Mascots have unique physical demands and nutrition needs. They exert themselves tremendously on a variety of game days and at practices throughout the week. Hydration is as significant for mascots as it is for any other athlete, yet there is little to no known research available to help this population achieve a good hydration status. Studying similar populations such as cheerleaders, band members, football players, and firefighters provided a better understanding of mascot hydration. Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.
Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Composition of the carts from the control food bank were then compared to the contents of the carts from the intervention food bank.

This paper will consist of a compilation of information on polyphenol classes, dietary sources, and potential health benefits. Polyphenols can be classified as flavonoids, phenolic acids, lignans, or stilbenes. These molecules consist of over 500 plant metabolites that come from numerous food sources including various fruits, vegetables, grains, and beverages such as coffee, tea, and wine. The quantity of polyphenols in food vary greatly, as does their bioavailability for use in the body after consumption. Burns cause massive dermal wounds. Wound healing elicits a significant catabolic response and increase in energy expenditure, and thus, calorie needs. Overfeeding and/or underfeeding the overweight and obese critically ill patient can increase complications. Indirect Calorimetry (IC) is considered the ‘gold standard” for the measurement of Energy Expenditure (EE). Predictive equations are calculated to estimate EE instead. This study is a retrospective chart review. The difference between predictive energy expenditure (via Curreri formula) and measured IC were analyzed via non-parametric Wilcoxon signed rank match paired tests. Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. It is possible that carrot phenolics are responsible for this association, though this has not been widely accepted. Volatile terpenoids from carrots have not been studied in this regard. The global population, including the United States, is experiencing a demographic shift with the proportion of older adults (aged ≥ 65 years) growing faster than any other age group. This demographic group is at higher risk for developing nutrition-related chronic conditions such as heart disease and diabetes as well as infections such as influenza and pneumonia. This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities from the USDA’s My Plate and garden-based recipes. iCook 4-H is a lifestyle intervention to improve diet, physical activity and mealtime behavior. Control and treatment dyads (adult primary meal preparer and a 9–10-year-old youth) completed surveys at baseline and 4, 12, and 24 months. Background: Rural communities experience unique barriers to food access when compared to urban areas and food security is a public health issue in rural, high poverty communities. A multi-leveled socio-ecological intervention to develop food policy councils (FPCs), and improve food security in rural communities was created. The problem addressed in this study was how staff working in a residential agency for individuals with an intellectual disability (IID) make decisions about how to implement a healthy diet. The purpose of this study was to identify the influences on decisions made by staff on the meals they provided to their clients with an IID. The theory of planned was used to study the influences of attitude, subjective norms, and perceived behavior control on the meals provided for IID. Endurance athletes are recommended to maintain energy balance and ensure adequate energy availability (EA) so that endurance performance is not compromised. Purpose: Describe and evaluate the energy balance of an athlete competing in a self-sufficient, multistage ultramarathon (MSU). Methods: A male endurance athlete (age 35 years; height 183.0 cm; body mass 78.4 kg; VO2max 66 ml/kg/min) volunteered to take part in this observational case study prior to competing in the Marathon des Sables (MdS) 2016. Introduction
As fatigue in endurance events correlates with depletion of muscle glycogen, the traditional approach to nutritional support has been carbohydrate loading. However, there has been recent interest in improving athletic endurance performance by novel diets in the days to weeks prior to endurance events, the pre-event meal, and during exercise.
Methods
We searched PubMed and SCOPUS for randomized trials published from 1992-2017 with a primary endpoint of endurance performance. We identified 407 citations which were examined against our inclusion criteria of randomization or crossover allocation to diet and for which a primary outcome was endurance performance.

In order to produce mechanical energy through muscular activity, the body must oxidize chemical energy, carbohydrate, fat, or protein through metabolic processes, which then results in the production of ATP as mechanical energy through exercise. Total body metabolism, specifically skeletal muscle depends on factors such as the intensity and duration of exercise, substrate availability, and Training status. College students experience newfound food independence, possibly resulting in the formation of poor eating habits, such as overeating, or binge eating, placing them at high risk for obesity. Background: The development of a highly obesogenic culture promoting sedentary behavior and the consumption of calorie-dense foods has led to increased levels of overweight and obesity globally. While children and adults are both at increased risk of developing obesity, the risk is even higher in minority and low socioeconomic populations. Changing demographics in the United States to a minority-majority culture require health care professionals who are culturally competent to provide appropriate care to patients. In a university in the Mid-Atlantic region of the United States, a gap existed between student education and the culturally competent professional practice of entry-level registered dietitians. Using Freire's notion of social justice and Vygotsky's constructivist theory as the conceptual frameworks, the purpose of this study was to explore educators' instructional strategies that promoted cultural competence in nutrition and dietetics education. This study investigated the influence of utilizing a collegiate mascot as a marketing tool for the promotion of fruit and vegetable intake and physical activity among 4th grade students. The program utilized service learning and formative research for the development of a social marketing campaign comprised of nutrition education and brand marketing. A pre-test/post-test design was used to measure fruit and vegetable intake and physical activity in participants in intervention and control schools. Awareness and understanding of the campaign was assessed post-intervention. There were no changes in fruit and vegetable intake or physical activity. However, 91% of the intervention students …

Background: Malnutrition is present in 25-50% of hospitalized patients. Patients identified as malnourished are assigned a code based on the type and severity of malnutrition in order to gain the necessary reimbursement to care for the patients. There is a current gap in the research regarding the characteristics that define the difference between malnourished patients classified with a major complications and comorbidities (MCC) code versus a complications and comorbidities (CC) code.

Aortic stiffness is an independent risk factor that has prognostic value regarding future cardiovascular disease (CVD) events such as myocardial infarction, strokes, and heart failure. Although death rates due to coronary heart disease have declined in recent years, the leading global killer remains CVD and prevalence is still high. Understanding lifestyle contributors associated with aortic stiffness would provide the public with insight into targeting key health-related behaviors.
