The ingestion of exogenous carbohydrates (CHO) during prolonged endurance exercise, such as long-distance triathlon, is considered beneficial with regard to performance. However, little is known about whether this performance benefit differs among different forms of CHO administration. To this end, the purpose of our study was to determine the impact of CHO ingestion from a semisolid source (GEL) on measures of performance and gastrointestinal (GI) comfort compared with CHO ingestion from a liquid source (LIQ). Mental health disorders are rising in children and being referred to as an epidemic. Numerous studies have shown micronutrient deficiencies and poor diet quality are suspected of playing a contributory role in the escalation of certain disorders. There are low retention rates of dietitians and this impacts quality of care. Emotional intelligence (EI) may be the missing component to improve retention, due to EI increasing job satisfaction and decreasing burnout for other health providers. The purpose of this study was to examine the relationship between EI, job satisfaction, and burnout for dietitians. The theoretical framework utilized was the 4-branch model of EI. Method of inquiry was convenience, quantitative non-experimental design. Registered dietitians (N = 84,173) living in the United States were contacted via e-mail. Improving the nutritional status of hospitalized patients has been shown to reduce length of stay (LOS), hospital costs, readmission rates, complication rates, and mortality. Provision of nutrient-rich, liquid, oral nutrition supplements (ONS) is one approach to improving nutritional status. ONS use has been associated with improved outcomes among patients with diagnoses of orthopedic injuries and pressure ulcers, mainly using prospective designs among elderly and/or malnourished patients. Less information is available for other diagnoses, and no analysis of the effects of ONS could be found that considered the epidemiological triad of person, place, and time. This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Rationale: Diagnosis of autism has increased ten-fold in the last 40 years, and adults with autism remain an underrepresented population in research. Purpose: To qualitatively explore the relationship between eating behaviors and autism using a questionnaire and interviews with adults diagnosed with autism spectrum disorder. Methods: Four males aged 22-27 were interviewed with their mothers present and completed the Swedish Eating Assessment for Autism Spectrum Disorders (SWEAA). Interviews were analyzed through the process of open coding, and the questionnaires were analyzed to determine consistent findings between the interview and the SWEAA questionnaire. Trends in qualitative community nutrition research demonstrate a powerful, emerging perspective in the midst of a field historically dominated by quantitative methods of inquiry. For this qualitative study, ten key respondents were purposively selected and interviewed using the Community Readiness Model (CRM) to capture community knowledge of food insecurity issues and strategies. Data were analyzed using anchored rating scales, revealing readiness at a stage three, characterized by a vague awareness of local food insecurity. Purpose: The purposes of this study were first to assess the vitamin D status and bone mineral density (BMD) in male and triathletes (N=15), female triathletes (N=13), and non-athletes (N=14), and to determine if circulating vitamin D was correlated with body composition, BMD, dietary calcium and vitamin D intake in triathletes. The second purpose was to determine if triathletes have a different level of serum vitamin D, body composition, BMD, dietary calcium and vitamin D intake then non-athletes. Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. Background: Rural residents are increasingly identified as being at greater risk for health disparities. These inequities may be related to health behaviors such as adequate fruits and vegetable consumption. There is little national-level population-based research about the prevalence of fruit and vegetable consumption by US rural population adults. The objective of this study was to examine the prevalence differences between US rural and non-rural adults in consuming at least five daily servings of combined fruits and vegetables.

The purpose of this study was to determine whether providing residents of the James H. Quillen Veterans Affairs Medical Center Community Living Center with a choice of nourishment options between meals would improve their satisfaction with the nourishment administration process. As opposed to being given the same nourishment item each day, residents were offered choices from a nourishment cart based upon their diet order. INTRODUCTION: After-school activities provide valuable opportunities for health promotion activities that do not interfere with the regular school day, especially in minority populations with higher rates of obesity and type 2 diabetes. The current study is an evaluation of an after-school health education and physical activity program conducted in nine elementary schools in 2008 in El Paso, Texas. Color Me Healthy (CMH) is an interactive nutrition program designed for preschool aged children in child care settings. The current study examined if CMH increases the consumption of fruit and vegetables. Child care centers were randomly assigned to one of two conditions; children (n=165) in ten centers received CMH and children (n=98) in seven centers acted as controls. Consumption of fruit and vegetable snacks was assessed at baseline, one week post-intervention and 3 months post-intervention. Hierarchical linear modeling determined that group assignment was the only significant predictor of fruit and vegetable consumption. Children who were exposed to the CMH program …

Soft drink vending machines are available in many schools across the nation. Some schools have recently removed soft drink vending machines and replaced them with milk vending machines. The purpose of this study was to investigate high school students’ (n = 84) perceptions of the shift from soft drink vending machines to milk vending machines in schools.

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this study was to increase knowledge of the effects of prenatal substance use and to introduce the special nutritional needs of pregnancy in two counties in a region with high rates of low birth weight and prenatal substance abuse.
