Increasing The Retention Of Lipid-Soluble Components In A Curd Matrix, Megan Tippetts

Megan Tippetts, under the direction of Dr. Silvana Martini at Utah State University, proposes to demonstrate that it is possible to increase the retention of lipid-soluble components (e.g. vitamin D) in a curd matrix (e.g. Cheddar cheese). This project was coordinated with the Western Dairy Center for the initial phase of the project.

The initial phase used vitamin D₃ fortified emulsions stabilized with a dairy-based emulsifier. The objective was to determine if vitamin D₃ delivered in an emulsion form to the milk before cheesemake would have higher retention in the cheese versus vitamin D₃ oil added directly …

Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.

Recently resettled refugees face many challenges that make it difficult to eat healthy food. Transportation, English skills, and conflicting work hours are some of the barriers to receiving nutrition education. This research evaluated the integration of nutrition lessons into English …

Hominy feed, a co-product of dry corn milling, has been evaluated to a limited extent in feedlot and dairy rations, but has not been evaluated as a supplemental energy source for lactating beef cows. The objective of this study was to determine the effect of level of hominy feed supplementation on intake, digestibility, in situ DM disappearance, and ruminal fermentation characteristics of medium quality bermudagrass hay. Background: Leadership and management skills are critical to moving the dietetics profession forward; acquisition of those skills begins in the Dietetic Internship (DI). This study examined DI program components related to higher mean scores on the Foodservice and Management domain of the Registration Examination for Dietitians and compared Program Director and Preceptor perceptions of management rotation structure.

Methods: All 242 DI Program Directors (excluding sponsoring institution) received a 47-item electronic questionnaire. Directors provided contact information for up to three DI management rotation primary preceptors. The objective of our study was to measure sun exposure, skin pigmentation, vitamin D intake, and serum 25-hydroxyvitamin D (25[OH]D) in a subset of participants from The Following the Longitudinal Aspects of Student Health (FLASH) Study to determine the best predictors of 25(OH)D status. The objectives of this study were to use a meat flavor lexicon to identify and quantify flavor differences among different types of meats such as beef, chicken, lamb, pork, and turkey, and to identify and quantify specific flavor attributes associated with “beef flavor” notes. A trained descriptive panel with 11 participants used a previously developed meat lexicon composed of 18 terms to evaluate the flavor of beef, chicken, pork, turkey, and lamb samples. Results show that beef and lamb samples can be described by flavor attributes such as barny, bitter, gamey, grassy, livery, metallic, and roast beef. Inversely related to …

This study evaluated the stability of bilayer emulsions as a function of secondary layer composition and pH. Primary emulsions were formulated with 5% soybean oil, 1% protein from nonfat dry milk (NDM) powder as emulsifier and ι-carrageenan (ι-carr), low-methoxyl pectin (LMp), high-methoxyl pectin (HMp), or gelatin as secondary layers. ζ-Potential values increased for each emulsion as the pH decreased, with ι-carr emulsions being consistently more negatively charged than primary emulsions and significantly more stable. ζ-Potential values were not always correlated to emulsion stability. Gelatin secondary emulsions at pH 3 and HMp secondary emulsions at pH 7 were unstable due to …

Flavor development in ripening Cheddar cheese depends on complex microbial and biochemical processes that are difficult to study in natural cheese. Thus, our group has developed Cheddar cheese extract (CCE) as a model system to study these processes. In previous work, we found that CCE supported growth of Lactobacillus casei, one of the most prominent nonstarter lactic acid bacteria (NSLAB) species found in ripening Cheddar cheese, to a final cell density of 108 cfu/mL at 37°C. However, when similar growth experiments were performed at 8°C in CCE derived from 4-mo-old cheese (4mCCE), the final cell densities obtained were only about …

Objective: The present study evaluated the restaurant and dining venues on and near post-secondary campuses varying in institution size. Design: The Nutrition Environment Measures Survey for Restaurants (NEMS-R) was modified to evaluate restaurants as fast food, sit down and fast casual; and campus dining venues as dining halls, student unions and snack bar/cafe ́s. ANOVA with post hoc Tukey’s B and T tests were used to distinguish differences between dining venues and associated institutions by size.

Diabetes has become a cultural problem across America, but particularly in the Midwest and Southern regions. For my film, I explored these two areas and compared the food and exercise culture to one of the healthier regions, the West. Having moved from Indiana to Colorado, I used my own personal experiences to analyze why people in the Midwest struggle with diabetes and obesity at such a higher rate than those nearer to the Pacific Ocean. Civet diets were examined in a logged and unlogged Bornean rain forest. Malay civets (Viverra tangalunga) consumed invertebrates, fruit, rodents, insectivores, birds, snakes and lizards, and appear to show preference for centipedes and scorpions. Other civet species consumed fruit, such as figs, Connarus sp. and Annona sp., particularly in the unlogged forest, but also consumed invertebrates and vertebrates. Reduced fruit consumption observed in the logged forest may be due to lower availability and may be offset by increased consumption of invertebrates. The increased overlap in diet between Malay civets and other civets in disturbed areas may lead to …

Background: Rural residents are increasingly identified as being at greater risk for health disparities. These inequities may be related to health behaviors such as adequate fruits and vegetable consumption. There is little national-level population-based research about the prevalence of fruit and vegetable consumption by US rural population adults. The objective of this study was to examine the prevalence differences between US rural and non-rural adults in consuming at least five daily servings of combined fruits and vegetables.

An erythromycin-resistant strain of probiotic Lactobacillus paracasei ssp. paracasei LBC-1 (LBC-1e) was added to part-skim Mozzarella cheese in alginate-microencapsulated or free form at a level of 108 and 107 cfu/g, respectively. Survival of LBC-1e and total lactic acid bacteria (LAB) was investigated through the pasta filata process of cheese making (in which the cheese curd was heated to 55°C and stretched in 70°C-hot brine), followed by storage at 4°C for 6 wk and simulated gastric and intestinal digestion. What does it mean for a person to declare her or his veganism to the world? How does the transition from one diet to another impact one’s sense of self? Veganism challenges the foundational character of how we “act out” our selves—not least of all in the context of sexuality and gender. In my paper, I am thus interested in the potential of veganism to disrupt the “natural” bond between gender formations and the consumption of animal products, as this relates to social and cultural genealogies.
