Post-Exercise Sweat Loss Estimation Accuracy Of Athletes And Physically Active Adults: A Review, Eric O'Neal, Tara Boy, Brett Davis, Kelly Pritchett, Robert Pritchett, Svetlana Nepocatych, Katherine Black
All Faculty Scholarship for the College of Education and Professional Studies
The main purposes of this review were to provide a qualitative description of nine investigations in which sweat losses were estimated by participants following exercise and to perform a quantitative analysis of the collective data. Unique estimations (n = 297) were made by 127 men and 116 women after a variety of exercise modalities in moderate to hot environmental conditions. Actual sweat loss exceeded estimated sweat loss (p < 0.001) for women (1.072 ± 0.473 vs. 0.481 ± 0.372 L), men (1.778 ± 0.907 vs. 0.908 ± 0.666 L) and when all data were combined (1.428 ± 0.806 vs. 0.697 ± 0.581 L), respectively. However, estimation accuracy did not differ between women (55.2 ± 51.5%) and men (62.4 ± 54.5%). Underestimation of 50% or more of sweat losses were exhibited in 168 (54%) of estimation scenarios with heavier sweaters displaying a higher prevalence and trend of greater underestimations in general. Most modern guidelines for fluid intake during and between training bouts are based on approximate sweat loss estimation knowledge. These guidelines will likely have minimal efficacy if greater awareness of how to determine sweat losses and accurate recognition of sweat losses is not increased by coaches and athletes.
Therapeutic Potential Of A Ketogenic Diet In The Treatment Of Major Depressive Disorder, Jordan A. Murrin
Therapeutic Potential Of A Ketogenic Diet In The Treatment Of Major Depressive Disorder, Jordan A. Murrin
Masters Theses, 2020-current
Major depressive disorder (MDD) is the second most common mental health condition and a leading cause of disability in the world. It is theorized that MDD develops from a combination of biological, psychological, and social stressors. The condition is typically treated using pharmaceuticals and psychotherapy. However, not all individuals with MDD have access to or choose to use these treatments, or may prefer to incorporate therapeutic lifestyle changes such as exercise, sleep, and healthy eating. Even with treatment, MDD can alter brain structure and function, leading to the development of comorbid mental health and chronic metabolic conditions like obesity, cardiovascular …

Elucidating The Relation Between Human Milk Fatty Acids, Extracellular Vesicles, And Infant Developmental Outcomes In The First Year Of Life, Diana Bickmore
Elucidating The Relation Between Human Milk Fatty Acids, Extracellular Vesicles, And Infant Developmental Outcomes In The First Year Of Life, Diana Bickmore
Food Science (MS) Theses
For most infants, human milk is the recommended source of nutrition. Improved developmental outcomes have been reported in infants that consume human milk compared to infant formula. Essential fatty acids (EFAs) confer health benefits. However, EFAs cannot be synthesized by the body, and therefore must be consumed in diet. Extracellular vesicles (EVs) are nanoparticles containing a lipid bilayer membrane and are present in human milk. Methods of EV isolation such as ultracentrifugation (UC) may not be feasible for the study of EVs in human milk due to the need for large sample volume, which may not be available. The objectives …

The current obesity epidemic faces a lack of mechanistic insights. It is known that the acute activity changes of a growing number of brain neurons rapidly alter feeding behaviour; however, how these changes translate to obesity development and the fundamental mechanism underlying brain neurons in controlling body weight remain elusive. Here, we show that chronic activation of hypothalamic arcuate GABAergic (GABA

Public housing provides affordable housing and, potentially, housing stability for low-income families. Housing stability may be associated with lower incidence or prevalence and better management of a range of health conditions through many mechanisms. We aimed to test the hypotheses that public housing residency is associated with both housing stability and reduced risk of diabetes incidence, and the relationship between public housing and diabetes risk varies by levels of housing stability. Using 2004-16 World Trade Center Health Registry data, we compared outcomes (housing stability measured by sequence analysis of addresses, self-reported diabetes diagnoses) between 730 New York City public housing …
Effect Of Long Pasteurization Run Times On Bacterial Numbers In Milk, Brynli Tattersall
Effect Of Long Pasteurization Run Times On Bacterial Numbers In Milk, Brynli Tattersall
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
This project was funded by the Western Dairy Center to understand how long a milk pasteurizer can be operated before increases in bacterial numbers are observed in the pasteurized milk. While pasteurization kills pathogenic bacteria there are some non-pathogenic bacteria that can survive and have the ability to become attached to the surfaces in the cooling sections of the pasteurizer. Some bacteria can also produce spores that survive pasteurization even if the bacterial cells are killed. Temperatures in the cooling section remain in a range suitable for growth of these heat-tolerant bacteria and can allow germination of bacterial spores. While …

Exploring The Connection Between Acid Exposure And Virulence In Listeria Monocytogenes, Minghao Li
Exploring The Connection Between Acid Exposure And Virulence In Listeria Monocytogenes, Minghao Li
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
Listeria monocytogenes is a gram-positive food-borne pathogen that is widely dispersed in the environment and can cause listeriosis with high fatality rates when consumed in contaminated food products. They are capable of growing over a wide range condition. Listeria is also able to tolerate adverse conditions which allows the bacterium to survive in unfavorable environments. The ubiquitous nature of L. monocytogenes makes it difficult to eliminate from food systems. One major problem in the food industry is the survival of L. monocytogenes under sublethal low pH-environment since organic acids are widely used as food decontaminants. Prior research has suggested that …

Defective rhythmic metabolism is associated with high-fat high-caloric diet (HFD) feeding, ageing and obesity; however, the neural basis underlying HFD effects on diurnal metabolism remains elusive. Here we show that deletion of BMAL1, a core clock gene, in paraventricular hypothalamic (PVH) neurons reduces diurnal rhythmicity in metabolism, causes obesity and diminishes PVH neuron activation in response to fast-refeeding. Animal models mimicking deficiency in PVH neuron responsiveness, achieved through clamping PVH neuron activity at high or low levels, both show obesity and reduced diurnal rhythmicity in metabolism. Interestingly, the PVH exhibits BMAL1-controlled rhythmic expression of GABA-A receptor γ2 subunit, and dampening …

Masters Theses, 2020-current
Arterial stiffness (AS) is an independent predictor for cardiovascular disease morbidity and mortality. Regular aerobic exercise is considered to improve AS. Nordic walking provides important health benefits, however, the effect of this walking method as treatment for AS remains unclear. We conducted a randomized controlled study to examine the effect of a 12-week supervised group walking intervention (controlled pace, ~3000 steps/day, 30 minutes/day, 5 times/week), with (NW) and without (SW) Nordic poles, on AS in sedentary overweight and obese adults. Fourteen individuals were randomly assigned to NW (n=7; median age 54.0 years; body mass index (BMI)=31.3 kg/m2) or …

Added Sugars: What You Need To Know, Carrie Durward, Keshele Stevens
All Current Publications
Added sugar has become a hot topic among health professionals and in the media. Based on the best available evidence, health professionals recommend that less than 10% of daily calories come from added sugar (U.S. Department of Health and Human Services [HHS] & U.S. Department of Agriculture [USDA], 2015c) in order to maintain a balanced diet with all the important nutrients. In this fact sheet, we will address why and how to limit added sugar in your diet, what it is, and where to find it.

Fasting Diets: Are They Safe, Healthy, And Effective?, Carrie Durward, Keshele Stevens
All Current Publications
Diets are commonly prescribed to induce weight loss and reduce the risk of many diseases. Because a standard daily calorie restriction diet is often hard to maintain, other diet alternatives such as fasting diets were created. Fasting diets have been found to be effective, though they may not be any more effective than typical diets. Before beginning a fasting diet, it is best to seek professional medical advice to assess individual risks and circumstances. This fact sheet helps readers learn more about the safety, health, and effectiveness of fasting diets.

Background: Trimethylamine-N-oxide (TMAO), a choline-derived gut microbiota-dependent metabolite, is a newly recognized risk marker for cardiovascular disease. We sought to determine: (1) TMAO response to meals containing free versus lipid-soluble choline and (2) effects of gut microbiome on TMAO response. Methods: In a randomized, controlled, double-blinded, crossover study, healthy men (n = 37) were provided meals containing 600 mg choline either as choline bitartrate or phosphatidylcholine, or no choline control. Results: Choline bitartrate yielded three-times greater plasma TMAO AUC (p = 0.01) and 2.5-times greater urinary TMAO change from baseline (p = 0.01) compared to no choline and phosphatidylcholine. Gut …

The current obesity epidemic mainly results from high-fat high-caloric diet (HFD) feeding and may also be contributed by chronic stress; however, the neural basis underlying stress-related diet-induced obesity remains unknown. Corticotropin-releasing hormone (CRH) neurons in the paraventricular hypothalamus (PVH), a known body weight-regulating region, represent one key group of stress-responsive neurons. Here, we found that HFD feeding blunted PVH CRH neuron response to nutritional challenges as well as stress stimuli and dexamethesone, which normally produce rapid activation and inhibition on these neurons, respectively. We generated mouse models with the activity of these neurons clamped at high or low levels, both …

Thirty-two college-aged resistance-trained males (~23.6 years, 71.6 kg, 172.1 cm) were supplemented with 2, 4, 6 g/day (G) FO or placebo (PL) for ~7.5 weeks. Following 7 weeks …
Consumer Food Socialization In The School And Home, Ashley Deutsch Cermin
Consumer Food Socialization In The School And Home, Ashley Deutsch Cermin
Graduate Theses and Dissertations
Consumer socialization literature has focused on individual socialization agents and their isolated effects. However, as John (1999) pointed out, children do not grow up in a social vacuum. Instead, the multitude of agents socializing children find their narratives interacting and their effects continually shaped and co-created. To understand how school-age children learn about food, I interrogate the complexity of socialization in three essays.
In the first essay, I take an ethnographic approach to investigate the interactive effect peers and adults, namely service workers, have on children’s food socialization in a public-school lunchroom. By combining a Loseke’s (2007) layered narrative model …
