Understanding Why Adult Participants At The World Senior Games Choose A Healthy Diet, Ray M. Merrill, Eric C. Shields

Identifying those seniors most likely to adopt a healthy diet, the relative importance they place on certain perceived benefits associated with a healthy diet, and whether these perceived benefits are associated with selected demographic, lifestyle, and health history variables is important for directing effective dietary health promotion programs. Methods: Analyses are based on a cross-sectional convenience sample of 670 seniors aged 50 years and older at the 2002 World Senior Games in St. George, Utah. Data are assessed using frequencies, bivariate analysis, analysis of variance, and multiple logistic regression analysis. Although vegetarian eating has been around throughout recorded history, in recent years, interest in this eating style has gone up dramatically. As the number of individuals adopting vegetarian dietary practices increases, healthcare professionals are called upon to provide guidance and advice. It is the position of The American Dietetic Association that appropriately planned vegetarian diets are healthful, are nutritionally adequate, and provide health benefits in the prevention and treatment of certain diseases. Both vegetarian and nonvegetarian eating patterns can be healthful-or detrimental to your health. Fats And Iron In The Rat Colon: Effects On Lipid Peroxidation, Ji Jenny Chin

Preliminary studies were undertaken to investigate whether or not added iron (0, 35, 880 ppm of iron as ferrous fumarate) and fat type (corn oil, beef tallow, or menhaden oil) influenced the oxidation of the rat diet during storage. Iron level affected thiobarbituric acid (TBA) values only in the menhaden oil diets. Storage for 4 d did not affect TBA values of the diets. Neither food intake nor body weight of the rats was affected by the different diets, suggesting all diets were equally acceptable to rats.

The use of color coded prompts to influence students' food selections in choosing a balanced meal was investigated. Yellow, green, blue, and orange dots, representing the four major food groups, grains, fruit and vegetables, dairy, and meat respectively were displayed at the point-of-selection on food entree cards along the serving line of a college dining hall. Two grain servings, two fruit/vegetable servings, one dairy serving, and one meat serving, were suggested as the optimal combination for a balanced meal. Three separate food grouping systems were derived for diet evaluation by utilizing a computer clustering program. System 1 was based on grouping of foods according to nutrient quality and quantity, system 2 was based on nutrient quality and frequency of consumption and system 3 was based on nutrient quality and kilocalories consumed. Defendable nutritional principles as well as knowledge of present nutritional concerns and eating habits of the U.S. population underpinned the derivation of the three systems. Over 4,000 individual foods were condensed to approximately 325 groups.

This study was a follow-up of the Christiansen study which was completed in 1967. Dr. Christiansen's 26 subjects ranged in age from 33 to 60 years. Ten were designated as controls and the other 16 were placed on a high polyunsaturated fatty acid (PUFA) diet for a period of 26 weeks.

The purpose of doing a follow-up was to determine what effect the study had on present dietary patterns, serum lipid levels and rate of erythrocyte hemolysis.
