Iron deficiency is prevalent among endurance athletes, particularly females. Low iron may compromise oxygen delivery and physical performance. Vegetarianism, desire for convenience, and perceived health risks associated with red meat contribute to low bioavailable iron intakes. The purpose of this study was to examine if lean beef supplementation would maintain iron status, improve body composition and increase performance of distance runners after 8 weeks. Twenty-eight (14 female) Division-I cross-country runners were stratified by iron status, use of iron supplements, and gender, and randomized into a control (n = 14) and intervention group. A Complete Genome Sequence Oflactobacillus Helveticus R0052, A Commercial Probiotic Strain, T. A. Tompkins, G. Barreau, Jeff Broadbent

Lactobacillus helveticus R0052 is a commercially available strain that is widely used in probiotic preparations. The genome sequence consisted of 2,129,425 bases. Comparative analysis showed that it was unique among L. helveticus strains in that it contained genes encoding mucus-binding proteins similar to those found in Lactobacillus acidophilus.

Plasmalogens are ether-linked lipids that may influence oxidative stress resistance of eukaryotic cell membranes. Since bacterial membrane composition can influence environmental stress resistance, we explored the prevalence of plasmalogens in the cytoplasmic membrane of Bifidobacterium animalis subsp. lactis. Results showed plasmalogens are a major component of the B. animalis subsp. lactis membrane.

The broad ecological distribution of L. casei makes it an insightful subject for research on genome evolution and lifestyle adaptation. To explore evolutionary mechanisms that determine genomic diversity of L. casei, we performed comparative analysis of 17 L. casei genomes representing strains collected from dairy, plant, and human sources. Results Differences in L. casei genome inventory revealed an open pan-genome comprised of 1,715 core and 4,220 accessory genes. Extrapolation of pan-genome data indicates L. casei has a supragenome approximately 3.2 times larger than the average genome of individual strains. Evidence suggests horizontal gene transfer from other bacterial species, particularly lactobacilli, …

The purpose of this project was to determine if there are viable nutritional options available to the patrons of suburban food pantries located in Norton, Easton and Bridgewater, Massachusetts. The goal was to establish the existing practices of the pantries, how the food received is utilized, the needs of the patrons, and how corporate establishments work in conjunction with the food pantries. Purpose:To determine the incidence of exercise-associated hyponatremia (EAH), the associated biochemical measurements and risk factors for EAH, and whether there is an association between postrace blood sodium concentration ([Na+]) and changes in body mass among participants in the 2009 Western States Endurance Run, a 161-km mountain trail run.
Methods: Change in body mass, postrace [Na+], and blood creatine phosphokinase (CPK) concentration, and selected runner characteristics were evaluated among consenting competitors.

Glycerol is prohibited as an ergogenic aid by the World Anti-Doping Agency (WADA) due to the potential for its plasma expansion properties to have masking effects. However, the scientific basis of the inclusion of Gly as a “masking agent” remains inconclusive. The purpose of this study was to determine the effects of a hyperhydrating supplement containing Gly on doping-relevant blood parameters. Nine trained males ingested a hyperhydrating mixture twice per day for 7 days containing 1.0 g·kg−1 body mass (BM) of Gly, 10.0 g of creatine and 75.0 g of glucose. In South Carolina (SC), children aged 10-17 are ranked 13th in the United States for overweight and obesity (33.7%) according to the National Survey of Children's Health 2007. Fruit and vegetable intake in children and adolescents in the United States is below recommended levels (Lorson, Melgar-Quinonez, & Taylor, 2009). In SC, only 15% of the high school students consume fruits and vegetables five or more times per day. Fruit and vegetable consumption has been associated with reduced risk of chronic diseases (Epstein et al., 2001; Knai, Pomerleau, Lock, & McKee, 2006; Reichmann, 2009). Antibiotics are important to equine medicine, but can cause detrimental side-effects including reduced feed intake, allergic reactions, and diarrhea. Antibiotic-associated diarrhea (AAD) is attributed to disruption of the hindgut microflora, permitting proliferation of pathogenic microbes. The objectives were to evaluate the effects of antibiotics on beneficial fecal bacteria, AAD-associated pathogens, microbial species richness and fermentation. Horses were assigned to treatment groups: control (no antibiotics, n=6), trimethoprim-sulfadiazine (oral, n=6), or sodium ceftiofur (IM, n=6). Fecal samples were taken during adaptation (3 wk), antibiotic challenge (1 wk), and withdrawal (1 wk). Fecal cellulolytics decreased by >99% during challenge and did not recover …

Long term consumption of a high fat diet (HFD) increases the risk of developing Metabolic Syndrome and type 2 diabetes. This led us to hypothesize that long term HFD consumption impairs immune tolerance to the intestinal bacteria. Our studies had two goals. First, we characterized the effect of long term HFD consumption on the systemic immune response by comparing C57BL6 mice fed a HFD and low fat diet (LFD). Plasma immunoglobulin G (IgG) against Escherichia coli (LF-82), E. coli (Nissle 1917), Bacteroides thetaiotaomicron and Lactobacillus acidophilus were measured by a lab-developed ELISA. Diabetes and cardiovascular disease are leading causes of death and disability in the United States. These chronic diseases are clinical sequelae of metabolic syndrome (MetS), a condition that affects approximately one-third (1/3) of American adults. Metabolic syndrome occurs in response to environmental and genetic influences, among them food intake, a sedentary lifestyle, BMI, advancing age, and exposure to persistent organic pollutants (POPs). POPs are known to cause endocrine disruption and PCBs cause oxidative stress, disrupt endothelial cell integrity, and promote atherosclerosis. Deficiency of ACE2 in macrophages has been suggested to promote the development of an inflammatory M1 macrophage phenotype. We evaluated effects of ACE2 deficiency in bone-marrow-derived stem cells on adipose inflammation and glucose tolerance in C57BL/6 mice fed a high fat (HF) diet. ACE2 activity was increased in the stromal vascular fraction (SVF) isolated from visceral, but not subcutaneous adipose tissue of HF-fed mice. Deficiency of ACE2 in bone marrow cells significantly increased mRNA abundance of F4/80 and TNF-α in the SVF isolated from visceral adipose tissue of HF-fed chimeric mice, supporting increased presence of inflammatory macrophages in adipose tissue. …

Non-small cell lung cancer (NSCLC) is most hostile and leading cause of cancer deaths in the United States. Clinical data has demonstrated that 30 % of NSCLC patients have increased Notch activity and 10% of NSCLC have gain-of-function mutation on Notch-1 gene. Our data demonstrated that delta-tocotrienol could inhibit NSCLC cells proliferation, invasion and induce apoptosis by down-regulation of the Notch-1 signaling pathway. Using microRNA microarray and microRNA transfection, our findings further suggest that delta-tocotrienol is a non-toxic activator of miR-34a which can inhibit NSCLC cell proliferation, induce apoptosis, and inhibit invasion. The federal government’s regulatory approach to genetically engineered (GE) crops, known as “The Framework”, is now twenty-five years old. Despite two and half decades of a consistent regulatory regime, GE crop and food regulation remains controversial. This article suggests that regulatory science and its tenets of independence, transparency, and public science should guide reforms of The Framework so that it is an efficient and reliable regulatory system. Background: The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is one of the most studied federal food assistance programs. However, few studies have examined the association between maternal WIC participation and breastfeeding or weight gain during infancy. Prenatal WIC participation provides an important widow of influence on birth outcomes but also on early life risk factors for chronic disease. This study utilizes a cohort of WIC enrolled infants to assess the added effect of prenatal exposure to WIC on two specific outcomes - breastfeeding initiation and duration and rate of infant weight gain.

Numerous studies have been conducted on eating disorders (ED) in collegiate athletes. Many studies conclude that collegiate athletes are more at risk of developing an ED compared to non-athletes, while some report the opposite. Purpose. To determine if collegiate athletes are more likely to exhibit ED characteristics compared to those who only participated in high school sports. Method. Each participant completed The Eating Attitude Test-26 (EAT), The Eating Disorder Inventory subscales Body Dissatisfaction (EDIBD), Drive for Thinness (EDIDFT), and Bulimia (EDIBUL) and The Body Shape Questionnaire-34 (BSQ). Folate is a water-soluble vitamin B that plays a critical co-enzyme in the de novo nucleotide synthesis and other biochemical processes including DNA metabolism, DNA repair, DNA methylation, and cellular growth. Folate deficiency has been associated to increase the risk of neural tube defects (NTDs) and cancers of the lung, breast, colon, cervix, esposphagus and brain. Most importantly, folate deficiency has been shown to increase uracil misincorporation into DNA and therefore induce DNA damage repaired by the base excision repair (BER) pathway. Nutrition knowledge has been shown to be increasingly critical in physician practice. Therefore, education has also become very critical. Medical schools have been working over the last few decades to include nutrition education in their curriculum, but due to many barriers, it is difficult to fulfil requirements. It is the purpose of this descriptive study to determine the nutrition knowledge of pre-medical students at the University of Arkansas and conclude if a nutrition class for these students would be beneficial. Background: Given the documented physical activity disparities that exist among low-income minority communities and the increased focused on socio-ecological approaches to address physical inactivity, efforts aimed at understanding the built environment to support physical activity are needed. This community-based participatory research (CBPR) project investigates walking trails perceptions in a high minority southern community and objectively examines walking trails. The primary aim is to explore if perceived and objective audit variables predict meeting recommendations for walking and physical activity, MET/minutes/week of physical activity, and frequency of trail use.
