PURPOSE: To examine the relationship between iron-deficient anemia and malaria in primary school children in Southern Ethiopia and Zambia and assess the correlation between diet and health status.
METHODS: Market inventories, observations at health outposts, and interviews and anthropometric assessments of 6th and 7th grade students.

Introduction: Nutrition impacts attendance for primary school students in Southern Ethiopia and Zambia. Food insecurity causes school-age children to be undernourished, malnourished, and stunted. These health concerns greatly impact ability to attend and perform in school.
Methods: Between May and June of 2019 6th and 7th grade students were surveyed within 4 schools in Ethiopia and 5 schools in Zambia. Anthropometric data, health history, and nutritional habits were surveyed.
Results: 8% of Ethiopian students were stunted while 10% of Zambian students were stunted. Ethiopian students indicated school lunch was an incentive while Zambian students did not. Most …

Purpose: To determine if there is a relationship between physical education/activity wellness policy comprehensiveness and strength and the observed physical activity (PA) environment.
Methods: The Wellness School Assessment Tool 2.0 (WellSAT 2.0) was used to evaluate the quality of written wellness policies. The School Physical Activity and Nutrition Environment Tool (SPAN-ET) was used to evaluate the school environment. Pairwise correlations and one-way ANOVAs were used to determine if written wellness policy quality affects the school PA environment. Data are presented as mean ± SD and significance was set at p ≤ 0.05.

Background: Childhood obesity is continuing to rise, leading to long-term health consequences. Research shows that rural populations have higher rates of childhood obesity. There is a lack of research on how the home environment may affect this health disparity. Parents often enforce food rules to control their child’s eating habits, but the difference between the rural and non-rural populations in enforcing these rules is unknown.

Objective: To quantitatively assess coaches perceived confidence in coaching rural wellness coalitions and to qualitatively determine barriers and facilitators to success in coaching rural wellness coalitions.
Design: A mixed methods design was utilized with quantitative (scorecard) and qualitative (key informant interviews) methodologies.
Setting: Six rural South Dakota wellness coalitions.
Participants: Extension wellness coalition coaches (n=7), one previous and six current.
Intervention: A component of the broader SDSU Extension 1416 Centers for Disease Control (CDC) and Supplemental Nutrition Assistance Program Education (SNAP-Ed) intervention.

Since its synthesis in 1945, Folic acid (FA) is widely used as a supplement/additive to our food due to its stability and high bioavailability. FA is proposed to alleviate anemia and reduce neural tube defects (NTD). As a provitamin, FA is activated through a two-step reaction catalyzed by dihydrofolate reductase (DHFR) in the folate metabolism pathway. FA activation rate is found to be slow in humans. Across much of North America, moose populations (Alces alces) are declining due to disease, predation, climate, and anthropogenic pressures. Despite this, populations of moose in Colorado have continued to grow. Studying successful (i.e., persistent or growing) populations of moose can facilitate the continued conservation of the species by identifying habitat features critical for moose persistence.

The utilization of brewer's spent grain for the production of malt flour is the focus of this article. The reader is presented with superheated steam and extrusion as technologies to reduce mycotoxin contamination and improve shelf life. Another option is the fermentation of brewer's spent grain with a cereal grade lactic acid bacteria for the production of sourdough bread. Milling of the brewer's spent grain for the production of bread is also covered.

The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. The skin color of muscadine grapes (Vitis rotundifolia) is typically classified as black or bronze. A glutathione S-transferase, VrunGST4, has been identified as a candidate gene for berry skin color in muscadine grapes. A molecular marker was developed within VrunGST4 to distinguish between muscadine genotypes (cultivars and selections) with bronze (T:T), heterozygote black (C:T), and homozygote black (C:C) berries. In order to prevent the onset of several chronic diseases, populations that exhibit poor dietary practices must be identified and educated on proper nutritional habits. This study used the pre-validated Rapid Eating Assessment for Participants – Shortened version (REAP-S) survey and a four-question demographic questionnaire to identify these populations among undergraduate students at the University of Central Florida. The participants were 171 students of at least 18 years of age who completed the 17-question online survey. In Northwest Arkansas, soil phosphorus concentrations have increased where livestock manures have been repeatedly applied, leading many to question if supplementing phosphorus in this area is necessary. The effects of phosphorus intake on beef heifer growth performance and conception rates were investigated. In this study, crossbred Angus heifers (n = 72), approximately 30 days after weaning, were stratified by body weight (average initial weight 251 ± 3.9 kg) and allocated randomly into 8 groups. Globally, rice producers are faced with the temporal problem of deciding the optimal time to harvest rice. When harvested, paddy rice is typically at a harvest moisture content (HMC) between 15% and 22% and subsequently dried by the mill to a moisture content (MC) of 12.5%. Riceland Foods Inc., the largest miller of rice in the world, uses a stair-step pricing model to charge farmers to dry, which can complicate the timing of harvest as producers try to balance the tradeoff of minimizing drying costs by waiting to harvest at lower HMC vs. maintaining higher rice quality typically observed when …

Sulfur dioxide is an inorganic compound (IC) and air pollutant that causes health risks in humans. The buildup of sulfur dioxide (SO2) in enclosed indoor spaces is, therefore, a concern to human health, especially since the average person spends 90% of his/her time indoors. This study focused on decreasing SO2 concentration in a cost-effective and simple way—by using botanical biofiltration, or the uptake of pollutants by plants. Research in biofiltration has focused mostly on the remediation of volatile organic compounds (VOC). Altered metabolic pathways appear to play central roles in the pathophysiology of late-onset Alzheimer’s disease (AD). Carrier status of the E4 allele of the APOE gene is the strongest genetic risk factor for late-onset AD, and increasing evidence suggests that E4 carriers may be at an increased risk for neurodegeneration based on inherent metabolic impairments. A new appreciation is forming for the role of APOE in cerebral metabolism, and how nutritional factors may impact this role. Background: The appetite-regulating hormones may influence compensatory increases in energy intake with exercise, although this causal relationship has been difficult to prove in a longitudinal trial.
Methods: 37 participants (29 female) aged 18 to 40 years performed aerobic exercise 6 days (6d), 2 days (2d), or 0 days per week for 12-weeks. Concentrations of ghrelin, leptin, glucagon-like peptide 1 (GLP-1), and insulin were assessed before (fasting, minute 0) and after a standardized meal at minute 15, 30, 45, 60, 90, 120, 150, and 180. In 2017, Mozambique ranked as one of the least developed countries in the world by measures of health, education, and income. With a minimal annual income, purchasing adequate food to meet recommended levels of nutrients for a healthy diet is difficult, leaving 40% of the country undernourished. Recently, there has been interest in the use of nucleotides in industrials feeds, with inosine monophosphate showing the most promising effects on growth and immunity. Rainbow trout and Alberta cattle are two of Canadas most profitable farmed animals, if their growth rates and immunity could be enhanced this would further improve their value. The impacts of IMP, a phytoglycogen-based nanoparticle (NP) and inosine monophosphate cationically bound to the phytoglycogen-based nanoparticle (IMP-NP) were characterized in rainbow trout in vivo and in vitro and in vitro in bovine cells. Most Americans do not consume recommended intakes of fruits and vegetables (F/Vs). Hands-on nutrition education applies social cognitive theory as participants practice preparing F/Vs. This study compared a four-week hands-on nutrition education program (L+HO) with lecture only (L) in older adults with assessments at baseline and weeks four and eight. Twenty-three women over the age of 50 participated in either four, 90-minute weekly L+HO classes (n = 14) or four, 40-minute weekly L nutrition education classes (n = 9). We analyzed the energy content of seeds of common sunflowers (Helianthus annuus) obtained from the crops of scaled quail (Callipepla squamata) collected from plains-mesa sand-scrub habitat in Eddy and Lea counties, New Mexico. Seeds were removed from crops and dried for 48 hours at 60°C to remove moisture and to standardize masses. Seeds were then analyzed for gross caloric value (i.e., energy content) in an oxygen bomb calorimeter. The Jawbone deer herd has been monitored on their wintering grounds since the 1950s and recently began decreasing over the last several years. The decline prompted an investigation into the reasons why. Coinciding with the population decline is the appearance of hair loss syndrome and two species of exotic lice. In order to evaluate the effects of hair loss syndrome and the influence of exotic lice infestation, 38 wild does from the herd were used in a modified-before-after-control-impact study. Developmental plasticity is the phenotypic variation between organisms that is caused by environmental interactions affecting the developmental systems of organisms. The research focused primarily on nutrition-responsive developmental plasticity. In this research we used the nutritionally determined head horn development of Onthophagus taurus to better understand the developmental mechanisms and genetic underpinnings of nutrition-responsive trait development. We focused specifically on altering the availability of specific nutrition-related primary metabolites, cholesterol and palmitic acid, identified in the activity of The Hedgehog pathway, a critical pathway in head horn development. The Sam Israel site is a precontact archaeological complex with numerous fish bones at the north end of Soap Lake, Washington. Excavated in 1976, the fish remains recovered from there were never fully analyzed prior to this research. Since this inland Columbia Plateau site had thousands of fish bones, it contained untapped potential for our understanding of ancient local fish procurement. Despite global efforts made to address anaemia, the prevalence remains high in most Sub-Saharan African countries. In Ethiopia, anaemia poses a very strong public health concern. The purpose of the present study was to examine the key risk factors related to anaemia among children aged 6–24 months (younger age group) and 25–59 months (older age group). We used the 2016 Ethiopian Demographic and Health Survey data, collected from 11 023 mothers with under five children. The constitutive activation of the mechanistic target of rapamycin complex 1 (mTORC1) leads to the overproduction of apoB-containing triacylglycerol-rich lipoproteins in HepG2 cells. R-α-lipoic acid (LA) and 4-phenylbutyric acid (PBA) have hypolipidemic function but their mechanisms of action are not well understood. Here, we reported that LA and PBA regulate hepatocellular lipid metabolism via distinct mechanisms. The use of SQ22536, an inhibitor of adenylyl cyclase, revealed cAMP’s involvement in the upregulation of CPT1A expression by LA but not by PBA. LA decreased the secretion of proprotein convertase subtilisin/kexin type 9 (PCSK9) in the culture media of hepatic cells and increased …
