Although there are numerous benefits to increased physical activity and proper dietary behaviors, the decreased participation in physical activity and poor dietary behaviors has emerged as a significant problem within the college student population. The focus of this research study was to identify the relationship between physical activity and dietary behavior to weight loss behaviors within an undergraduate student sample of a small, comprehensive northeastern university. College-aged students (age range: 17 to 27 years old) completed the American College Health Association’s (ACHA) National College Health Assessment II (NCHA) during the years 2009 and 2012. The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety. This is particularly noteworthy because, barring exposure to an allergen, these children are otherwise healthy and symptom free. …

Breastfeeding research is plentiful, and the majority of the literature shows that breast milk is the superior form of infant nutrition except in the rare circumstances of infant metabolic disorders, maternal drug use, or positive HIV status. In comparison to formula, breast milk provides improved cognition, development, behavior, bonding, nutrition, digestion, immunity, and long-term health with fewer diseases and conditions in infants. Mothers are benefited by breastfeeding through bonding, faster weight loss, and reduction in certain cancers and conditions. Breast milk contains the proper amount of carbohydrates, fats, proteins, vitamins, and minerals, and is also specialized for each infant and …

Purpose: The purposes of this study were first to assess the vitamin D status and bone mineral density (BMD) in male and triathletes (N=15), female triathletes (N=13), and non-athletes (N=14), and to determine if circulating vitamin D was correlated with body composition, BMD, dietary calcium and vitamin D intake in triathletes. The second purpose was to determine if triathletes have a different level of serum vitamin D, body composition, BMD, dietary calcium and vitamin D intake then non-athletes. The third purpose was to determine if BMD was correlated with body composition (body mass, percent body fat, BMI) in triathletes.

Involvement in collegiate sports among female athletes is at an all-time high with approximately 198,000 currently participating, (National Collegiate Athletic Association, 2012). With this increase in female participation in collegiate sports, the pressures of sport participation and academics lead some women to engage in harmful eating behaviors. These harmful eating behaviors may lead to the development of disordered eating (C. This research looked at the potential impact that parent education may have on the feeding practices of parents of young children. Since eating behaviors are a national concern for both children and adults, it's important to examine how we can create not just healthier children but, as a result, healthier adults. This study utilized an intervention that was an adapted version of a healthy eating curriculum created by Sesame Workshop and the California WIC association with the intention of improving parental feeding practices through a behavior-based approach. Protein malnutrition is responsible for half the deaths of children under the age of five each year in developing countries. More than 4%, 26%, and 70% of children with protein malnutrition live in Latin America/the Caribbean, Africa, and Asia, respectively. The objective of this research was to develop a novel snack made with millet, black eye bean (from Niger Republic), and rice flour fortified with soybean meal protein using extrusion technology. Commercial institutions have many factors to consider when implementing an effective recycling program. This study examined the effectiveness of three different types of recycling bins on recycling accuracy by determining the percent weight of recyclable material placed in the recycling bins, comparing the percent weight of recyclable material by type of container used, and examining whether a change in signage increased recycling accuracy. Data were collected over 6 weeks totaling 30 days from 3 different recycling bin types at a Midwest university medical center. Five bin locations for each bin type were used. Fatigue is a condition that negatively impacts quality of life and occurs in about twenty four percent of adults worldwide. Many factors may contribute to fatigue. One factor is the macronutrient composition of a person’s diet, particularly, the amount of simple carbohydrates. This paper is a review of the current literature and examines the relationship of carbohydrate consumption and fatigue to determine if a diet low in simple carbohydrates results in an improvement in fatigue ratings. Results of studies regarding carbohydrate consumption and fatigue vary, the preponderance demonstrate a positive relationship between simple carbohydrate consumption and fatigue. This thesis examines whether children's food environment, especially food stores that have fresh produce, affects obesity prevalence among elementary school children in the state of Arkansas. Misclassified food outlet types in the Dun and Bradstreet commercial data set were first corrected and then food environment measures were computed and aggregated to geographic regions corresponding to school attendance areas. After applying classical panel estimation, it was found that the fixed effects model fit the data best. Results indicate that an additional supermarket within a one-mile radial of the census neighborhood block center will bring down childhood obesity prevalence by 0.58 percent, …

Vitamin D deficiency is an epidemic in the United States. Uninsured women are at high risk due to a lower intake of vitamin D and limited sun exposure. We examined the association between vitamin D deficiency and hypertension in 96 uninsured women at a County Free Medical Clinic in urban Michigan. Questionnaires were used to obtain information about demographics, medical history including hypertension, and dietary habits. Measurements including blood pressure and serum 25(OH)D level were also collected. Prevalence of hypertension was higher in subjects with 25(OH)D less than 50nmol/l compared with others (85% vs. 27.3%, p = 0.014). For every …

In the past 30 years, binge eating and obesity has increased among all age groups due to lifestyle, environment, social, and biological reasons. To change eating habits, individuals may have to collaborate with others beyond the medical professional. Societal impacts of binge eating and obesity include increases in insurance rates, medical costs, and increased early-age mortality. In light of the continuing epidemic of childhood obesity, aggressive food marketing strategies have come under increased scrutiny as a possible contributing factor. It has been acknowledged in numerous studies, that poor nutrient quality of food and beverages dominate children's programming. The growth in child-specific media envoys has further increased favorable opportunities to market food and beverages to children, notably less regulated and parentally unsupervised. The purpose of this study was to determine whether providing residents of the James H. Quillen Veterans Affairs Medical Center Community Living Center with a choice of nourishment options between meals would improve their satisfaction with the nourishment administration process. As opposed to being given the same nourishment item each day, residents were offered choices from a nourishment cart based upon their diet order. Sixteen residents completed the pre-survey, participated in the revised nourishment cart system for a 3-week period, and completed the postsurvey.
