U.S.); an estimated 9.4 million incident cases occurred in 2011. In view of this challenge we conducted two food safety studies; 1) related to product formulation (hummus spoilage challenge study) and 2) evaluating the microbial safety of domestic kitchen surfaces in Residential Child Care Institutions (RCCI pilot study).

Associations between body mass index (BMI) and dietary patterns and health conditions were explored in a population-based multiethnic sample of centenarians from northern Georgia. BMI ≤20 and ≥25 was prevalent in 30.9% and 25.3% of study participants, respectively. In a series of logistic regression analyses controlled for gender and place of residence, the probability of having BMI ≥25 was increased by being black versus white and having a low citrus fruit, noncitrus fruit, orange/yellow vegetable or total fruit and vegetable intake. Background: Post-translational modifications of histones play important roles in regulating nucleosome structure and gene transcription. It has been shown that biotinylation of histone H4 at lysine-12 in histone H4 (K12Bio-H4) is associated with repression of a number of genes. We hypothesized that biotinylation modifies the physical structure of nucleosomes, and that biotin-induced conformational changes contribute to gene silencing associated with histone biotinylation.

Background—Adipose tissue (AT) is the body’s largest free cholesterol (FC) reservoir and abundantly expresses ATP binding cassette transporter A1 (ABCA1), a key cholesterol transporter for HDL biogenesis.
